be affordable for everyone “In vino veritas” is one of the most famous sayings in Latin but the Talmud said it first over 1500 years ago: Jews and Italians have many similarities when it comes to family values and with all the food and wine... most Italian families drink wine with their festive meals and the same is absolutely true for Jews Many countries have been producing kosher wine and Italy is certainly participating in this exciting world bringing the finest Italian wines to the kosher market Tuscany is by far one of the most noteworthy regions for winemaking in Italy and in the world and a recent visit to the Cignozza Winery helped me understand why the wines were nothing short of outstanding and the scenery literally took my breath away The Del Buono family has been making wine for close to 500 years the family has lived for many generations in this natural treasure an extremely privileged oasis for grape cultivation Located on the hills that divide the Val d’Orcia from the Val di Chiana just South of Siena the actual family winery called La Cignozza was modernized and rebuilt brick by brick in 1961 and enjoys the grapes of about 40,000 vines in the Colle Senesi (hills of Siena just a few km from Montalcino) in the heart of Chianti in the infamous Tuscan wine country The winery has a capacity of about 70,000 liters with many opportunities for expansion and new vineyards are in the process of being nurtured Tuscany suffered a drought which forced the vines to produce more clusters than usual although bearing smaller grapes The result was a much more laborious harvest with the grapes producing a decisively more intense and aromatic flavor Kosher wine tastings are available all year round with future plans for a small farm-to-table kosher restaurant as well as 5-star accommodations The 2021 kosher production consists of six different wines three of which are ready to drink now and are available to be tasted at the Ba Ghetto restaurants in Rome Florence and Milan and will be available shortly in the United States and Canada The other three red wines that will be available in the coming years as they have put the wines in barriques to age I was fortunate to taste 3 new kosher wines that will shortly be available at your favorite kosher wine shop Each wine is an experience of its own – a true symphony of flavors which linger until the next sip A delicious white wine made of Vermentino Toscano and small percentages of Trebbiano and Grechetto grapes which give the wine a perfect balance in structure and acidity the mouth is wide and lively and supported by a pleasant mineral trail with a clean and intense finish Superior rosé wine made of Ciliegiolo and Sangiovese grapes Both grape varieties are hand-selected prior to full maturation thereby expressing the bounty of Tuscany's most traditional flavors while maintaining a brilliant rosé colour and perfect acidic equilibrium the sip is smooth and savory with good freshness on the palate and a pleasant and persistent finish A luscious red wine made of Sangiovese and small percentages of Canaiolo and Ciliegiolo grapes offering a rich and complex bouquet of ripe red fruit accompanied by light spicy notes of vanilla This wine is elegantly powerful while remaining generously soft on the palate with perfectly balanced tannins It has a rich and engaging sip with fine persistence the La Cignozza winery reflects the family character and personality in its wines Today it is Roberto Del Buono who leads the family estate and winery Along with a passion that has lead him to expertise in the winemaking and aging sector he is dedicated to exploring new markets without ever sacrificing the natural and spectacular personalities of his wines together with his father Alvaro and partner David Walden that takes care of the vineyards and are the faces of the winery This collaboration is made of true dedication to give fruit to and pass on the true passion of those who know how much work is in every glass of wine that is raised to toast and share a moment While many “drink to forget,” kosher wine is always associated with blessing and remembrance especially of the six days of creation and exodus from Egyptian slavery With the contribution of Robert Del Buono and David Walden All News FIDE News Chess News Top Top Federations Main Page / Search Tournaments The Summer Hit is waiting for you! Info: THE SUMMER HIT especially when experienced among the forests Every time the car begins to venture through avenues masked by orange-brown leaves of the trees that one of the most beautiful and unforgettable experiences of the year happened between October and November in the heart of the Sacred Forests of Casentino a small village in the municipality of Poppi along the road that leads to the Hermitage and the Monastery of Camaldoli a gastronomic establishment within the "Borgo I Tre Baroni" Resort managed by Filippo Baroni and his wife Marta Bidi respectively in the kitchen and dining area graduated from the hotel school in Chianciano Terme he carries forward the family restaurant project with Borgo I Tre Baroni and the nearby Locanda Dei Baroni Filippo decides to add Mater to the resort a fine-dining restaurant that reflects monastic and regional cuisine Filippo increasingly defines the restaurant's profile focusing on the purity of ingredients and the concept of sustainability It's no coincidence that the couple's latest project is the creation of a garden next to the restaurant on the lands surrounding the Resort this enclosed garden currently houses more than 30 plant species It's a closed circuit that self-sustains with vegetables Everything cultivated reaches the restaurant just as everything the restaurant needs is grown (within the limits of possibility) one can indeed speak of zero kilometers and zero waste which becomes natural fertilizer for the garden and preserves to be used even in the context of mixology Mater practices "Agricultural Mixology": signature cocktails developed from ingredients grown in the restaurant's garden Handling both the garden and mixology is Lorenzo Ostrogovich offers locally-inspired drinks in the spirit of "no waste," preparing liqueurs Imagine that fallen tomatoes from the garden a drink similar to a Bloody Mary but with London Dry Gin instead of vodka This year marked the first year of Hortus Conclusus having collected seeds from plants born during this period the new plants that will grow will be native to Mater's garden A dinner at Mater can be complemented by a romantic stay inside the resort to be enjoyed even in the summer around the beautiful pool and bright with captivating views of the surrounding forest For restaurant guests choosing to stay overnight Filippo and his staff prepare a rich sweet and savory breakfast to be enjoyed at the restaurant's table (25 euros per person) along with eggs sunny-side-up and selections of cheeses and cured meats As the "place of the silence of the heart," Mater takes the guest back to the origins of ancestral cuisine and the culture of the territory in which it is located representing "sacrifice" and the unconditional love for children Mater is not coincidentally referred to as a mother but also as the one who generates the root of the tree revolving around his land with its ancient traditions and the excellent products of the region The dining area is the realm of Marta Bidi Marta shares her home with genuine sensitivity and advises customers on the best wine pairings Mater's wine cellar consists of a selection of wines predominantly from Tuscany There are two tasting menus: In Superficie, (In Surface) consisting of five courses at 75 euros (45 euros for wine pairing by the glass) and In Profondità, (In Depth) which includes eight courses at 95 euros (55 euros for wine pairing by the glass) It is also possible to choose dishes à la carte defined by the light gray tablecloth and the brighter hues of the bread plates is immediately filled with a welcome of crispy and bold flavors Noteworthy for its freshness is the fried basket with char from Mulin di Bucchio while the corn and rice taco filled with roasted guinea fowl salad and pickles is appetizing and heartwarming Autumn is celebrated with the yellow pumpkin cappuccino while the mouth is cleansed and the palate prepared for the "In Profondità" tasting menu with the sphere of citrus and herbs covered in dried tomato powder Marta prepares a signature cocktail at the table that enhances and pays homage to the garden's products It's a Rum Cooler based on white rum infused with mint and citrus for 4 months with the addition of homemade laurel liqueur and ginger beer but it's not over yet: to complete the welcoming there's a taste of Cappelletti filled with raviggiolo cheese in meat broth Between bites of ancient grain sourdough bread spread with rosemary and black lemon butter and moss—a creation where the precise cooking of the fish combines with a medley of garden herbs excellent for the variety and harmony of flavors engaging the guest in an unpredictable and exciting journey The fun continues with the next course: Rabbit The thigh and shoulder are slow-cooked and transformed into tender shreds to be eaten with a spoon along with the garden's cabbage cream The liver is grilled and eaten with the hands while the most substantial part of the rabbit becomes a low-temperature-cooked roll filled with marinated eel—a crucial element in the diet of the monks of Camaldoli as it is a frequent guest in the nearby Traversari pond is topped with freshly seared river shrimp The shrimp shells are not discarded but transformed into a bisque that amplifies the sweet notes of the sea The second course of the tasting is incredible both in concept and taste: Risina known as the "monks' rice," is the broken Carnaroli rice grain that the "ugly" version of the rice grain that Filippo acquires from a company in Casalese it is served with a fermented pine nut cream and pine oil to add roundness An enjoyable off-menu item is the Smoked Spaghetti cooked in Abbucciato and gentian extraction a reinterpretation of Cacio e Pepe with an Arezzo twist balsamic—the tasting is a vibrant and elegant slap Probably the most convincing dish on the menu reflecting the recently started garden project served with bell pepper vinegar sorbet and Saba Like a bridge between carbohydrates and proteins the salad is a compilation of everything the Mater team gathers or preserves in oil Mater's brigade highlights the fruits of their land and the salad is seasoned with the salad's own dressing a bell pepper vinegar sorbet and buttery puff pastry are served for sopping up The meat is marinated in soy sauce and concealed by a film of 16-year-old Lagavulin Whisky a venison cutlet is seasoned with its garum After a refreshing Chartreuse and herb Granita homemade since 2019 using the "soleras" method is reduced and paired with a blackberry sorbet strictly a glass of Cocchi vermouth and one of Oro Mugello vermouth The dinner concludes with a delicate and invigorating herbal infusion paving the way for the rich and varied gourmet breakfast the following morning Website Do you want to discover the latest news and recipes of the most renowned chefs and restaurants in the world La nostra società utilizza looking to take the event's first maglia rosa The second day of racing will be a 102.1km race from Bagno a Ripoli to Marrad and the first shot at the maglia rosa with the potential to shake up the overall classification The route includes a category two scent over the Passo della Colla close to the finish in Marradi, perfect for riders such as Annemiek van Vleuten (Movistar), Gaia Realini (Lidl-Trek), Marta Cavalli (FDJ-SUEZ) who are powerful climbers and savvy late-race tactical riders Stage 3 is a 118.2km race from Formigine to Modena which includes a category three climb at Villa Bianca-Marano The climbs are not difficult enough for the climbing specialists to get away from those sprinters who a strong enough to stay with the selections over the top The race could ultimately suit a breakaway or it could come down to a sprint, in which case Lorena Wiebes (SD Worx) will be the overwhelming favourite Stage 4 will present a 134km race from Fidenza to Borgo Val di Taro It is the longest stage of the event and runs throughout the Province of Parma.  A stage clearly divided in two: the first part is almost flat where the riders who are in pursuit of the maglia rosa will want to gain time on their rivals with a sharp descent into Borgo Val di Taro Stage 5 is a 103km race from Salassa to Ceres but begins with a category one climb along the Passo (Pian) del Lupo The Passo (Pian) del Lupo climb will start from the Castellamonte-side and is roughly 16km. The ascent will undoubtedly show who is truly in contention for the maglia rosa and could possibly allow those GC contenders put big gaps into one another as there are also double category three ascents at Vietti and Sant'Ignazio before the run-in to Ceres Stage 6 offers the field a hilly 104.4km loop to and from Canelli and will be one for the breakaway riders or for a selection to attack on the final ascent It offers triple category three ascents in at Castino Canelli hosts the first real uphill finish of Giro Donne in 2023 Even though there are challenging stages heading into this sixth stage the uphill finish will be one where the GC contenders will not want to lose time the peloton will race 109.1km from Albenga to Alassio The route will travel along the Ligurian coastline and then race inland to tackle the category three Passo del Ginestro and then the double category two ascents in Vioneto and Salita before a summit finish on the category three climb to Alassio It is a challenging stage and riders can expect steep ascents and undulating terrain heading into the final climb to Alassio.  It is also the last stage before a rest day when the race riders and teams will all travel to Sardinia for the final two punchy stages The penultimate day of racing begins on Sardinia with the final two hilly stages Stage 8 will be 125.7km from Nuoro to Sassari with just one category three ascent at Romana-Ittiri It is one for powerful climbers and sprinters who can cover steep climbs and make small selections It is the first stage following the rest day and some riders might struggle with the intensity so how each rider is feeling could be somewhat unpredictable.  As Lizzie Deignan (Lidl-Trek) said ahead of the race some riders don't normally need to manage training on a rest day but those who add some intensity into their training might see that pay off on stage 8 "It's always hard to have a rest day because you need to push yourself If we rest and don't do any intervals or intensity on that day our body goes into shutdown recovery mode," Deignan said.  "It's not something that many of us have had to manage before so I think it will be interesting to see which riders cope with it well Someone could be sitting really well on position on the GC and get that rest day wrong and pay for it over the last two days." The nine-day race will conclude on stage 9 with a 126.8km from Sassari to Olbia which begins with a category one climb at Osilo.  It will be a challenging finale to the race because it also includes a category three climb before a run-in to Olbia where the overall champion will be crowned The stage will suit a rider like Marianne Vos (Jumbo-Visma) and who has secured 32 stage wins at the Giro d'Italia Donne during her career Kirsten has a background in Kinesiology and Health Science She has been involved in cycling from the community and grassroots level to professional cycling's biggest races She began her sports journalism career with Cyclingnews as a North American Correspondent in 2006 Kirsten became Women's Editor – overseeing the content strategy race coverage and growth of women's professional cycling – before becoming Deputy Editor in 2023 it's time to cast a thought to the warmer months offering the possibility to live in the world of Juve 24-hours-a-day but also fun and friendship: essential ingredients make for a truly unforgettable summer Registration is already open for the camps which start on June 19 and continue all the way through to August Pinzolo and Ardingly (UK) - where there is a unique opportunity to learn football together with studying English There is also the possibility of experiencing a girls’ Summer Camp at Chianciano Terme the Masterclass Camp in Turin - a summer retreat for young players who will stay at the J | Hotel such as training at Vinovo in the presence of a Juventus legend an unforgettable welcome to Allianz Stadium and much more Find out all the details, dates, info and prices at the Juventus Summer Camp website.
