love for food and cooking is apparent at this newly opened restaurant on West 7th Fort Worth chef Angel Fuentes (middle) with biz partners Jim Austin (left) and Dusty Smith My fondest memory of watching Angel Fuentes cook is from about three years ago when I was dining with a friend at Guapo Tacos his gas station taqueria just east of downtown and when your kitchen is usually comprised of two people Fuentes told me what was going on and added there might be a bit of a wait I sat there and marveled at how Fuentes bounced from the counter to the grill less patience might not have even opened that day But tenacity has helped Fuentes weather a storm or two and it’s also brought him to where he is today: the owner of a terrific new restaurant that celebrates his heritage and the food he knows and loves The space has housed several other restaurants such as Emmy’s Smokehouse and 360 Smoke Shack is one of Fuentes’ partners in the restaurant; Jim Austin CEO of a biopharmaceutical engineering company called Conecraft nor is it as small as a gas station restaurant “It’s the perfect size for what I want to do,” Fuentes says “Spotlight some of the food I grew up on and give my friends a place to come and have a beer.” The menu features many of the dishes for which Fuentes made a name for himself at Guapo Tacos and its predecessor huge burritos packed with proteins and veggies Alambre is a traditional Mexican dish comprised of chopped meats and vegetables Huaraches consist of oblong-shaped pieces of fried masa dough topped with smashed pinto beans Fuentes says he wanted to bring more flavors of his youth and home to his new restaurant “I know there might be some people who aren’t familiar with these dishes,” he says “But that’s the whole point of owning a restaurant To introduce people to new flavors and food that they may not be aware of.” Fuentes says he’ll resurrect another dish from his days at Guapo and Mariachi’s as a special: pozole His mother and grandmother provided the inspiration for the traditional Mexican soup His menu also includes another homage: The Embargo torta is named after the much-missed Embargo nightclub and restaurant a downtown spot where Fuentes used to work I owe a lot to the people who worked there and gave me a chance.” But most Fort Worth diners didn’t catch wind of Fuentes’ cooking until Mariachi’s Dine In opened in 2018 Located inside a funky gas station just east of downtown Mariachi’s became known for chef-inspired takes on birria tacos and other up-a-notch renditions of Mexican cuisine when Mariachi’s owner Ashley Miller moved the restaurant to Fort Worth’s west side Fuentes chose to stay behind and rebrand the space as his own concept called Guapo Tacos Guapo turned out to be a major success: In 2022 it was named best taco shop by Fort Worth Magazine readers Fuentes won the award for Rising Star Chef of the Year at the 2023 CultureMap Tastemaker Awards When he and Miller went their separate ways he wondered if he should move forward with a new endeavor or go back to his previous life and job as a computer programmer “I did a lot of soul-searching and just decided I was going to keep going and see what happens next.” Los Guapos Mexican Street Food, 2708 W. 7th St., instagram.com/losguaposfw Malcolm Mayhew writes about food and culture for Fort Worth Magazine whether he was merely good (several years there) had a cool nickname and for the most part actually kicked some ass for a while once he made the majors for good in 1995: For a guy who pitched 9.2 big league innings between 1990 and 1995 and he later went into coaching in Bridgeport Of course he’s mostly known for the nickname One day in college a couple of friends invited to me to a doubleheader at then-Comiskey (delineated from its sponsored era by the swap of almost pastel blue seats for dark green ones still one of the wildest stadium transformations I’ve ever seen during which the Sox could clinch a postseason berth with one (1) win we’d abandon our seats for the bullpen bar which was separated from the visiting players by a plain-old wire fence this was the platonic idea of a game I was put in Chicago for college to attend and the second game means basically nothing Derek Lowe and other pitchers just start yakkin’ with fans one of whom asked at one point if the El Guapo nickname was ironic as you can glean from this video that calls him “a nose tackle of a pitcher.” Fun fact before we move on: Garces gave up the first of David Ortiz’s homers against the Red Sox: I’m sure Guapo loves a grilled cheese or two I have to ration it because he never says no The internet is going wild over Shawn Mendes’ thirsty reaction to Bad Bunny’s new photoshoot Earlier this week, Calvin Klein unveiled the campaign for their Icon Cotton Stretch underwear showcasing Bunny in a series of sultry poses wearing tight boxer briefs Shot by the acclaimed photographer Mario Sorreneti the shoot was accompanied by an equally steamy promo video of the LGBTQIA+ ally in his Calvin’s where he asks the camera: “The vibe is infinite Comments ranged from “I’ve never wanted to be underwear so bad” to “WOOF WOOF WOOF” and “raw no birth control in front of the mirror in the shower on the kitchen countertop in the living room on the tv in the balcony” – you get it Mendes’ public display of affection for Bunny, which has garnered over 9k likes and over 300 comments, as of writing, comes after his October admission that he’s still ‘figuring out’ his sexuality At the Colorado show of his For Friends And Family Tour (28 October) the Canadian singer took a brief pause to reflect on the viral lyrics in his song ‘The Mountain’ which are as follows: “You can say I like girls or boys Mendes pointed out to the audience that “people have been talking about [my sexuality]” since he was “really young” “sexuality is such a beautifully complex thing “It always felt like such an intrusion on something very personal to me something that I was figuring out in myself something that I had yet to discover and still have yet to discover.” He went on to share that creating ‘The Mountain’ was “very personal” for him as it felt like the right time to address the rumors in a way that was meaningful: “I’m speaking from the heart now because I just want to be open with everyone and live in my truth.” Amidst a round of applause from the audience Mendes shared that the truth about his sexuality is that he’s “just figuring it out like everyone else,” adding It’s really scary because we live in a society that has a lot to say about it.” “I’m trying to be really brave and just allow myself to be a human and feel things that’s all I really wanna say about that for now.” Mendes released his self-titled fifth studio album in November to positive reviews while Bunny broke streaming records with his sixth solo album Debí Tirar Más Fotos in January The singer-songwriter joined the internet in thirsting over 1130 Folly Road space that for 13 years was occupied by Black Magic Cafe is now home to a fast casual rotisserie chicken restaurant with three Connecticut locations Owned by Heather and Roy Riedl, El Pollo Guapo is now open and serving half chickens the restaurant draws inspiration from Caribbean “All of our sauces and sides are made from scratch,” Heather Riedl said “We thought it would be a good market for people who want to grab takeout and have a healthy dinner at home.” Takeout accounts for 90 percent of their business in Connecticut though the James Island location is better equipped to What made you choose to take your company down the non-alcoholic route?  00:03:46 – Do you think most people actually do realize that bitters contain alcohol?  00:05:08 – There must be a lot of education that would have to come into what you’re doing to make sure that people do understand that you’re alcohol-free? 00:05:59 – Now you mentioned that you use glycerol. How different is it to make bitters without alcohol, and what’s the process that you kind of go through?  00:07:39 – You recently released your barrel-aged vanilla. Tell us a little bit about that.  00:10:06 – Can I ask, so when you said that you’re aging in rum barrels, doesn’t that interfere with the non-alcoholic aspect? 00:11:09 – Now with something like Barrel-Aged Vanilla, how do you suggest that people use it?  00:13:38 – Do you think having so many flavours in your bitters range kind of takes that guesswork away? 00:17:05 – Now you’re about to release fig leaf bitters. Where did the idea for that come from?  00:19:07 – What sort of drinks will work well with the Fig Leaf Bitters? 00:20:16 – Now let’s talk a little bit about the RTD range. Are you launching these to, as we were saying before, eliminate that sense of guesswork?  00:22:27 – So if you’re using your bitters and soda, then theoretically people could make these flavors at home.  00:24:00 – You also sell mixers and syrups. Which part of the catalogue has proved the most popular? 00:26:06 – Now you sound like you’ve got a lot in the pipeline. Where do you see El Guapo in the future? 00:27:33 – What do you want people to take away from using your products?  00:29:32 – Now you mentioned earlier that low-alcoholic has become incredibly trendy at the moment. What do you see as the future for non-alcohol?  00:30:01 – Now if people want to experiment with your brand. Where are the products available?  A new restaurant from a former owner of Cielito Lindo will hold a grand opening this week Los Guapos Latin Food is set to open its doors at 1500 W The restaurant is the latest venture by Lourdes Perez Rojo, in partnership with Víctor Roman. grueling kitchen position that requires speed and expertise Washing dishes during a restaurant rush can leave an individual haggard But those who “put in their time” while harboring ambition often move up the ranks to line cook and even chef Not all tacos need meat or meat substitutes which Fuentes co-owned with fellow restaurant industry veteran Ashley Miller became a pilgrimage-worthy joint for vegetarians Miller announced that Mariachi’s Dine-In was moving to a larger space seven miles away With the relocation came the end of the business partnership behind the taqueria’s success. Miller would take over the existing brand and menu in the new storefront, while Fuentes remained in Mariachi’s original spot with a new name: Guapo Taco And the food is as wonderful and distinct as its predecessor The restaurant’s new design has a graffiti-style mural on the facade with the taqueria’s name above budding cactus paddles the logo features “Guapo Taco” in black cursive overlapping an illustrated taco in circles of white Blooming cacti are painted along the bottom A low wall separates the dining room from the gas station’s convenience store Miller took the Baja-style “fish” taco with her but Fuentes continues to offer vegetarian and vegan fare The aforementioned chorizo combines with carne asada in a campechano taco The birria taco’s meat is pressed in a creamy cushion of melted mozzarella and Monterey jack cheese and wrapped in a single white corn tortilla not the doubled-up tortillas that birria tacos are generally served in you don’t need two tortillas,” Fuentes says the taquero also explains that the protein is actually beef cheek barbacoa finished as birria in consommé instead of the more traditional goat meat The barbacoa needs nothing—it would be stellar without consommé or dairy The meat slowly dissolves on the tongue with a gentle flavor peppy cup of consommé is served on the side of the plate. The elote with Takis two ways—as whole rolls of the spicy-sour chips as well as pulverized—is an addictive textural juxtaposition.  But my favorite dish during my visit to Guapo Taco was the green chicken pozole Bobbing with plump spheres of hominy in a broth dominated by tender the soup is finished with chopped radicchio It was a homey dish that sent me slumping into my seat with a feeling of warm relaxation the pozole channels the cooking of his mother and grandmother But he isn’t trying to replicate their food He spent his childhood watching them make meal after meal with awe that grew into passion “That’s where I learned to treat food with care and with love,” Fuentes says “It’s not that I’m not making their recipes it’s the beginning of the journey.” He’s dedicated to continuing a culinary tradition without being beholden to it Fuentes adds ramen noodles before serving bowls of the vivifying food It’s far superior to much of the birria ramen sold across the region “People freaked out over it,” he says The taqueria’s name is as curious and attractive as the food Fuentes had a list of potential names and ran them by a group of friends while they were knocking back drinks He mentioned “guapo” because “‘hey we’re a handful of [handsome men] messing around,’ joking and probably drunk by this point,” Fuentes recalls The taquero decided to write down the ideas during the inebriated brainstorming session because he knew he “wouldn’t remember that conversation.” Fuentes ran the name “Guapo Taco” by his girlfriend explaining that he was keen on its concision and catchiness and with it Fort Worth got a fetching addition to its taco scene Guapo Taco301 S.
