colors FDA has not initiated a formal rulemaking to phase out Red 40 Blue 1 and 2 and Green 3 by the end of the next year – instead preferring to operate on what it calls an “understanding” with industry stakeholders The agency indicated a more formal deauthorization of little-used Citrus Red #2 and Orange B would come “within weeks,” as would an accelerated deadline to remove Red Dye 3 ahead of the previously set 2027-2028 deadline But rather than wait for a formal rulemaking, Michelle Briffett, a principal with the consultancy Roland Berger, recommends in this episode of FoodNavigator-USA’s Soup-To-Nuts podcast that food and beverage manufacturers proactively invest now in renovation and innovation and explore compliance strategies She explains even if FDA’s efforts to ban synthetic dyes is challenged or delayed many companies should consider removing the colors to assuage rising consumer concerns She also notes companies could face several challenges including increased competition for limited supplies of alternative dyes or reformulation complications related to differences in organoleptic or functional performance even if FDA’s efforts fall apart or are behavior or attention disorders in children Briffett explains the first significant domino to drop in the movement was in 2023 when California set a deadline to ban several food additives from sale within its borders “We have now seen this kind of effect really snowball across states,” with “more than 20 states that are in different stages of proposing legislation on different additives,” she said With the change in the administration comes a change in how federal leadership is responding to actions at the state level Briffett explains that under the Biden administration FDA was actively discouraging state bans and urging patience while it took a science-based data-driven approach to review additives at the national level so as to avoid a complicated patchwork of legislation the Trump administration sees state bans as a more efficient route to removing ingredients from the food supply “The pathway for banning at the FDA level is more complex because it has to leave room for public comment There is typically a hearing of the industry It has to pursue a lot more scientific evidence in order to ban something,” and so “the leadership of the FDA and the Department of Health and Human Services wants to pursue these bans” because they do not have to follow the regulatory checks and balances As indicated by FDA’s working “understanding” with industry stakeholders many companies are removing synthetic dyes and other additives called out by state legislators even though they may feel the bans are not supported by science and data Briffett explains this capitulation is the path of least resistance and one that aligns with consumer demands a dangerous precedent could be set for banning other ingredients that could play a more significant role in formulations than dyes “When we have looked at what consumers are thinking about these regulations consumers generally support more food additive bans I think there is general concern about food additives for health especially in a world of social media activism I think they need to be very thoughtful about not necessarily defending individual food additives because it is a battle that they may very well lose,” said Briffett if bans target more widely used ingredients that have a more significant impact on food safety and function companies might want to take a different approach is to explain in the ingredient deck why potentially unfamiliar sounding ingredients are included – so the benefits for consumers that they offer 29 states have either passed or proposed state-specific bans against food products containing certain food additives and preservatives and as Briffett noted California led the way with passage of legislation in October 2023 and September 2024 followed by passage of similar bans in March 2025 by Virginia Proposed bans have also passed in the house and senate of Arizona but not yet passed them in the house or senate While California was the first to limit the use of additives and dyes its deadline for compliance – set for January 2027 – is one of the longest Many other states set a deadline in 2027 – but some set extremely tight deadlines of later this year Briffett argues meeting these deadlines is feasible for many companies but they should act now to ensure they are fully compliant in time and do not risk being replaced or losing market share She explained reformulating or innovating with natural dyes have many challenges compared to synthetic options higher quantities required for similar vibrancy and the potential for organoleptic or functional performance differences that may require additional ingredients and adjustments which could prompt companies to rethink their prices many consumers are price sensitive currently but on the other hand research suggests shoppers are willing to pay more for natural products that they perceive as safer or healthier When shoring up supply chains for natural ingredients Briffett recommends companies contract with multiple sources in different regions so they ensure not only sufficient supply but also the capability to blend inputs for consistent performance she also recommends companies look at actions taken in other countries that have already banned some of these ingredients – for example what kind of messaging to consumers did companies emphasize Briffett recommends companies consider collaboration rather than confrontation when it comes to innovating and renovating to meet consumer needs This is particularly important because the specific ingredient bans moving through legislation currently likely are just the start not only could additional ingredients be targeted in the future which could have more significant business implications companies should refine storytelling techniques to explain how ingredients processing or packing help consumers and either reinforce food safety The state dye bans should not viewed as an isolated incident – but rather part of a larger movement and It's just that Baileys has become almost synonymous with Irish cream liqueur, and it's not often you see people using alternatives. It's a shame because there are so many superb Irish cream liqueurs out there that don't have the popularity or — let's face it — the marketing budget that Baileys does I think many folks also assume that if you've tried one Irish cream liqueur and nothing could be further from the truth There's a huge amount of variation between brands — some are more whiskey-forward and some even use honey as a natural sweetener My point is that there are recipes where Baileys isn't the best ingredient for the job and you're missing out by not experimenting with other brands in the category I first noticed the tonka bean trend around the mid-2010s with the mysterious seeds popping up more and more frequently on cocktail and dessert menus alike boasting a complex flavor profile containing an aromatic combination of vanilla My first objection to the use of tonka beans is simply that I feel that they became too "trendy." When you work in the industry you start to get tired of seeing the same stuff being used everywhere you go I admit that it's not the strongest argument but I felt vindicated when I learned a little more about tonka beans I was living in New Zealand when I noticed them becoming popular so I didn't realize that they'd been banned in the United States by the FDA since the 1950s It turns out that the main compound in tonka beans can cause fatal liver failure in high quantities it's unlikely that any cocktail will contain enough coumarin to kill you Some U.S.-based chefs and bartenders still ignore the ban and while I might look the other way in a country where tonka beans are legally available I find it hard to trust a business that's willing to openly flout health regulations Even putting aside the beloved espresso martini and Irish coffee, there are plenty of delicious coffee-based cocktails that are well worth trying coffee can be a superb cocktail ingredient that improves both the taste and texture of a drink there's simply no substitute for fresh espresso or cold brew made from real coffee beans I understand why people use instant coffee in a pinch It's cheap and doesn't require any specialist knowledge or equipment to use but it's not going to make for a tasty cocktail Coffee beans come in two main varieties — Arabica and Robusta Instant coffee is typically made with the latter which contain more caffeine but are cheaper and taste very bitter Arabica beans contain more sugar and fat but produce a much smoother-tasting coffee with more nuanced and enjoyable flavors Using real coffee also means you benefit from the crema This is the name for the creamy layer that forms when you pour an espresso shot caused by the hot water emulsifying the beans' natural oils Some instant coffees are formulated to produce a crema but it's incomparable to the real thing I'll forever be a proponent of using high-quality components in cocktails You wouldn't expect to eat a masterpiece of a meal made with poor ingredients there comes a point of diminishing returns Consider the reasons a spirit might be considered high-end some brands are expensive purely because an eye-watering price tag implies exclusivity It's a marketing strategy and spending the extra money won't make any difference to your drink Other liquors are expensive because they're rare which Some spirits truly deserve their higher price point but it's their nuanced flavors that make them special Maybe there's some barrel character from extended aging that you don't find in younger spirits or something unique about the ingredients used to make the distillate The problem with most of these is that those nuances are going to be lost once you introduce other ingredients Unless you're making a spirit-forward cocktail like a martini or an old fashioned You're better off picking a spirit based on how well it works with the other components or one that's considered a typified example of the style Despite everything I just said about using high-end spirits in cocktails it's worth acknowledging that there's another side to that coin While a premium spirit might be wasted in a cocktail The factors that make a spirit "low-quality" can vary Sometimes it's due to inferior base ingredients other times it's due to limited or sloppy distillation or a reduced aging time The last two reasons can both result in a less-flavorful harsher-tasting spirit with more pronounced ethanol notes and it's hard to mask these kinds of faults in any cocktail Attempts to cover them up by adjusting the amounts of your other ingredients are just likely to throw off the balance of the drink Although budget liquor is more likely to be lower quality There are plenty of spirits that are cheaper due to factors like economies of scale or local production These can be excellent value-for-money and while there may be better options If you've ever wondered how bartenders make those cocktails that smoke like something out of a science experiment the answer is likely to be dry ice or liquid nitrogen I've been wary of liquid nitrogen since Alan Cumming's frosty demise in James Bond's Goldeneye but it turns out my concerns weren't invalid Although the two substances produce similar visual effects in cocktails Dry ice is carbon dioxide that's been compressed from its usual gaseous state into a solid one under incredible pressure Liquid nitrogen is nitrogen that's undergone similar processes to change it from a gas into a liquid Dry ice has a surface temperature of around -109 degrees Fahrenheit while liquid nitrogen comes in at below -300 degrees Fahrenheit Both are low enough to cause severe injury from skin contact with dry ice evaporating into carbon dioxide and liquid nitrogen having the ability to reduce the amount of oxygen in the air Using the wrong type of container can also result in an explosive build-up of pressure combined with the fact that people have experienced traumatic injuries from cocktails that use these "ingredients," are enough for me to decide that they shouldn't be in the hands of bartenders I know that it doesn't technically count as an ingredient but I'm going to take this opportunity to rant about my least favorite garnish — the cocktail umbrella and do absolutely nothing to improve a cocktail Garnishes have a purpose which is to enhance the aroma and flavor of a drink they should make a drink look enticing too but you can't tell me that a toothpick covered with garish Some bartenders claim that cocktail umbrellas serve a purpose by shielding cold drinks from the sun but even the "King Cocktail" himself Tortillas made out of cottage cheese? Admittedly, It sounds like one of those trendy, too-good-to-be-true food hacks that show up on your feed, rack up millions of views, and then flop when you put it to the test. But this one? This one's legit. With just two ingredients – cottage cheese and eggs – you can whip up homemade tortillas that are high in protein There's not much effort required because the process doesn't involve a whole lot of work to begin with The batter blends up silky-smooth and pours easily making it ideal for even cooking in a nonstick skillet You can swirl the pan to spread the batter thinly which helps get a nice flexible texture — or cook it on a lined sheet-pan in the oven if you prefer the edges get a little golden while the center stays tender and pliable which is perfect for rolling without tearing By the end of these few steps, you'll get a versatile wrap that works with everything from breakfast tacos like you find at Taco Bell to sandwich roll-ups What's so impressive is the fact that they hold together well and reheat like a charm — you can keep them in the fridge for a couple of days or freezer for up to a month If you're sick of throwing out half-used packs of tortillas that went stale in your fridge drawer These cottage cheese tortillas feel like a miracle hack and you don't even have to leave your house to pull them off even blitzed fresh baby spinach – you name it You're basically creating a protein-packed wrapper that can flex in any direction And if you crisp it up in a pan with a little oil or cheese it's an easy way to make a wrap feel like a full-blown meal without a lot of work or ingredients You can get seriously creative with how you use these tortillas beyond sandwiches, too. Use them as a base for a quick breakfast pizza – top one with scrambled eggs and pop it under the broiler for a minute or two Or layer a few in a baking dish with sauce and fillings for a fast You can cut them into strips and bake or pan-fry for tortilla-like chips that are great for soups or dipping and they don't fall apart like some other alternatives tend to allows food producers to make proteins and other ingredients using microbes rather than animals significantly reducing land use and emissions from animal agriculture while increasing reliability and food security Fermented novel proteins could make up about 4 percent of total protein production by 2050 an annual market of $100 billion to $150 billion with variability based on climate policies and the pace of technological development Advancements in fermentation technology also stand to benefit other industries such as chemicals and materials fermentation technology will need to scale Most novel-ingredients players today have production costs that are an order of magnitude higher than the cost of the production of traditional protein which are typically in the range of $2 to $15 per kilogram To bring down price points through economies of scale our projections show fermented-novel-ingredients players will need to invest more than approximately $250 billion cumulatively by 2050 to expand capacity we explore how the food industry can accelerate the shift to fermentation-derived ingredients and investors can improve fermentation production processes and bioreactor technology to reduce costs make new products that are compelling to consumers and bring partners together to scale the industry The high interest in novel foods is due to their ability to augment traditional food production and is estimated to grow to approximately $3.5 trillion by 2050 and disease are challenging animal agriculture’s ability to support the nutrition needs of the growing global population Bioreactors are large vessels that create controlled environments to support biological processes or cells are fed a carbon source (typically glucose or sucrose) and produce useful chemicals or materials These materials are then harvested from the broth and used to create products the microorganisms themselves are harvested and used as proteins A number of companies that use biomass fermentation such as Nature’s Fynd and Superbrewed Food organisms are genetically reprogrammed to produce specific molecules such as insulin or laundry detergent enzymes although precision fermentation has been used for decades to make critical proteins such as rennet and other enzymes it was made famous for alternative-protein applications by Impossible Foods which launched its heme ingredient in 2016 Precision fermentation is now being used to produce bioidentical versions of other animal proteins these cells can be grown on tissue scaffolds to mimic the structure of animal muscles or can be combined with plant proteins and other ingredients to create blended meat-based products Novel ingredients produced through bioprocessing are a way to mitigate these risks (see sidebar “About fermentation and cultivation of cell cultures”) Because fermentation takes place in a synthetic environment (bioreactors) manufacturing is both controlled and modular increasing geographic flexibility and reducing exposure to weather and disease-related disruptions in the traditional food and agriculture value chain fermentation requires a smaller land footprint than traditional agriculture making it a powerful option for building greater food security Manufacturing is both controlled and modular Before the novel-ingredients industry can help make food systems more sustainable and resilient existing capacity to support scale-up is limited and contract manufacturing organizations (CMOs) often have margin expectations that are not in line with food manufacturing industry standards often making them unviable for companies looking for more capacity Although several new capacity additions have been announced others have fallen by the wayside due to macroeconomic factors Building more capacity isn’t the only challenge The underlying technology and processes need to be developed and improved The opportunities and risks of novel ingredients are still being investigated and investors alike are in the process of allocating capital expenditures To demystify the future of this growing industry we identified three areas crucial to building and scaling a new food ecosystem: The single most important factor for launching the novel-food market will be reducing the unit costs of novel ingredients By implementing technological innovations in bioprocessing and downstream production processes—taking a total cost-of-goods-sold (COGS) approach—novel-ingredient companies could have line of sight to cost reductions of approximately 50 percent right now (Exhibit 2) Most savings are expected to come from primary drivers of the COGS including titer (the measure of concentration of the desired product in the post-fermentation broth) downstream processing (converting the fermentation broth into a stable product) Some of these drivers have steadily improved over time core intellectual property (IP) owners are making continuous titer improvements chemical and pharmaceutical companies have deployed digital analytics and What could truly spur the industry forward is step-change process improvements More-fundamental changes to bioprocessing could significantly increase active cycle time and capital efficiency Several start-ups are exploring converting fed-batch processes into continuous ones (see sidebar “Case study: Australian bioprocessing start-up Cauldron”) while other companies are converting traditional aerobic processes into anaerobic ones McKinsey: Tell us about your continuous-fermentation technology What problems does this technology let you address running continuous fermentation has been a challenge due to contamination of the ferment and genetic drift of the microorganism population Our “hyper fermentation” process makes it possible to run our fermentation continuously over multiple weeks We maintain microorganisms in a productive state which maximizes output and reduces the amount of “downtime” in the fermentation cycle We’ve run our hyper-fermentation process for as long as eight months and 24 days at a scale of 10,000 liters These productivity gains translate into lower cost of goods sold and better capital efficiency which have been key roadblocks to the development of the sector McKinsey: What challenges do you see for the novel-ingredients supply chain Cauldron: One of the most overlooked challenges today is access to adequate levels of feedstock If you’re trying to achieve price parity but spending too much on glucose then it’s tricky to have a competitive price in the market The other big challenge is access to manufacturing capacity McKinsey: How are you working to build ecosystems to support your business Cauldron: We want to build partnerships that help speed up time to market and make it easier for precision-fermentation companies to go from lab to commercial scale—encouraging specialization and allowing everyone in the industry to focus on what they do best we have formed partnerships with strain engineering and bioprocessing companies upstream from us and are exploring joint ventures with supply chain partners to scale up our manufacturing capacity In addition to step-change improvements in processes it will be critical to upgrade bioreactor technology Industries such as pharmaceuticals and chemicals have designed fermenters to fit their needs but bioreactors have not yet been redesigned to suit the needs of the food industry New assets must be developed that meet food-grade specifications and move closer to the margin expectations of the food sector bioreactors and their surrounding components need to be stripped down and built from the ground up in a fit-for-purpose way but global OEMs have yet to address this opportunity some start-ups (including a small set of asset-focused start-ups such as Sterling Bio Machines and Ark Biotech) have redesigned bioreactors and built custom models out of necessity some companies are exploring the use of more-modular fermentation tanks to significantly reduce capital costs and drive learning curves As fermented novel foods begin to come down the cost curve food and beverage companies will have the chance to introduce new ingredients and offerings for consumers While precision-fermented ingredients are genetically the same as their animal-derived counterparts biomass proteins offer unknown and exciting possibilities because many of these ingredients are totally new to human consumption and innovators that have strong food-formulation capabilities will stand out from the pack As food scientists learn the true breadth of the texture and protein fortification capabilities of novel proteins companies will be able to create unique proprietary offerings for consumers Manufacturers can experiment with using novel fats to improve mouthfeel and add savory flavors to food while replacing undesirable ingredients such as palm oil Precision fermentation could also allow manufacturers to use individual egg or other proteins that offer more-specialized nutrition It may be that these novel ingredients can replace many traditionally sourced products such as gums and methylcellulose that deliver critical performance benefits in foods but that can be considered undesirable by consumers 49 to 67 percent of consumers indicated willingness to try food and drinks containing novel ingredients Survey results also indicated that consumers are particularly interested in trying novel ingredients in snacks and during lunch These results can provide guidance for food formulators as they develop new offerings and work to educate consumers about novel ingredients To drive the expected scale of this industry $250 billion or more may need to be invested in fermentation assets over the coming 30 years This global expansion approximates the type of industry shift that solar panels and electric vehicles (EVs) The infrastructure investment needed is likely too large to be funded solely by venture capital And until remaining technology and commercial milestones are achieved project finance and growth equity players remain reluctant to enter This leaves a gap in the global funding landscape that the ecosystem can adapt to fill (Exhibit 3) To unlock new funding models and allow global capital pools to begin investing at scale New business models are the key underlying factor that will allow the novel-foods industry to address these points If start-ups and other players in the novel-food space can build an offtake and risk-sharing ecosystem they could attract investors and bridge the funding gap These connections would also make it easier to improve process technology A few types of partnerships and funding are already proving to be effective in the novel-foods space: and commercial partners that come together with innovators will be builders of the novel-foods market and will play a crucial role in fueling the global growth of biotechnology a few factors will be important to consider: Biotech-produced foods can allow ingredients manufacturers to expand their portfolios and build a competitive edge through unique formulation capabilities and know-how Because novel proteins can be produced anywhere they offer an opportunity for ingredients incumbents around the world to enter animal protein markets for the first time shifting the competitive landscape for products such as dairy and even non-protein products such as cocoa As the asset base to support biotech-enabled ingredient production is constructed there is a significant market opportunity for bioreactor and downstream processing OEMs much of the asset base currently in use is borrowed from other industries and has yet to be value-engineered for food production The companies that choose to invest in designing and developing fit-for-purpose technology over the coming years may become critical players as global capital expansion continues Start-ups are eager to bridge volume needs with on-demand capacity and they stand to benefit greatly from partnerships with incumbent players and investors In the current macroeconomic funding environment some players may fail to demonstrate progress fast enough to continue to secure funding each innovator will need to make choices about what capabilities to invest in from titer improvements to ongoing IP creation Developing food formulation capabilities and a distinctive understanding of how to work with novel ingredients could offer a competitive edge as more proteins are commercialized traditional investors are increasingly exploring the sector and looking into business models that might allow for greater investment Establishing infrastructure-grade financing from securitized assets with committed offtake at market-clearing prices is expected to be critical for scaling the industry as in other industry scale-ups such as wind and solar we expect a combination of cost parity and consumer demand to mature and derisk the novel-ingredients industry leading to a global infrastructure expansion leaders can continue building creative mechanisms to balance capital If players can enter this investment opportunity now they have a chance to build the food supply chain of
