He’s the driving force behind Pasta Supply Co. a pasta shop and Italian restaurant in the Inner Richmond The shop pumps out 30-ish styles of pasta and 15 sauces all while running a nightly dinner service On the eve of opening a second location in the Mission is currently open for retail and will begin dinner service on June 18 — we asked Strong to share the pasta styles that he can’t get enough of Mafaldine is Pasta Supply Co.’s bestseller thin noodles give “slurpability and tongue-tickle,” Strong says It excels at holding sauce and is an alternative to bucatini and spaghetti selling twice as much as the shop’s next best-selling pasta “There’s something about this pasta that people look at it and they just get it,” Strong says Mafaldine is the versatile pasta base for the restaurant’s butter and cheese sauce Customers can level up with black truffle butter or a scoop of beef cheek sugo done in the style of a Roman coda alla vaccinara stew but with beef cheeks rather than oxtail The sauce gets an added oomph thanks to juniper and rosemary with a little bit of vinegar and cocoa a twist Strong says he learned in San Cesareo Cuscini is Pasta Supply Co.’s saffron-stained The filling is made with ricotta and whipped with lemon zest and pecorino The shop’s machine can form 500 cuscini an hour despite the fact the pasta shape is filled on both sides The shape also inspired the name: “They just looked really cute and the frilly edge reminded me of throw pillows,” says Strong A plate of cuscini at the restaurant also features that signature Pasta Supply Co. humor. The dish is denoted as White Lotus Season 2-Style on the menu, a reference to the popular HBO show, which took viewers to Sicily in its second season. It’s made with semi-dried tomatoes and oregano, then hit with lemon oil, sea salt, a handful of pistachios, and You Betcha! hot honey “It has one foot loosely rooted in Italy,” Strong says “and the other one is just dramatic and American It’s a little spicy with lots of pillow time and at points it’s like The smokey pork sugo is a lengthy endeavor The pasta sauce is made with roasted whole pork shoulders as its base before it’s roasted low and slow for five to six hours The result is juicy meat that can be pulled into tender chunks vegetables are cooked down with tomato paste The veggies and bacon are then milled together — “we actually call it a bacon smoothie in the kitchen,” Strong says — before being combined with the pork shoulder to cook for another hour the smoky pork sugo is served over rigatoni finished with turnip greens and friarielli the allure of Pasta Supply Co.’s salt cod plumpers is evident stands out amongst the blond pasta offerings and names “We call them plumpers because they’re plump and we just thought it sounded fun,” Strong says In contrast to the ink black dough exterior It’s done old-school: salt cod simmered in milk with bay leaves and garlic then whipped with russet potatoes the plumpers are cooked with a vegan puttanesca sauce and made with capers and Gaeta olives before it’s finished with tomatoes and white wine thick strands of the busiate noodle may get comparisons to bucatino given that both shapes include a hollow interior Whereas bucatini has a hole going through the middle from end to end “like a juicy sauce gutter carved out of the middle of it.” Strong’s riff is a recipe from Sicily and it’s typically made using a reed to roll the pasta on the table leaving the signature indentation in the center but impractical for a restaurant of their size so it’s made in-house with a special die for their pasta machine The busiate takes longer to cook than other fresh pasta It’s so hearty that a typical busiate dish will see just 12 noodles on the plate — and that’s plenty the team serves the busiate with a verdant green ramp pesto it’s like somebody dragged your face through a freshly cut lawn,” Strong says “A little bit of pungent ramp pesto cuts through the richness and goes a long way to stand up to that noodle.” Pasta Supply Co. Eater Austin’s newly crowned restaurant of the year offers “an intense full-sensory explosion of elevated dining,” per Cape adding that the experience is made better due to “impeccable” service that is some of the best in the city Cape does advise newcomers to watch a video on shabu shabu before dining. While Statesman critic Matthew Odam had recommended the Baller omakase in his review earlier Cape preferred the mid-level Tatsu-ya option for value Cape wrote that “you need” the queso-esque Keep Austin Dipping Sauce one of two standard issues along with a rich and creamy sesame gomadare The San Cesareo truffle sukiyaki is topped with a 45-minute egg and warishita soy and it’s so damn luxurious you’ll feel like you won a prize noting that the “ultimate care and consideration of ingredients” makes the restaurant special Cape preferred the raclette and mushroom pot pocket to the
