Giancarlo Gnali’s pastry has customers crossing state lines to squeeze into the back room of his home and order some pastries
There are no fancy tables or exquisite furniture
because it is rich in the most critical places of all: on the shelves
just as it has been from the start for Gnali
who began his long legacy over fifty years ago with a copper pot in the mountains of Lumezzane
Gnali said he felt that he was destined to bake.
The first time that he experimented with food
he hauled his grandmother’s copper cooking pot up the fields to go hunting for hazelnuts
mixing it with butter and sugar under a small fire outside
which he poured into a small tray and took home.
Gnali grew up in a town where most people got their hands dirty with oil and grime
Gnali was on the road to become his dad’s successor but he knew he was going to be a pasticcere — a pastry chef
The chance for him to pursue baking arose when his uncle
offered him an apprenticeship overseas in Roanoke
peppered with vehement opposition from his mother
15-year-old Gnali was on a plane landing in John F
His only token of his new home was a cherished nickel
with a picture of the Monticello on the back
His first encounter with the language was back in Italy
He was riding his bike when a car pulled up beside him and the man inside asked him a question in English.
“I think that's when it started for me
‘I have to learn this language’”
it became clear to Gnali that English wasn’t the only thing he needed to learn
His time was divided between rigorous days as an apprentice and started high school right after desegregation when animosity was boiling over
he had to catch up in America academically

He was caught in the crossfire of racism when a Black student spit in his eyes at school
but it didn’t create any anger inside Gnali
it convinced him even more that there was a bottomless depth to the social dissonance in his new home
He was never interested to know people’s color
he was more interested in learning other people’s culture.
After months of trudging through language lessons
he finally began to gain some traction speaking english and feel more comfortable with American culture
Gnali has heaps of experience under his belt — or apron
He has worked in many different locations across the midwest and east coast and worn many different hats
his mind kept returning back to one desire: autonomy
He has achieved it and now runs his own pastry out of his home in the alley with his wife
but it took years to gather the knowledge he needed to make it happen.
Much of what Gnali learned was from his uncle
He had to excel in chocolate decoration and geometry
and mastering the fickle art of baking the perfect croissant
but it took me more than 20 years to believe that,” Gnali said
If the yeast for a croissant is having a bad day
all of Gnali’s efforts go down the drain
Even once it’s finally baked in the oven and the pastry chef isn’t under the heel of the yeast anymore
it takes precision and caution to take out the pastries and put on egg wash so it doesn’t look like peeling wallpaper

Gnali and his croissants have a complicated relationship
It’s one of the pastries that means the most to him
along with some good jam and a morning coffee.
but his father influenced Gnali’s innate curiosity in the world
“You have to go much deeper than what we visually see
if something breaks,I want to know why - not just replace a part
fixer upper.” Gnali said. “You have to learn why you made the mistake.”
It’s hard to believe mistakes are ever made on the shelves of Giancarlos
Each pastry and chocolate out for display looks immaculate
so Gnali likes to rotate what he bakes to keep both he and his customers on their toes
but he knows he won’t be able to do it forever
he dreamed that they put the business up for sale
until he realized in his sleep that he would then be selling his house
Gnali has taken on several apprentices over the years to pass on his skills and knowledge of the art of Italian pastry-making
apprentices have to come from a place of desire and want to learn
When they’re swamped with customers who are filing into their garage gone-gourmet
Jane works with him to handle the crowds.
Gnali is fond of all their memories together
and laughs when he thinks back on when they met
His first memory of America was that coin with the Monticello on the back of it
and the woman he married is American as it gets - she’s a descendent of Thomas Jefferson
and not many couples can work together.”
Gnali’s fifty-plus years of pastry art has made it so that baking is muscle memory for him
Even though Giancarlos is only open for retail two days out of the week
the pastry chef spends the rest designing and making wedding cakes
He grew up with the thought of making his own pastries and the unwavering desire to be his own boss
Gnali still has a routine but it’s purely his own
One of the best parts of running his own pastry shop
is that he can make what he wants to and share it with the community.

USMNT star Pulisic - who joined Milan in a £20 million transfer from Chelsea earlier this month - started the match and made an almost instant impact.
Playing on the left in a 4-3-3 formation, Pulisic was on fire in the early stages of the game as he claimed two assists inside the first 17 minutes.
Pulisic assisted the game's opening goal in the fifth minute by controlling a long-range pass, dribbling past right-back Kevin Tortelli and pulling the ball back for Tommaso Pobega.
Pobega also scored Milan's second goal. This time Pulisic arrived at the far post to meet a cross from Junior Messias but, instead of shooting, he calmly cushioned a volleyed pass into Pobega's path.
Messias and Lorenzo Colombo joined Pobega on the scoresheet before half-time.
Colombo then netted again in the second half, before strikes from Kevin Zeroli and Luka Romero completed the rout.

Italian-born Ghanaian midfielder Joshua Tenkorang has expressed his excitement and pride after securing a loan move to Italian Serie C side FC Lumezzane from US Cremonese
The 24-year-old midfielder brings valuable experience from his previous stints at Calcio Lecco and Calcio Foggia
where he made 15 appearances across Serie B and Serie C
His versatility and experience in Italy’s lower leagues make him a strong addition to Lumezzane as they aim for promotion this season
