In its heyday, the semi-industrial-feeling port city just north of Porto was once home to 54 fish canneries some of the city’s former factories and their graceful Art Nouveau facades have been reappropriated as other businesses – we saw more than one startup – while in many cases having weathered both good and bad times in Matosinhos the company is producing some of the best tinned seafood in Portugal As companies in Matosinhos scrambled to modernize they took loans from banks that they were unable to pay back quietly continued to do things the old way “Our innovation is not to innovate,” explains Patrícia Sousa This conservative approach has seemingly worked and turning their 1920-era lobby and offices into a living museum They have also opened their doors to factory tours Guided visits kick off in that vintage lobby with stops in a charmingly stuck-in-time clinic (Pinhais still employs an in-house doctor) and offices before moving to the factory floor It’s here that a team of 143 staff – nearly all women a vestige of the days when men were at sea – make as many as 25,000 tins a day The tins produced here span two main product lines: Pinhais which is generally for domestic consumption and which revolves around high-quality fish from Matosinhos; and Nuri and that can include fish from elsewhere along Portugal’s coast mackerel and horse mackerel – make it into tins at Pinhais which are preserved in four different ways: in olive oil a time-consuming process that the company refers to as “artisanal and traditional,” as many of the techniques and even much of the equipment haven’t changed much in the last century referencing the government-sanctioned fishing period Generally she buys fish from the auction at Matosinhos pier she’ll also buy from markets in Sines or Peniche We ask her what she looks for in a fish.“I look at the scales – they’re proof that the fish is firm Then I look at the size of the loin; I want it to be thick and fat adds that 2023 wasn’t a particularly great year for fish He and Emília tell us that this year’s catch yielded small fish and as a result the factory did not opt to make any Nuri “Reserve,” the line’s premium product where they’re put in a brine for a half hour meaning that no raw fish were being processed.) The fish are then trimmed on the factory’s original marble tables – the heads and intestines removed in one swift move – before being rinsed and placed on wire racks This step is somewhat unusual in the tinned fish world where fish are often “cooked” directly in their cans in the course of being sterilized While the just-steamed fish cool on the wire racks the staff typically head out for their lunch break The next few steps involve preparing the non-fish ingredients that go into the tins Each Pinhais or Nuri spiced tin includes exactly one brined chili one clove and one or two peppercorns – a recipe that’s been followed since the beginning the factory floor staff generally tackle each of these jobs together in a daily rotation an effort to avoid boredom and repetitive tasks These ingredients are placed in every can by hand The tins are then topped with olive oil (or tomato sauce) the second “cooking,” which according to Patríca provides the fish with a soft texture and “melts” the bones sterilized tins are then sent to the warehouse to mature “A product is never sold that day,” Patrícia tells us The final step involves wrapping the tins in their distinctive labels at which point they are ready for supermarket shelves another emblematic product from Portugal’s north we don’t eat tinned fish a lot,” says Patrícia explaining that locals prefer fresh seafood “Portuguese people only buy five percent of what we produce.” She tells us that 60 percent of the factory’s exports are bound for Austria where the Nuri brand has something of a cult status – there’s a Nuri shop in central Vienna where the company’s entire line of tins is for sale (and where Nuri-branded socks are finally available in Portugal) and end our visit at the shiny new upstairs café we’re presented with an open can of Nuri sardines in spicy olive oil We prod the sardines with a fork and they’re fatty and tender We tear off a hunk of bread and dip it in the olive oil which has taken on the characteristics of all of these elements a transformation that happened in a few months but that actually stems from a century of tradition Editor’s note: Inspired by our new Porto walk we’ve decided to rerun this 2023 feature on Matosinhos loading map - please wait...Map could not be loaded - please enable Javascript!→ more information 2020 at 11:15 am PDTI'm already in the bean club These sardines were an impulse buy from Real Good Food—my no-longer-secret source for flour and rice—which imports them directly from Matosinhos since there's no visiting a wine bar at the moment more nutritious alternative to charcuterie at home not to mention a more ocean-friendly option than most fish Conservas Pinhais is a 100-year-old artisanal producer that gets each morning's catch cleaned The seasoning mix in the spiced sardines is salt crammed alongside three fairly significant chunks of preserved pilchard BUY IT: Real Good Food, 935 NE Couch St., 503-987-0828, realgoodfood.com Willamette Week’s reporting has concrete impacts that change laws, force action from civic leaders, and drive compromised politicians from public office. Some 5,000 Renault workers at the Ayrton Senna Industrial Complex (CAS) in São José dos Pinhais are continuing their struggle in defiance of the union’s attempts to end the movement with a defeat Workers voted for a new 24-hour strike on June 11 just a week after the Metalworkers Union of Greater Curitiba (SMC) ended a 29-day strike SMC president Sérgio Butka said that the end of the strike was “a vote of confidence by the workers in the company,” which “committed itself to presenting a new proposal within 72 hours.” The workers’ primary demand is the hiring of 300 workers to keep up with the intense pace of the production line but this was again rejected by a mass assembly The workers had demonstrated dissatisfaction and anger with conditions at the company during the strike They rejected the company’s proposal three times in a row the movement is also demanding R$30,000 (US$5,600) in profit sharing (PS) and a 6.8 percent pay rise compared to the R$25,000 (US$4,700) PS and just over a 4 percent pay rise offered by Renault Being overworked on the production line has caused workers to fall ill systematically According to union data published on the Legislative Assembly of Paraná website a thousand workers are currently on leave from the factory due to repetitive strain injuries evidence of the current intensity of work “is the worker engagement rate on the production line the worker has only 5 percent time to take a ‘breath.’” The daily Bem Paraná reported that workers cannot leave the production line even for bathroom breaks there are reports of workers having to wait up to 40 minutes to use the bathroom.” With a daily output of around 800 vehicles the plant stopped producing 15,545 vehicles during the strike The movement also affected the Horse engine plant in the same complex as Renault which has around 600 workers producing 900 engines daily Renault/Horse had cut their pay and had the support of the capitalist courts In the first decision of the Regional Labor Court Judge Marco Antonio Vianna Mansur ordered an immediate return to work stating that there was a “clear appearance of an abusive work stoppage” and imposing a daily fine of R$30,000 (US$5,600) on the union if it failed to comply with the decision the Court increased the fine to R$100,000 (US$18,700) The suspension of this fine was the union’s great “victory.” In ending the 29-day strike the SMC claimed that the company “accepted the proposal to suspend the court injunction against the strike movement.” The Renault plant in São José dos Pinhais currently has around 5,000 workers, 3,500 of whom are production staff and 1,500 management staff. That’s 2,000 fewer workers than in 2020 when a strike brought the plant to a standstill the workers were mobilizing against a mass layoff by the company the workers told the WSWS that they were falling ill because of the intensity of the production line They also denounced the company for trying to take advantage of the pandemic to “discard” employees with illnesses or injuries acquired at work The strike lasted for 20 days and even faced police repression The movement ended with the union agreeing to reinstate some of the 747 dismissed workers on the condition that others would give up their jobs through a Voluntary Dismissal Plan The current condition of a reduced and over-exploited workforce is the product of a series of defeats led by the union has revealed himself in recent years to be an essential player for capitalist interests in the region The role played by Butka and the SMC was exposed in a statement by the president of Renault in Brazil in December of last year when the company announced R$2 billion (US$370,000) in investments at the plant for the production of a “completely new” C-SUV with a hybrid engine the conditions granted by the state of Paraná and the current collective agreement with the Metalworkers Union of the Metropolitan Region of Curitiba (SMC) Butka is the president of the Metalworkers Federation of Paraná (Fetim) and of the Força Sindical in Paraná Força Sindical is the country’s second largest trade union federation While having around 1,700 affiliated unions its job is to keep workers divided in each of these unions blocking the unification of their struggles nationally and internationally Renault is a French company with plants worldwide and is part of an international race for profits amid a restructuring of the auto industry with a focus on electric and hybrid vehicles. This restructuring has been carried out through a jobs bloodbath internationally It is in this context that the struggle of the workers at Renault in Brazil has unfolded The movement for more jobs at Renault cannot be taken forward by Butka and the SMC This movement requires the political independence of the workers from the union bureaucracies and the capitalist state which addresses workers in
