Best time to eat here is when you are looking for some beer and some bingo we were greeted by a lot of construction down the middle of town as the city is putting in new red bricks on the main street in its downtown shopping area The result is that many of the stores were empty but that wasn’t an issue at Albion Malleable Brewing Company which was nearly standing room only as it was hosting one of its fun theme nights Everyone was playing bingo while sipping some microbrew ale and eating some unique food Bingo Night was just the backdrop as this new Albion hotspot specializes in some bold-tasting beer Albion Malleable is inspired by the Belgian beer tradition and offers a wide variety of saisons they allow for a taste test of three of the beers on the menu they each brought a different note to the table we went with Noisy King – an ode to Albion’s French sister city of Noisy-le-Roi that went very well with our food – but beware it has a 7.4-percent alcohol content as it brings a little kick you realize right away this is a next-level eatery as the plating is impressive the idea is that Albion Malleable has decided more is not necessarily better the specialty is the Porchetta Sandwich – a succulent pork belly wrapped around a pork loin sliced thin with arugula salad and some shaved Parmesan But a sneaky good sandwich is the Beef and Cheddar featuring shaved beef brisket with caramelized onions and smoky cheese sauce There is a house burger also available as they even take some time to make that right with 25 percent brisket in the burger patty LaVall Jordan is one of the top basketball players ever to come out of Albion High School and is the current head coach at his alma mater Butler University he has also coached at the University of Michigan and was recently the head coach at University of Wisconsin-Milwaukee which is featured in one of the tastiest items at Albion Malleable The Poutine is the top item on the restaurants list of shareable fries The hand-cut fries are covered with a healthy serving of beef gravy with nice bits of cheddar cheese curds mixed in We at Bill’s Bites would drive all the way to Albion to just have some more Poutine There are Fried Cheese Curds also available but don’t forget to order the Poutine but if you asked me I’d describe this by saying this is a restaurant that definitely has something good brewing The Albion Malleable Brewing Company came about when three local guys wanted to help boost their community by providing some unique food and drink With their passion for their city as their guide they named it after the Albion Malleable Iron Company a business that drove the Albion economy for much of the 20th century Their love for good food also drives what is on the menu which includes a different take on a side that can often get forgotten in their Siracha Coleslaw – which is a brilliant bite of sweet and tangy and slightly spicy version of coleslaw Add the artfully crafted items on the main menu and the varied tastes of ale from this  new microbrewery and it had the Bill’s Bites crew on the edge of yelling ‘Bingo’ as we had just completed another successful stop on the Bill’s
