For chef Anthony Strong, choosing a favorite pasta shape is nearly impossible. He’s the driving force behind Pasta Supply Co.

is currently open for retail and will begin dinner service on June 18 — we asked Strong to share the pasta styles that he can’t get enough of

thin noodles give “slurpability and tongue-tickle,” Strong says
It excels at holding sauce and is an alternative to bucatini and spaghetti
selling twice as much as the shop’s next best-selling pasta
“There’s something about this pasta that people look at it and they just get it,” Strong says
Mafaldine is the versatile pasta base for the restaurant’s butter and cheese sauce
Customers can level up with black truffle butter or a scoop of beef cheek sugo
done in the style of a Roman coda alla vaccinara stew but with beef cheeks rather than oxtail
The sauce gets an added oomph thanks to juniper
and rosemary with a little bit of vinegar and cocoa
a twist Strong says he learned in San Cesareo
Cuscini is Pasta Supply Co.’s saffron-stained
The filling is made with ricotta and whipped with lemon zest and pecorino
The shop’s machine can form 500 cuscini an hour
despite the fact the pasta shape is filled on both sides
The shape also inspired the name: “They just looked really cute
and the frilly edge reminded me of throw pillows,” says Strong
A plate of cuscini at the restaurant also features that signature Pasta Supply Co. humor. The dish is denoted as White Lotus Season 2-Style on the menu, a reference to the popular HBO show, which took viewers to Sicily in its second season. It’s made with semi-dried tomatoes and oregano, then hit with lemon oil, sea salt, a handful of pistachios, and You Betcha! hot honey
“It has one foot loosely rooted in Italy,” Strong says
“and the other one is just dramatic and American
It’s a little spicy with lots of pillow time and at points it’s like
The smokey pork sugo is a lengthy endeavor
The pasta sauce is made with roasted whole pork shoulders as its base
before it’s roasted low and slow for five to six hours
The result is juicy meat that can be pulled into tender chunks
vegetables are cooked down with tomato paste
The veggies and bacon are then milled together — “we actually call it a bacon smoothie in the kitchen,” Strong says — before being combined with the pork shoulder to cook for another hour
the smoky pork sugo is served over rigatoni
finished with turnip greens and friarielli
the allure of Pasta Supply Co.’s salt cod plumpers is evident

“We call them plumpers because they’re plump and we just thought it sounded fun,” Strong says
In contrast to the ink black dough exterior
It’s done old-school: salt cod simmered in milk with bay leaves and garlic then whipped with russet potatoes
the plumpers are cooked with a vegan puttanesca sauce and made with capers and Gaeta olives
before it’s finished with tomatoes and white wine
thick strands of the busiate noodle may get comparisons to bucatino given that both shapes include a hollow interior
Whereas bucatini has a hole going through the middle from end to end
“like a juicy sauce gutter carved out of the middle of it.” Strong’s riff is a recipe from Sicily
and it’s typically made using a reed to roll the pasta on the table
leaving the signature indentation in the center
but impractical for a restaurant of their size
so it’s made in-house with a special die for their pasta machine
The busiate takes longer to cook than other fresh pasta
It’s so hearty that a typical busiate dish will see just 12 noodles on the plate — and that’s plenty
the team serves the busiate with a verdant green ramp pesto
it’s like somebody dragged your face through a freshly cut lawn,” Strong says
“A little bit of pungent ramp pesto cuts through the richness and goes a long way to stand up to that noodle.”

The pastoral was prepared in consultation and collaboration of several committees: the cultural diversity committee; the Ad Hoc Committee Against Racism
Louisiana; and all the other standing USCCB committees
“Despite many promising strides made in our country
the ugly cancer of racism still infects our nation,” the proposed pastoral says
A vote to approve it was scheduled for Nov
the last day of the public sessions of the fall assembly
announced that the Vatican had requested the bishops not to vote on the action items
The request came from the Vatican Congregation for Bishops
The reasons given for the delay were Pope Francis’ planned meeting in February with the presidents of bishops’ conferences worldwide to deal with clergy sex abuse
and to be sure that the proposals being considered by the bishops conform to canon law

Cupich of Chicago stood from the meeting floor to call for the bishops to hold a special assembly in March to weigh and vote on the measures after being informed by the outcome of the February meeting in Rome
“It is clear that the Holy See is taking seriously the abuse crisis in the church,” Cardinal Cupich said
adding that the February meeting was a “watershed moment” in church history
“We need to be clear where we stand and tell our people where we stand,” he said

Cardinal DiNardo took note of the historic nature of the meeting
“Whether we will be remembered as guardians of the abused or of the abuser will be determined by our action beginning this week and the months ahead,” he said
“Let us draw near to Christ today sacrificing him our own ambitions and promptly submit ourselves totally to what he demands of us both in love and justice.”

The day ended with celebration of Mass in the makeshift chapel
Paul and Minneapolis urged his brother bishops to give their all to addressing the abuse crisis and show a commitment to change what needs to be changed to put an end to any abuse
He said the bishops need to avoid factionalism in the work need to address abuse and promote unity with the whole church
but we need to do that in a way that serves the unity of the church
not only with the See of Rome but also within the church in the United States,” Archbishop Hebda said
Other business the bishops had on their agenda for the meeting sessions ahead included a number of action items
other than the abuse protocols they will now delay voting on
— The endorsement of the sainthood cause of Sister Thea Bowman
the great-granddaughter of slaves and the only African-American member of the Franciscan Sisters of Perpetual Adoration
who transcended racism to leave a lasting mark on Catholic life in the United States in the late 20th century
— Approving a budget for 2019 that shows a small surplus
but shows far less for the USCCB’s Migration and Refugee Services line item due to continuing federal cutbacks in the number of refugees being admitted into the United States
— Hearing reports from bishops on October’s Synod of Bishops on “Young People
and Vocational Discernment,” July’s V Encuentro for Hispanic Catholics in the United States; and recognition of the 40th anniversary of the USCCB’s pastoral statement on persons with disabilities
as well as from the National Advisory Council
a largely lay group that issues comments on agenda items facing the bishops
protesters continud to gather to call for change and urge action by the bishops to address the widening the sex abuse crisis

The fun shabu shabu restaurant offers excellent service and quality ingredients
Chronicle critic Jessi Cape reviewed DipDipDip Tatsu-ya this week, and had nothing but praise for the shabu shabu restaurant. Eater Austin’s newly crowned restaurant of the year offers “an intense
full-sensory explosion of elevated dining,” per Cape
adding that the experience is made better due to “impeccable” service that is some of the best in the city
Cape does advise newcomers to watch a video on shabu shabu before dining. While Statesman critic Matthew Odam had recommended the Baller omakase in his review earlier
Cape preferred the mid-level Tatsu-ya option for value
Cape wrote that “you need” the queso-esque Keep Austin Dipping Sauce
one of two standard issues along with a rich and creamy sesame gomadare
The San Cesareo truffle sukiyaki is topped with a 45-minute egg and warishita soy
and it’s so damn luxurious you’ll feel like you won a prize
noting that the “ultimate care and consideration of ingredients” makes the restaurant special
Cape preferred the raclette and mushroom pot pocket to the cheddar grits and sausage one
and called the blue crab and shrimp wontons “beyond decadent.” She also said the gyu maki (beef-wrapped foie gras) is “beyond decadent.”
Cape enjoyed the Kaizen Whiskey and Basho cocktails
noting that the only non-alcoholic options are Topo Chico
She loved the “wonderfully refreshing” dessert (a poached pear granita on her trip)
and finished by saying DipDipDip is “without a doubt
he developed a taste for the bolognese specialities so lovingly cooked by his mother and grandmother and carried his memory of them with him his whole life
But Fellini didn’t love food on a merely sensory level; he adored the conviviality of mealtimes
the atmosphere of sociability engendered by a table laden with meats and cheeses
Even in huge banquet scenes like the one in Roma
he ensured the food had been carefully prepared by caterers
“We had twenty cooks working for that scene,” he told Variety
“We keep reshooting as long as the food lasts—and the money.”
He was a famously picky man, much like his British contemporary Alfred Hitchcock
“I like now very simple foods but perfectly prepared
That is the hardest to find.” he once observed
“If you are going to have only rice or pasta with butter and cheese
the pasta or rice must be first-quality and perfectly cooked
and the Parmesan must be grated just as it is used.”
Though he couldn’t resist his mother’s cappelletti in broth – small pasta parcels filled with pork and ricotta and served in stock – he always preferred rice and soups to pasta dishes
there were exceptions: lasagne verde al forno
was flavoured with saffron and “exactly two drops of grappa added just before serving”

he chose the seat arrangements and dressed the table as he pleased

he was just 19 and still working as a caricaturist – selling drawings to diners for a pittance
so when he entered Cesarina and ate everything on the menu
he was forced to confess that he wouldn’t be able to pay the bill
“Nothing happened until all the customers left,” he told Variety
not looking at me but flicking the tablecloth with a towel
‘One who has no money should not go to a restaurant’.”
the owner who had ejected Fellini from the restaurant found the now emaciated 19-year-old wandering the neighbourhood
She invited him inside and continued to feed him a full meal every day for an entire season
Fellini organised the press conference for his film La Dolce Vita to take place inside the Cesarina
transforming it into one of Rome’s most popular restaurants
