On a warm autumn night I’m sitting in chef Tyler Akin’s understated dining room just off the lobby of the boutique Hotel Anna & Bel in Fishtown
smart and beautiful and home from college on a short break
and we both say the same thing at the same time
We’re sharing a plate of Honeycrisp apples soaked in spiced honey
the plate dotted with folds of lonzu and cubes of seawater-washed Perrystead Atlantis
“It’s just like that scene in Ratatouille — ”
“When Ratatouille gives the grapes and cheese to his brother
It is emblematic of nothing about cooking and everything about being a chef — the choices made
the knowledge of what must go with what to balance sweet against salt against savory against spice
and pasta cupped like seashells dressed in a wisp of lemon butter sauce and tossed with chunks of Maine lobster
There were grapes and burrata served with hazelnuts and dark chocolate
and skate cheeks over polenta with a brown butter crisp touched with the smoky sweetness and strange vegetable softness of Jimmy Nardello peppers
and all of it bled together like the dreams you have just before waking — hyper-real but blurred around the edges
I drank cold gin and told my girl she had to try the ricotta dumplings I didn’t even remember ordering because I was envious of her lobster
They were Corsican-style storzapretti — fork-soft but firm
rich without being overwhelming — in a sharp arrabbiata punctuated with salty guanciale
Next was herbed pork belly with roasted new potatoes over Sardinian flatbread called pane carasau
the potatoes split and cooked hard so the insides steamed
It would’ve been the highlight of almost any other table in the city
Here it was just the thing we pushed aside before descending like starving wolves on the best swordfish I’ve had
grill-charred but meltingly soft on the tongue
with a walnut pesto that could’ve made shoe leather sing
with a smear of gently spiced labneh that added just the slightest touch of acid
there was nothing about the dish that wasn’t perfect
Like the egg raviolo they used to do at Res Ipsa after the sun set on Walnut Street
made to split and bleed yolk into a warm brown butter sauce
it was a dish I knew I could eat one bite of and remember for 20 years
“Because you’re probably never going to have swordfish this good again in your life.”

It’s an icy Fishtown winter at the corner of East Susquehanna Avenue and Belgrade
a fact I’m all too well aware of after circling the blocks nearby for a rare parking spot
followed by a long and shivery walk to dinner
But the intimate neighborhood setting is part of the charm of arriving at the Hotel Anna & Bel
a stylish 50-room boutique hotel created inside the 19th-century brick bones of the former Penn Asylum for Indigent Widows and Single Women
Once you step inside its polished checkerboard marble foyer
A crackling fireplace beneath a painting of Venus beckons you into this buzzy restaurant from chef Tyler Akin
where the warmth of two Mediterranean islands — Corsica
Sardinia — has been conjured to radiate straight into your bones
The sunny aroma of a Corsican hillside — an herbal “maquis” blend of calamint
and wild thyme — perfumes the roasted pork belly fanned over flatbread
as well as the effervescent Corsican 55 cocktail made with Cap Corse vermouth blanc and cognac
There are pastas rolled into teardrop-shaped spizzulus that tumble with look-alike calamari rings in the golden glow of a saffron and orange sauce scattered with pine nuts
Akin has even managed to make sundried tomatoes cool again
drying 150 pounds of Midnight Romas this summer on the patio beside the Anna & Bel’s courtyard pool and preserving them in oil so he could grace his plates with a kiss of Philly-Med sunshine deep into November
Philadelphia may appear to be fully saturated with Italian options
but its hunger for all corners of pasta culture is never truly exhausted
So a modern take on the foods of Corsica and Sardinia
offers some exciting regional traditions to explore
The intricate pasta shapes of Italy’s Sardinia are unique
while the mountainous French isle of Corsica
and chestnuts — a legacy of its period under Genoese rule
though he moved back to Fishtown to launch Bastia
Akin has plenty of experience with Italian cooking. He was a key contributor to Philly’s modern Sicilian phase a decade ago with Res Ipsa (the now-closed BYOB that saw the emergence of chef Michael Vincent Ferreri, currently at Irwin’s)
and made a research trip to Corsica and Sardinia last year
He captured enough of their essence to effectively anchor one of the area’s most intriguing new restaurant experiences
though my meals showed enough inconsistency to suggest this kitchen is still grappling with some details of execution
with a long dining room inside the asylum’s former chapel that blends the rustic elements of exposed beams and a fireplace with clean modern lines and pendant lights that cast an amber glow over its 56 cushy seats (not counting the 14 beside an illuminated bar that runs the length of the room)
There’s yet another cocktail lounge tucked in back
which looks out through a glassed-in porch onto the hotel’s pool
It’s a worthy draw in its own right: The cocktails get more elaborate
and one of Philly’s best new burgers calls in all its tallow-basted
works beverage program magic on all sides of the operation
Bastia’s staff is well-versed on various regional twists on the drinks
from the myrtle-based liqueur that shades the Winter in Sardinia cocktail to a wine program that sources half a dozen producers from the islands
The dining room staff is earnest and enthusiastic
including one who delivered each dish of a meal to our table with a dramatic slide step entrance worthy of an open mic emcee: “Hellooooooo
In case you missed it, culurgiones are among the “hot girl pasta shapes of 2025,″ according to my colleague Margaret Eby
Bastia’s version of these pleated Sardinian dumplings featured dough that was a bit too thick and gummy
and the sweet potato stuffing was too sweet for me
like a noodle-wrapped slice of Thanksgiving pie
groove-shaped malloreddus buttons that cradled a ragù of house sausage dusted with fennel pollen
The toasted Sardinian fregola shaped like pearl couscous are among the only pastas here not handmade (not yet
but they basked in a full-flavored seafood broth with mussels and an anise-scented rib of confit fennel
The twisty quills of the trofie were memorable for the simplicity of their garnish
and marjoram that highlighted the firmness and well-formed spirals of the semolina dough
The chef’s instinct to embellish tripped up some dishes
A broad slice of toast lathered with uni butter and topped with a skinny arm of grilled octopus was awkward to eat
(I still preferred it to the deep-fried octopus from an earlier visit whose mushy texture inside that crust was unappealing.) A richly braised osso bucco over lentils was glazed in an intensely reduced dark sauce that was borderline salty
The addition of briny green olive “cheeks” shingled over top — an admittedly eye-catching flourish — pushed it over the edge
Akin’s treatment of meaty skate cheeks was consistently excellent
their crablike sweetness accented by creamy polenta and the savory spark of a chile crisp made from house-dried Jimmy Nardello peppers
including a Nantucket bay scallop crudo with a silky soubise puree of hakurei turnips and onions
and the juicy brightness of Buddha’s hand lemon
A delicacy of langostinos — Akin’s best flavor approximation of the spiny lobsters he ate in Cap Corse — are lightly grilled and candy sweet over a savory curd made from preserved lemons bolstered by fleshy butter beans
A whole orata was one of the most satisfying entrees
butterflied and covered with a tapenade of Castelvetrano olives beside grilled artichokes that are
the result of the busiest artichoke prep kitchen in Philly
I’ll give props to any kitchen that dives enthusiastically into trimming those spiky thistles
an unpleasant chore many chefs skip with shortcuts
It’s also essential to one of my favorite new salads
a mound of paper-thin shaved raw artichokes dressed with salsa verde and Parmesan beneath crispy sunchoke chips
The combination of bright acidity and textural crunch is a Mediterranean analog to the Southeast Asian papaya salads Akin used to make at Stock
Skilled pastry chefs clearly remain a rare commodity in Philly
A couple desserts — a sticky lump of undersweetened dark chocolate ganache and a gâteau Basque with taleggio overbaked to the consistency of a dense cupcake — were just not good
Akin has come a long way since his early days
even if his grand new restaurant still has some edges to smooth out
So order a plate of malloreddus and the grilled langostinos
and have another drink from the bar — perhaps the rummy nocino and sherry elixir called What We Do in the Shadows
— to toast to Bastia’s continued culinary growth

Things really slow down in Restaurant World in the run-up to Labor Day
so there’s just a few quick things you need to know to get up to speed — notably some drink specials to keep you cool
and an all-corn menu re-vamp from a somewhat unlikely place
But let’s get things started with the week’s biggest news
We’ve talked about this place before
Bastia is chef Tyler Akin’s new Mediterranean restaurant concept that he’s been working on for a while now over at the Hotel Anna & Bel in Fishtown. Originally in the books as a late-winter opening
it is scheduled to open to the public on Thursday
It’s a solid 70 seats between the bar and the floor
with an Italian-leaning beverage program being run by ex-Mulherin’s beverage manager
switches between daytime cafe offerings and nighttime dinner service
And while some of you might read the Fishtown address and see the former golden boy of Stock (the tiny Fishtown pho shop Akin opened in the neighborhood back in 2014) returning to his roots
or look at the hotel location and recall that this is actually Akin’s second hotel restaurant (he’ll also continue to operate Le Cavalier at the Hotel Du Pont in Wilmington)
Bastia actually reminds me of something else from Akin’s resume
would’ve given it 11 stars if I could (though I only gave it three in the moment because I was a real bastard back then)
and told everyone who would listen that it was one of those restaurants that would define Philly’s scene for more than a little while
That gearshift of going from one thing in daylight to another at night
And MVF went on to make a name for himself at Irwin’s after the pandemic killed Res Ipsa (and Stock
has long wanted to recapture a bit of that magic
but with himself in the kitchen and running the line
will serve cafe and breakfast staples (starting August 28th) and
a Corsican/Sardinian menu full of sea urchin butter tartine with stuffed squash blossoms
entrecôte with bean and sweet pepper salad and porceddu with Sardinian flatbread and new potatoes
coastal menus with Cote d’Azur vibes long-gone from the Italian rusticity that has informed so much of Philly’s Italian food for decades
And even if the daytime hours of the all-day cafe won’t kick in for a couple weeks
the feel of the place has Res Ipsa written all over it
and settles into the whole breakfast/lunch/brunch/dinner groove
Akin will then pull the trigger on his other concept at Anna & Bel — a smaller
which will operate as a cocktail bar and lounge with bar and poolside seating
and an opening currently set for sometime in September
There comes a point in the lifecycle of any neighborhood when it stops being the scrappy
It turns the corner and becomes just another over-gentrified
trading coolness for the celebrity and reality for Zillow-coded fantasy
But it is a rare neighborhood that gets to take that extra step to become a parody of itself
And there are days when I believe that Fishtown is approaching that line
Days like today, after reading the news that the newest out-of-town transplant coming to snarf up another parcel of our diminishing real estate is Garage Sale Vintage — a Colorado-based retailer that is a combination vintage clothing store
I don’t know exactly why this is the thing that pushed me over the edge
mashing all three of these things together into some kind of cringe-y nexus of (literally) recycled cool-kid tropes and jamming it into a former Wells Fargo bank location right at Frankford and Girard just seems like a lot
I guess if you’re looking for Nevermind on vinyl
an “I Survived The Y2K Bug t-shirt” and a margarita all in one place
with a vibe that’s arguably more authentic than your local Hot Topic
They’re looking to open some time next year
and my prediction is that at the moment of Garage Sale’s opening
all of Fishtown will collapse in on itself
forming a kind of super-dense cultural black hole that smells vaguely of mustache wax
The gravity will be so powerful that not even the light of an Edison bulb can escape
Or maybe it’ll just be super popular and make parking even more of a nightmare

The end of summer can be murder on the restaurant industry
it’s just oppressively hot out there most of the time
and the last thing most people are thinking about when it’s 90 degrees at 8 p.m
And they turn to the one thing that’s always a guaranteed moneymaker no matter the weather: liquor
The Twisted Tail is serving champagne pops again this summer — a pour of champagne plus an all-fruit popsicle
lemon and blueberry look to be the most common
Meanwhile, for some less boozy options, Oltremare now has a rotating list of fresh gelatos and sorbets on their summer menu
And at Little Walter’s
chef Michael Brenfleck has one of the most unique cocktail menus in the city — a board completely given over to Eastern European-inspired drinks named after various professions
It’s the only place in town where you can get a “Thumasz” made with plum brandy
or a Citywide (“Urbanista”) composed of a 16-ounce Zubr and a shot of Zubrowka
Little Walter’s is also serving Lód Wodny
which is kinda like a blueberry Polish water ice with sour cherries and rye berries on top
Pair it with a shot of the cherry nalewka from the bar
chill out and you’ll barely even remember that it’s a billion percent humidity outside

Last week, I told y’all about Chubby Nori — the new handroll specialist that just opened above Chubby Cattle Shabu in Chinatown
The place is already expanding their hours
those dozen-odd seats the place has have become something of a hot commodity
so they’ve essentially added an entire extra seating to their daily churn
Now you can just walk in anytime between 5 p.m
one thing (besides humidity and mosquitoes) that August in Pennsylvania will always provide
An absolute wealth of corn-based special menus
We’ve talked about a few of them in the past couple weeks
but now I’ve got another one for you — coming from a somewhat unexpected place
Bonus: All the corn Cake Life is using is local, grown right in Lancaster, PA. Though, really, living here has always been kind of a cheat code for anyone doing anything with corn because all of it is pretty amazing — even if we’re talking about ears from some neighborhood corn freak with ten stalks growing in his backyard.
Anyway, this stuff will be on the menu until corn season is done. So get there soon. Because it’s gonna be pumpkin spice latte season before you know it.

It's set up in the former chapel of the Penn Asylum for Indigent Widows and Single Women
Chef Tyler Akin’s debut as a restaurateur was Stock, an 18-seat pho shop on Girard Avenue in Fishtown, in summer 2014. Exactly 10 years later, Akin has returned to the neighborhood to open his latest, Bastia.
Opening Aug. 15, it’s a 70-seat cafe by day and coastal Mediterranean restaurant by night in Foyer Project’s new Hotel Anna & Bel
with what Akin calls an “Italian snacky menu,” is forthcoming next month
The hotel is the former Penn Asylum for Indigent Widows and Single Women, a hauntingly beautiful 19th-century building tucked into the rowhouse neighborhood
a half-mile from the bustle of Frankford Avenue’s shops and restaurants
The restaurant is part of the home’s chapel
began talking about opening a grocery store/all-day cafe
They shelved that idea early in the pandemic
who cooked at the Greek-Mediterranean restaurant Komi in Washington
and at Zahav in Philadelphia before opening Stock
came up with a menu designed to match the vibe created by Foyer’s Arbel
and the design and architecture firm B March
“I went down the rabbit hole and started to look at Sardinia because of proximity and the sort of flavors that could complement each other.”
Among Bastia’s dishes will be skate cheeks with corn and bonito beurre blanc; sea urchin butter tartine with stuffed squash blossom; entrecôte with borlotti beans and sweet pepper salad; and grilled lobster Algherese with legumes
The brunch menu will include green shakshuka with herbs
and harissa; and a breakfast sandwich with ricotta frittata
is stocking the bar with small-batch spirits and natural wine labels and will use such traditional Corsican and Sardinian ingredients as citrus and chestnuts
Nonalcoholic options include Italian sodas and coffee granita
As for that 10-year stretch between Stock and Bastia: Akin opened a second Stock
and partnered on Res Ipsa Cafe; all closed during the pandemic
he returned to his native Delaware to open Le Cavalier
and was part of the Independent Restaurant Coalition
Wednesday to Sunday; dinner will be served from 5 to 10 p.m

From scrapple fries at Sulimay's Restaurant to omakase at Hiroki
the dining scene in Fishtown offers a plethora of options for diners of all kind
But Fishtown's newest restaurant is a bit off the beaten path in the former Penn Asylum for Indigent Widows and Single Women on at Susquehanna Avenue and Belgrade Street
Bastia sits inside the newly renovated facility
The restaurant's opening has been hotly anticipated by outlets such as Bon Appétit
head chef and partner Tyler Akin and his team opened Bastia to the public
The dining room seats 70 people and is open for dinner from 5 p.m
"It's getting busier every week," Akin said
The busy nights are smoother than the middling nights
as his front and back of house teams are firing on all cylinders like a well-oiled machine
Bastia's menu focuses on Mediterranean cuisine
He said the idea came to him while planning a collaborative dinner with a colleague in Washington
The plan was to marry the French brasserie at Akin's Le Cavalier in Wilmington's Hotel Du Pont with the cuisines offered at Tail Up Goat in DC
"It was an opportunity to do French and Italian simultaneously through a new lens," he said
While that collaboration never came to fruition
But he sought to find "something more obscure and novel" to highlight the Corsica region
during the off season when the area's not flooded with wealthy European tourists
and immersed himself in the culture and cuisine
Akin said became enamored with the rustic facilities and hearty people
many of whom he said carry knives to cut cheese and charcuterie at a moment's notice
diners will find menu items such as salt baked beets with Calabrian chili and ricotta
braised veal osso buco with olives and le puy lentils
as he and his team are sourcing ingredients locally and internationally
tapping into the seasons' freshest produce in Pennsylvania and abroad
The late summer and early fall is a chef's dream
Fruits are juicier and sweeter and the produce is fully mature
Spring is the other season that Akin gets excited about
so check Bastia's offerings when greenery starts popping up again
Bastia's dinner menu, which is available online here
The specials not only offer diners unique dishes
but allow Akin and his team to tease out new things
"If [specials] vindicate themselves and we get good feedback
they might make it on to the menu," he said
"But sometimes it's just a fleeting idea that's there for a night or two."
Some of that is affected by the availability of ingredients
which Akin said is made simpler thanks to Bastia's partnering with Green Meadow Farm in Lancaster and Sogno Toscano
which supplies imported Italian ingredient
Akin touted imported ingredients as being a crucial factor in cooking authentic meals in any kitchen
and for giving Americans new culinary experiences they'd otherwise miss out on
But a restaurant staff is more than just the chefs
"Every position is critical to the success," he said
It's all the steps in the kitchen that when executed properly take a restaurant from being good to great
and many more factors are integral to success in the industry
"It's not an easy thing to open a restaurant
He likened introducing new systems to other chefs to fitting square pegs into round holes
you kind of whittle them into circles," he said
as he said he feels Bastia already has its own voice
"I think it takes a lot of restaurants to get there," he said
He credits that to being ambitious and dedicated to the concept
while also finding opportunities to be creative while still working in that concept
a cocktail bar in the Hotel Anna & Bel will open
It's a smaller space than Bastia's dining room
but will spill out onto the hotel's patio and pool area into the early evening
hours will be limited to limit noise for hotel guests
Bastia will offer all day café services Monday to Friday

I met Chef Tyler Akin in September 2020 on a road trip to Wilmington, Delaware, during the deep fog of the pandemic. He had just opened Le Cavalier
a French brasserie in the historic Hotel Dupont in his hometown
Akin and his team were creating necessary moments of brightness with food and hospitality
and it was the luscious coconut cake that instantly hooked me
I asked if I could purchase a whole one for my mom’s birthday
he sent me off with a heavy cake in hand—and without taking my money

given that Gaspar hadn’t been hurt in that incident
Bastia president Claude Ferrandi would receive “total support”
though there’s no word on whether or not these sanctions will result in him being sacked

Away to SC Bastia this evening, OGC Nice put in a dominant performance to earn themselves a 1-0 win and thereby book their place in the last 16 of the Coupe de France, with Mohamed-Ali Cho scoring the only goal of the game on the hour mark.

By staying solid despite the hosts’ pressure and earning their first clean sheet since their 1-0 win over Brest on 2nd November 2024, Les Aiglons achieved their primary aim of booking their spot in the last 16 of the Coupe de France – a round that they have now reached in three of the last four seasons – with the draw for the next stage of the competition set to take place at 20:00 CET this Thursday.
