Since 1997, Garorock has captured the hearts of many a rock fan
some 40,000 spectators turn out for the festival
the record was even broken with over 50,000 festival-goers
Garorock welcomed artists such as Nouvelle Vague
As a result of such high attendance, the festival decided to invest in a 4th stage for its 15th anniversary in 2011... In other news, the organizers have decided to relocate Garorock. The festival has moved from the Parc des Expositions to the Plaine de la Filhole in Marmande
Whereas it used to open the festival season on the first weekend in April
the festival returned to the Plaine de la Filhole from June 27 to 30
and awaits festival-goers from Thursday July 3 to Sunday July 6
This new 29th edition will therefore take place a week later than usual

Incumbent Terrebonne District 7 Councilman Al Marmande is facing a familiar challenger
He vacated the council seat to run for parish president in 2015
eventually losing to Parish President Gordy Dove
The two candidates differ on their views for recreation
Marmande is maintaining his position that the steps taken so far to reform the system have been enough
saying council members need to take a more active role in their recreation districts but hasn't taken a position on any possible consolidation efforts
Here are the candidates' answers to The Courier and Daily Comet’s campaign questionnaire
Responses have been edited for clarity and brevity
What would be your top three priorities if elected
Babin: To maintain a good checks and balance between the two branches of government (executive and legislative)
to use our tax dollars wisely and to ensure that the health
safety and welfare of our citizens are place first as set forth in our Charter
and promoting manufacturing companies to support local economy
Do you think the parish government has enough money to provide the services residents want and expect
Would you vote for a tax if you were convinced the money would go to a necessary public service
Babin: I feel there is ample money available to maintain what the parish government is responsible for
TPCG needs to think first about what it is charged to do or its responsibilities for the citizens of Terrebonne
We have other public bodies who collect tax dollars to provide the service they are charged to do
We of course should provide assistance when needed
but we should get something in return through cooperative endeavor agreements
Given the state of our economy I would not be in favor of any tax increases
I think we need to be more efficient if possible before we would ask our citizens for more money
we have enough money to budget to do certain projects
Are there services you would propose cutting if you are elected
What are they and why would you seek to reduce or eliminate them
it is difficult to say what services we are now providing need to be cut or eliminated
I think a more appropriate way would be to evaluate our departments and services to see if they need to be eliminated or streamlined
Becoming more efficient by eliminating duplication of jobs and services and having the best people in the positions of authority are one way to save tax payer dollars
What are some specific ways you would like to see Terrebonne diversify its economy
Babin: The oilfield is not what it once was
our seafood and sugar cane industries are only a fraction of what they use to contribute to our community
retail sector and a waterway system that other areas would love to have
Somehow we need to marry all of what we have to their needs and show what we have to offer
We have to think out of the box or we will be left behind
The fact that we have a higher level of protection from hurricanes (Morganza) than ever before gives us a unique advantage over other areas of our state and surrounding states
We need to convince industry that Terrebonne Parish
Marmande: Residents supporting local companies and try to get manufacturing companies come into Terrebonne Parish and hopefully create jobs
Do you think the steps taken to reform recreation have been enough
Instead of dismantling what we have why not use what we have to make it better
We have yet to completely isolate our strengths and weakness
We have divided ourselves but have not accomplished what would make our system better
If council oversight is what we think is reform
Voting on spending is a step in the right direction but it falls short of reform
Each councilman along with administration needs to take a more active role in making sure we have the correct people on the boards and take a more active role in attending the rec meetings
Although as a councilman you have no authority over the board
a friendship and trust is developed by attending their meetings that can only be positive
Marmande: I think we are on the right track now that we have fiscal oversight
I plan to help get money from Baton Rouge to finish the sports complex
Would you favor or oppose abolishing the parish's 11 recreation districts and operating recreation as a parish service like drainage or roads
Babin: Recreation districts were created by the state so it would not be quite as simple as some people think
It would first have to go before a vote of the people because of the structure of the district and its revenue stream
Are we 100% satisfied with our drainage and roads
I am open to hearing all sides of this issue and helping formulate a better plan for our future and that of the children who use our recreation system and facilities
How can Terrebonne modernize and prepare for the population growth of new generations that depend on/use more technology
Babin: We first have to diversify more of our economy before we can fully prepare for our future
We have outstanding medical facilities and doctors
a retail corridor that attracts shoppers from a five-parish area to Terrebonne and a waterway system that give us great access to the world
Marmande: Try to encourage hi-tech companies to come to Houma
Current occupation: Sales at Jensen Tuna Inc
Work history: Basic training for the Louisiana Army National Guard at Fort Polk
Louisiana; taught for the Terrebonne Parish School Board
Francis de Sales Parent Club vice president
four years; Vandebilt High School Board president
four years; appointed to Louisiana Wildlife and Fisheries Commission
six years; appointed to the Louisiana Shrimp Task Force
four years; the Gulf States Marine Fisheries Commission
four years; appointed to the Terrebonne Regional Planning and Zoning Commission
four years as chairman; Terrebonne Parish Council District 7
Previous attempts at public office: Elected to Council District 7 in 2011

also just the fact of placing my name on a ballot and being elected demonstrates leadership
List the two volunteer efforts for which you are most proud: Raising money to help build the local YMCA and my involvement in school
It would be difficult to say what was the most rewarding

Following a tense wait of over nine weeks since the series opener in Herxheim
the best riders on the planet will converge on Marmande in south-west France this coming Saturday night (13 July) for the second of this year’s five Finals to decide the 2024 FIM Long Track World Championship powered by Anlas
Heading the entry is two-time and reigning champion Martin Smolinski from Germany
The thirty-nine-year-old engine tuner from Munich kicked off the defence of his title in fine style on home ground in Herxheim
progressing directly to the Grand Final with three wins and two seconds from his Heats before charging to victory and maximum points
He was pushed hard by Zach Wajtknecht – who was second in 2022 before losing last year’s bronze medal on a tie-break – with the British construction engineer ending the night in second
The twenty-six-year-old lost to Smolinski when they met in the Heats and again in the Grand Final and will be focussed on setting the record straight
At almost half the length of the Herxheim circuit
Marmande promises to deliver extremely close and super-intense racing and you can be certain that Germany’s Lukas Fienhage – world champion in 2020 – will be determined to pull back points on the leading pair after his third-placed finish at the opening round
such is the strength in depth of this year’s field
none of the early front runners will be guaranteed an easy ride under the French floodlights
Amongst the competitors they will line up against again is another former world champion in the discipline namely Romano Hummel from the Netherlands who was champion in 2021
Hummel did not fare as well he would have wanted the first time out
with a disqualification and a retirement halting his progress so he will be aiming to climb the standings at Marmande
Britain’s Chris Harris has to be considered a potential winner after his stand-out season in 2023 when he lost the championship lead and the title at the final round
We know Harris is in great form this year – he was fourth at last month’s FIM Long Track World Championship Challenge behind Riss
Wajtknecht and Denmark’s Kenneth Kruse Hansen
who is also competing at Marmande – and will be looking to repeat his victory at last season’s second Final which provided a solid foundation for his title bid
The action from Marmande gets under way with the tapes scheduled to go up on the opening Heat at 21:00 local time. For more information click here
All five of this season’s Finals along with the FIM Long Track of Nations can be watched LIVE onFIM-MOTO.TV for just €34.90
Our Lady of the Lake Foundation announced that Ann Marie Marmand has been selected as its President
a Foundation board member and chairperson of the Foundation Search Committee
Marmande was the Senior Vice President of Principal Gifts with the LSU Foundation and is a Certified Fund Raising Executive with a Master of Social Work from LSU and Bachelor of Science in Rehabilitation Services from the LSU Health Sciences Center in New Orleans
Maramand is taking over for Christel Slaughter, who served as interim president since November of 2018. At that time, the Foundation fired its former head, John Paul Funes
who has since been found guilty of wire fraud and money laundering.

Long-time physician William Marmande has hung up his stethoscope after more than 50 years of practicing medicine around Houma
who delivered countless babies and cared for just as many people around Terrebonne Parish
Marmande served in several roles spanning his lengthy career
the most recent being a general practice physician at Leonard J
His specialty was treating patients through medicine and the spiritual realm
“I always tried helping people and helping them with their faith and in the Lord
“I was really concerned with people in every which way — mind body and spirit
and the spiritual part of them and the physical
I found that with prayer and medicine they did better.”
a close friend of the doctor and a patient of his
said Marmande's method of looking past one's physical illness worked quite well
“I went to the hospital and he prayed on me ..
the prayers for me helped me heal,” he said
graduated from LSU School of Medicine in New Orleans in 1960 and was shortly thereafter drafted into the Army
where he spent most of his time in the delivery room
Marmande headed right back to Houma where he started a general private practice
“The appreciation that people had and the confidence they put in you was a very satisfying experience,” he said
Marmande became a voice for the medical community in the parish
serving as the chief of staff at Terrebonne General Medical Center in 1979 and the commissioner of the Terrebonne hospital district
He was also certified by the American Academy of Family Physicians
caring for isolated and rural patients often with little money to pay for his services
Marmande accepted buckets of shrimp or crabs in return for the care he offered in those cases
is vastly different than those early days of his career
“Today it's moved toward specialization,” he said
“It was more of a personal thing when we started you see
A lot of that is from moving towards a managed care and containing the cost of medicine.”
While the local community was important to Marmande
he said never forgot the importance of helping the less fortunate across the globe
Over his career he took multiple mission trips to Guatemala and Uganda
“He's just had a very interesting life,” said one of Marmande's sons
“He was the role model and he taught me how to deal with life's adversities
which with all the things he's gone through is an amazing thing in itself.”
“We lost my mother when I was just a child,” Mitch said
“I was 8 and we got in a car accident coming from Grand Isle.”
and it was something that took a toll on the doctor
“That really changed my life,” Marmande said
Mitch said his father's strength didn't waiver and the experience instilled an innate respect for him he'll never lose
“He raised all of us at some point on his own while working full time,” he said
He's just such a solid person and such a role model
He just really gave an example of how to live our lives and how to deal with tragedy and how to forgive people and move on.”
has come to define Marmande to those close to him
“He was a very caring and compassionate physician who maintained a very constant patient following over decades,” said Dr
“He knew his patients very well and he often discussed non-medical matter with patients and was often a source of comfort for those patients.”
“He always balanced his family life with his medical career and he never lost sight of that,” he said
“That's one of the things I believe is really important in the physician world and he did it very well.”
Marmande said he's going to focus on spending more time with his wife
He said when he won't be spending time with them throughout his retirement
He said he'll miss interacting with community members on a daily basis
a practice that has been a part of most of his life
“There were whole families I delivered as babies
It was just a tremendous experience for people to put confidence in me.”

A former Terrebonne council member was one of two seafood company owners cited this week for records violations
The Department of Wildlife and Fisheries cited Al Marmande
for failing to maintain records pertaining to trip tickets or records for a portion of their commercial seafood
Agents were conducting seafood inspections in lower Terrebonne Parish Wednesday when they found that neither owner completed the required information
is the former council member of District 7 which includes parts of Bayou Black
The seat is now occupied by council member Danny Babin.
Marmande said the citation occurred after a fisherman forgot to sign a trip ticket.
According to the Wildlife and Fisheries website
a trip ticket provides information about the catch such as what it is
how it was caught and how much was caught.
“We have to get a fisherman to sign trip tickets every time they unload shrimp,” Marmande said
“We probably unload 20 to 30 boats a week and one fisherman forgot to sign the trip ticket
Everything is documented in the Wildlife and Fisheries system
It was just that one fisherman who forgot to sign it
Failing to maintain records brings a $250 to $500 fine and up to 90 days in jail
The Oyster and Seafood Strike Force unit handled the investigation.

When the subject of a World War II Marine comes up
almost everyone pictures a rifleman on a landing craft going ashore on a Pacific island
The Marines flew from island airstrips in support of land and sea operations
the Marmande family from Houma lost a son and brother who was a Marine pilot on Midway Island north of Hawaii
He was the fourth and youngest of the children born to Emile and Felicia Marmande
After graduating from Terrebonne High School
but soon joined the Navy to attend pilot training
and Navy pilots all went through the same training
said he occasionally flew to Houma from Pensacola
When Ann saw a photograph of a “Pensacola Naval Air Station” marked airplane parked in front of the Texaco Hanger in Houma
his group of new pilots was sent directly to Midway Island
American forces were in retreat everywhere
Philippine islands were to fall into Japanese hands
the Battle of the Coral Sea had cost the U.S
and the German U-boats were sinking ships off the U.S
The only good news for the American public was the Doolittle raid on Tokyo
but a great morale booster for the American public
Rather than tell the story and try to paraphrase the words of one of the surviving pilots
it can be assumed that his experience was exactly the same as Major Ringblom
submitted to the Historical Section by Major Allan H.
then a second lieutenant and pilot in VMSB-241 during the Battle of Midway
is reprinted in entirety as a vivid personal-experience account of the attack by Major Norris’ SB2U-3s on the Haruna
and is an excellent picture of the hazards of aerial warfare for a young and relatively inexperienced pilot
who also served as war diarist of VMSB-241
was a member of the draft of nine new pilots who joined MAG-22
we were greeted by remarks indicating that we were just in time for the ‘party.’ These remarks didn’t bother us; we had just left the States two weeks before
May 28 at a squadron briefing when Major Henderson also let us know that the Japs were overdue
we did a little more thinking on the matter
“The ‘greenest’ group ever assembled for combat included Second Lieutenants George Lumpkin
so we immediately checked out with no more than a couple of ground loops
Before the fateful day we all had made two or three hops with practice bombs – mighty little preparation for the job at hand
and our planes were only allowed 190 gallons (which was suddenly raised to 230 gallons on June 3.) Plotting boards were also so rare
This was mighty awkward to one who found himself on the attack with neither plot nor chart (and had only a few quick glances at a chart of the area including Midway
we were all at standby and had warmed up the planes
Around 0515 the radio message was received to go on attack
Confusion was the order then as I had just cut off the engine
By the time I started again I thought that the order was changed
Finally a runner came by in a jeep and verified the attack order
Captain Prosser returned with a loose fuselage panel so I assumed his lead position in the second box
the Jap’s attack had fired a fuel storage tank
which served as a guiding mark throughout the day and night
Such young Second Lieutenants never realized their predicament
when we were intercepted at least 10 to 15 minutes before contact with fleet units
The amazing nonchalance of Zero pilots who did vertical rolls right through our formation was a good show – very good for us since more attention to business might easily have wiped out 11 of the slowest and most obsolete planes ever to be used in the war
the clouds became our haven and Major Norris led us without loss to the target
He radioed instructions to dive straight ahead on to target
Major Norris gave instructions as to course home: 140 degrees
The AA was heavy – but to one so ignorant of its destructive powers – not too bothersome; just curious
I imagine the shells were incorrectly fused for our altitude at the moment and so passed through with little damage
I pulled out right over the cruiser and was headed for the center of the fleet
One turn to join two buddies at 240 knots convinced me that this was no place to circle; a Zero passed right behind as I whipped into a tight turn
I stayed below 50 feet for about 20 minutes
only luck making harmless the numerous passes made by the Zeros
My gunner later told me he was too busy shooting to even inform me of the situation
and I was too scared and ignorant to turn around and look.”
His words almost make one feel the excitement and speed of air combat
The slow dive and torpedo bombers of the U.S
Navy during this battle against the much faster and more maneuverable Japanese Zero is comparable to the slow B-29s over North Korea being “jumped” by near supersonic Russian Mig 15s
Marmande that day will probably never be known
His family received notice that he was “missing in action” and the Houma Courier had the following article on page 4 of the Thursday
who was awarded the Navy Cross with citation for his heroic action against the enemy in the Midway Islands
“For extraordinary heroism as a pilot in the Marines Scout-bombing squadrons during action against enemy Japanese forces in the Battle of Midway
During the initial attack upon an enemy aircraft carrier
Lieutenant Marmande in the face of withering fire from Japanese fighter guns and anti-aircraft batteries
dived his plane to a perilously low altitude before releasing his bomb
His cool courage and conscientious devotion to duty were in keeping with the highest traditions of the United States Naval Service.”
This is another vivid example to illustrate that “Freedom is not free.”
Nella Melancon spoke at the Military Roundtable Discussion Group’s October meeting
She explained her experience as a young girl in occupied wartime Italy during World War II

Rieger Road will be about double the size of M&L's current location on Airline Highway

The Adora is a new dark-brown variety of the Marmande tomato
from international group HM Clause's Spanish arm
which is dedicated to innovative and sustainable development of the highest quality vegetable seeds
The tomato's original colour and very attractive shape make it an immediate eye-catcher
The Marmande is a traditional ribbed beef tomato which ripens very early and stands out from other Marmande tomatoes because of its exceptionally balanced but intense sweet-and-sour taste
it is also notable for its excellent shelf-life
firm flesh and its positive nutritional properties

For someone like Ace Duhon of Houma, having the chance to go overseas would’ve been enough.
But when his buddy Al Marmande told him he wanted him to drive in his place at a racing event in England, he thought he was joking.
Marmande, owner of Al’s Shrimp Co., was asked to participate in the annual World Wide Rebellion Race by one of his friends in England.
Since he’s busy running his business, Marmande knew he wouldn’t be able to compete.
That’s when he went to Duhon and offered him a chance of a lifetime.
"I’ve been knowing Ace for a long time and couldn’t have thought of any other person to take my place over there," Marmande said.
Duhon, the 42-year-old owner of a frame shop in Houma, was all too ready to oblige.
"I couldn’t believe he asked me," Duhon said. "I owe my racing career to guys like Mr. Marmande and a lot of other great people locally who’ve helped me out."
Duhon said this would be the biggest event he’s ever taken part in.
The small Formula One car he will drive reaches speeds in excess of 150 miles per hour.
For Duhon, who’s used to racing on dirt tracks, running a car on asphalt will be a change.
"I don’t know a whole lot about the car I’ll be racing, other than they’re small," Duhon said. "They say the race will feature 40 cars, but looking at pictures, it looks like even more than that to me."
When he departs Tuesday, it won’t be the first time he has found himself surrounded by racecars.
At the age of 6, Duhon began driving go-karts.
According to Duhon, once he mastered go-karts, he moved on to jeep mud racing at age 11 with his dad.
When he was 15, Duhon entered his first stock car race in Alexandria.
Since then, he’s competed in numerous events and has won more than 100 trophies.
During that time, he also received training in frame and chassey repair.
Duhon has owned and operated his own repair shop for years.
"I’ve been around cars all my life," he said. "I know about cars from the inside out."
By having his own repair shop, Duhon said he’s had the opportunity to meet other locals who share his passion for racing.
"I’ve repaired a lot of cars for people around here," he said. "I always tell people that the friendliest people are from south Louisiana and me going on this trip is proof of that."
Duhon is slated to spend 20 days and nights in the UK.
Instead of monetary prizes, race promoters pay the way for participants.
What that means for Duhon is all his expenses will be taken care of.
"I’ve never gone to another country, and then they will pay for me to be there," Duhon said. "It doesn’t get any better than that."
Marmande hopes the trip not only benefits Duhon, but himself as well.
"It’s good for both of us," Marmande said. "Ace is a good frame-repair guy and he’s going to learn a lot by going over there. Hopefully, he will be able to bring back some useful information when he returns that he can use to further his own business."
Despite being in his early 40s, Duhon plans to continue racing as long as God allows.
He cited those who’ve helped him get to where he’s at and the rush he receives from racing as the main motivating factors for his continued interest in the sport.
"I don’t have long enough to thank everyone," Duhon said. "What I will say is when I get behind the wheel, it is pure adrenaline. I guess you can say its sort of like a legal high."
While in the UK, Duhon plans on experiencing the culture and telling people more about south Louisiana.
"I think I’m going to be the only person from outside the UK going," Duhon said. "I am really looking forward to making some new friends while I’m over there."
and they’re both outsider arts—one the art of African-Americans in an age of systemic racism and casual contempt; the other a bottom-up
unlettered entertainment built by the rejects of other arts and the strivings of new immigrants
All fiction is just a moment in documentary. We learn mountains, landscapes, the styles of faces, cars, the art of smoking or of picking the nose, the art of kissing or of cutting hair the world ’round by means of cinematic fiction. Fiction—an allegorical and naïve subcategory of documentary.
This new Marmande is differentiated by its brown colour, taste qualities that always make an impact, and its firmness, perfect for export purposes.

I bought some great Marmande tomatoes from Waitrose recently. They are a classic ribbed beefsteak variety and they are more usually seen on the Continent than over here. If you see them, snap them up – they are delicious simply pan-fried in olive oil and placed on some toasted sourdough, as I have done here. Waitrose also sell fragrant bush or Greek basil which gives the dish a nice freshness.
4 slices of sourdough bread 3 or 4 Marmande or beefsteak tomatoes, cut into 1cm-thick slices 3-4tbsp olive oil A few sprigs of bush or Greek basil Salt and freshly ground black pepper
Heat some of the olive oil in preferably a non-stick frying pan and fry the tomatoes on a fairly high heat for a couple of minutes on each side.
Meanwhile, toast the bread and lay the slices of tomato on top. Drizzle with the olive oil, season, and scatter over the basil.

Police are examining the involvement of a businessman who is under investigation for alleged money laundering in a $50 million Albany housing project identified as the site of shoddy building practices that are said to flout the law
William Yan is in an extended legal battle with the Commissioner of Police following a raid by detectives of his luxury Metropolis penthouse in August last year
Restraining orders have been placed on about $40 million of assets
The action was taken under the Criminal Proceeds Recovery law
which effectively forces someone to prove how an asset was paid for
No criminal charges have been laid against Mr Yan
has been involved in the Albany development
about which construction concerns were raised this month
Developer George Hunter has confirmed the 115-unit development is the site of videos posted by Auckland Council on its news website showing shoddy building work
Based on what it observed in one of the videos
the Master Builders Association said it appeared to flout the law
and the properties might be vulnerable in an earthquake
The Brick and Blocklayers Federation believed the properties were "potentially very dangerous"
based on the insufficient grout and strong cracking shown in the video
Mr Hunter said the work was done by a subcontractor who had been fired after he discovered substandard work
Police have told the courts that they believe Mr Hunter is one of a few businessmen with whom Mr Yan has a close working relationship
including providing the vast majority of funding
told the Herald that Mr Yan had not provided any investment funds since Marmande took over the development
Mr Hunter said he had agreed to pay Mr Yan 20 per cent of profits from the development on a handshake agreement because Mr Yan had helped with sales of some units
Mr Yan is understood to also deny having any current interest in the project beyond that agreement
But police have told the High Court that investigations suggest Mr Yan provided the funds for the purchase of the property in Gills Rd
in a proceeding separate from that arising from the restraining orders on Mr Yan's assets
that Mr Yan "purchased a $3 million mortgage over the development to protect the $3 million he had contributed to it [prior to Marmande purchasing it]
Mr Yan then exercised his mortgagee rights in November 2013 and sold the development to Marmande
A second judgment notes about the sale to Marmande
that police investigations suggest Mr Yan provided the funds "on the mortgagee sale to Marmande
so that Mr Yan effectively purchased it from himself"
Funds are alleged to have come from Ease Treasure Ltd
a company incorporated in the tax haven of the British Virgin Islands
Ease Treasure Ltd has no visible links to Mr Yan but is mentioned in paperwork seized by police
including a receipt which a judge has noted that "on its face shows that [Mr Yan's partner
Vienna You] paid for the costs of the incorporation"
But Mr Hunter told the Herald he owns 100 per cent of Marmande
Mr Yan was going to arrange funding for the development
and so all my funding is New Zealand-based"
he said: "He was going to help with the funding
but he did assist by getting me a few sales
Other than that he has had nothing whatsoever to do with it."
Mr Hunter confirmed he had shared office space with Mr Yan in the Metropolis building "for a few months ..
The money-laundering investigation is linked to an alleged $129 million fraud in China
which is one of the reasons that Internal Affairs officials recommended that Mr Yan had not passed the good-character test and should not receive citizenship
The advice was overruled by Labour Cabinet minister Shane Jones because of his concerns Mr Yan might be killed if forced to return to his homeland
New Zealand police claim Mr Yan is an "economic fugitive" from China and
had brought a significant amount of money into New Zealand since arriving here in 2001 through alleged "large-scale money laundering transactions"
• Controversial citizen William Yan alleged to be involved
• Developer confirms site is subject of shoddy-building video
• Promise made by developer to fix problems
• Two professional bodies express concern about work on properties

They vary in size and shape from small cherry tomatoes
Thanks to our rediscovery of heirloom tomato varieties and the development of new varieties
tomatoes can be seen hanging from their trusses in various shades of yellow
Tomatoes are also available canned and sun-dried
Canned tomatoes often come from Italy where the strong sun has ripened flavoursome varieties
You will get more flavour from good-quality canned tomatoes than from pallid fresh ones
Sun-dried tomatoes are dehydrated tomatoes with a chewy texture and intensely savoury flavour
rich homemade tomato sauce - great with pasta
This recipe makes a big batch and freezes well so you can whip up quick weekday meals
So often thought of as a summer vegetable fruit
tomatoes actually improve as the summer progresses
so tomatoes bought at the beginning of autumn will have a most intense flavour
The flavour depends largely upon the variety and how the fruit has been grown and ripened: some cheap imported tomatoes are grown under polytunnels
then artificially ripened with ethylene gas
Sun-warmed tomatoes picked straight from the vine are arguably the ideal way to enjoy tomatoes
Tomatoes are available to buy on and off the vine from supermarkets and farmers' markets
Choose tomatoes that feel heavy for their size; they are more likely to be bursting with juices
Tomatoes with no smell will probably have no flavour
so opt for those with a pleasant aroma (although the aroma released by tomatoes on the vine are usually due more to the vine than the tomatoes themselves)
Sun-dried tomatoes are available from some supermarkets and Italian delicatessens
Get more flavour from tomatoes by removing the plastic packaging and leaving them in a fruit bowl in a sunny spot to 'breathe' and ripen
Never put them in the fridge as this will diminish their flavour and damage their texture
Tomatoes do not withstand freezing very well
green tomatoes for making chutney and over-ripe tomatoes to make soups or sauces - these can then be frozen for up to six months
Tomatoes marry well with all sorts of other flavours
which creates the so-called fifth taste 'umami' (loosely translated as 'savoury')
Garlic and onion add to its deeply savoury nature while basil
oregano and mint all work their own aromatic magic
aubergines and potatoes hail from the same family as the tomato and complement each other well
it's better to leave both the skin and the seeds and surrounding jelly intact
as this is where much of the flavour is stored
use the whole lot and then sieve out the skin and pips after cooking
Some recipes call for skinned and de-seeded tomatoes
use a sharp knife to make a small cross in the bottom of each tomato
place in a bowl and cover with boiling water
Use you fingers to peel away the skin (it should pull away easily) then quarter the tomatoes and push out the seeds
An easy way to improve indifferent tomatoes is to oven-dry them
sugar and pepper and dry them in a low oven (100C/200F/Gas ½) for 2-4 hours to intensify the flavour
Turn the oven off and leave the tomatoes overnight
