On a Sunday morning in the French coastal town of Douarnenez
a queue snakes out the door of a boulangerie
This is a common enough sight across the country
where picking up freshly made bread is a daily ritual
but here the people aren't just buying a baguette
Most are also waiting to purchase one of the kouign-amann
dubbed 'the fattiest pastry in Europe'
their laminated pastry glinting as they're picked up and slipped into a greaseproof paper bag
caramelised crust yields to expose the flaky pastry of the interior
kouign-amann literally means 'butter cake'
because of the six ingredients in the traditional recipe

Kouign-amann are an institution in Douarnenez
a traditional fishing town situated in the west of France's Brittany region
having been invented there some 160 years ago
The pastry was born out of necessity when the baker
needed to replenish his stock in a hurry after selling out of cakes
he combined the ingredients with the folding technique used for puff pastry
The cake quickly became popular across Brittany and was soon known throughout France
it was often attributed to larger cities in Brittany like Vannes
as it eventually began to be produced on an industrial scale and by bakers who approximated or altered the recipe
bakers from Douarnenez making it in the traditional way felt that it had begun to stray from the quality of the original
For this reason, in November 1999, 17 pastry chefs and bakers came together with a shared passion for their town's speciality to form the Association of the Kouign-Amann of Douarnenez
with the aim of promoting the cake and preserving its quality and the techniques used to make it
Pascal Jaïn, boulanger, pâtissier and chocolatier, is a member of the association and produces kouign-amann at his bakery, Boulangerie Jaïn
the cake is defined by the skill of those baking it
"What makes the kouign-amann so special is its making
butter and sugar – but it all relies on the technique," said Jaïn
"All the members of the association use the same ingredients
we have three people making kouign-amann and we can tell who made each one as they come out of the oven."
the cakes feature no additional flavouring and are made to serve multiple slices
individual cakes called kouignettes have become increasingly popular
Jaïn embraces these changes but is keen to ensure that the original version doesn't disappear
"You can find kouign-amann in all corners of Brittany
"We are not saying that ours is better
but that it's made with the original technique [with each cake made individually by hand using traditional bread dough and without any added flavourings or garnishes]
We want the way it is made in Douarnenez to survive."
Kouign-amann have become much more than just a regional speciality
the cake has been making waves in bakeries across the US and has also found popularity in Japan and Singapore
Belinda Leong, renowned pastry chef and owner of bpatisserie in San Francisco
discovered the kouign-amann while interning at a bakery in New York
and how I had never seen a pastry like this before
I wanted to immediately find out how to make it and learn about it," she said
Leong took the idea of the cake with her after her internship and spent years making kouign-amann for VIPs at the Restaurant Gary Danko in San Francisco
where it's now an established speciality produced in classic
Despite being less familiar than other French patisseries
Leong explained it's a hit with the locals
Many people ask about it and how to pronounce it
there are 50 ways to say kouign-amann [and] I've heard many of them."
Thrina Low, owner of Brera Bakery in Singapore
wasn't sure if the idea to start making kouign-amann came from her team or if it was requested by French expatriates
but it's since stuck as a staple of the bakery due to its popularity with her customers
they get hooked and keep coming back for more
It's been a sell-out item every day." Low has also experimented with different flavours
including cinnamon and fresh pineapple with cream
and she is currently working on a cardamon version
Both bpatisserie and Brera Bakery reported that their traditional
unflavoured varieties of the kouign-amann are their bestselling versions
the tastes of the people have confirmed the principles of the bakers of Douarnenez
and it's the skill of the baking that makes the kouign-amann stand out
Authentic Kouign-Amann of Douarnenez recipe
150g flour plus more to dust your work surface
175g semi-salted butter at room temperature
In a standing electric mixer fitted with the dough hook
yeast and salt and knead the dough for 8 to 10 minutes until smooth and elastic
Cover the bowl with a clean cloth and leave to rest in the fridge for 30 minutes
Flour your kitchen counter and roll the dough into a circle with a rolling pin until it's roughly 1cm (¼in) thick
Use your fingers to gently incorporate the sugar with the butter without tearing the dough
Fold all four sides to the centre to trap the butter and the sugar inside the dough
Roll the dough into a rectangle and give it three 90-degree "turns" following the technique for puff pastry
fold the dough in thirds like a trifold wallet
folding an outer third to cover the central third and then folding the remaining dough over the top
Turn it 90 degrees and roll it out to a rectangle
Make sure your countertop and your rolling pin are dusted with flour and give the "turns" to the dough softly so that the sugar and the butter do not come out
(The difference with kouign-amann versus puff pastry is that the 3 turns with kouign-amann are executed one after the other without chilling the dough.)
transfer the dough to a sheet of baking paper (parchment)
put the dough in a round baking dish (about 20-22cm/8in diameter) and press the dough into the shape of the dish using your fingers
Preheat the oven to 180C/350F (gas mark 6)
Bake for approximately 35 minutes until the top is golden brown and caramelised
Do not take the kouign-amann out of the dish straight away; leave for 15 to 20 minutes

Maddi Scordia, from Parramatta, Australia
suffered third degree burns after a blaze erupted next to a methane fire pit
The 25-year-old entrepreneur sustained third degree burns on 60 per cent of her body including her chest, arms, stomach and the majority of her legs.
Maddi was sitting right next to a the fire pit when it was lit.
It had rained the day before and air molecules trapped in the pit caused the fire to erupt and engulf her.
Maddi then spent three months in Royal Adelaide Hospital while the city was in lockdown and her family was unable to cross borders to meet her.
The procedure Maddi went through was incredibly painful(Image: mediadrumworld/@maddi_scordia)She suffered vascular burns and had to have skin grafts and specialist burn treatments.
This procedure was incredibly painful, but it also meant Maddi was able to regain movement across her body and start walking again within 19 days of the accident.
After 61 surgeries, and nearly 12 months of recovery, Maddi had the compression garments on her skin grafts removed on November 19, 2021.
To celebrate the occasion, an exact year after the accident, she threw herself a 'new' life first birthday party.

"My friends and I are a lot closer after it happened, my family is much closer. It was painful, it still is a lot of the time but that will change over time.
"This accident changed the course I was on in my life. I wanted to be this funny Australian girl that worked in motorsport, and just make a career out of that.
"And I have no doubt I still will but the difference is I notice people in a different way and I don't get intimidated by people with physical disabilities or impairments.
"I used to think that it must be so scary to go through something like that, but going through it myself, I can say it's scary but life's going to go on and a lot of great things have happened in my life since.
"I thought my life was over and I felt that way until I started being myself again, which is a strong, determined, somewhat annoying, occasionally loud woman."

"I thought being what I assumed was an ugly burnt woman with no prospects in her life, I would end up a spinster like Bridget Jones.
"It wasn't that at all, in fact, one of the greatest compliments received from someone recently was 'I am not intimidated by how you look. I am intimidated by how you are.
"'Because you're so out there. You get it, do it. And you don't want to be known for your burns, you want to be known for who you are.'"
Maddi was a successful salesperson, model and freelance journalist before the accident(Image: mediadrumworld/@maddi_scordia)Maddi credits her recovery to her incredible support system and herfamily and friends that stood by her throughout her three-month hospital stay.
She said: "My friend Caroline McCarten and her husband came to see me every day in the hospital, they were there for every milestone. I spoke to my dad and my business partner Ryf every day," she said.
"When I learnt to walk, and use the toilet again, shower, they were there. But looking back on it, I know I must have given them so much grief.
"It was a really bad time and I must have annoyed and abused them, being angry about what happened, but they stuck by me. You should have people around you that love and support you, whether that is nurses and doctors or family and friends.
"And don't feel like this is the worst thing in the world that can ever happen to you, because it is not. Life will go on with or without you, you want to be here. Give it a shot, you've almost died once, what's the worst thing that can happen now?"

BETHLEHEM — As he walked through the abandoned buildings of Bethlehem Steel last week
Vince Scordia felt as if he were in a time capsule
once one of America's leading steel producers
and it looked as if the Bethlehem plant hadn't been touched since it stopped making steel 15 years ago
"You're literally walking into the past," said Scordia
a film producer for Lou Reda Productions in Easton
and it's like you're retracing the steps of the workers."
And that's exactly what Scordia wants audiences to see when "Bethlehem: The Christmas City" eventually hits the screen
Lou Reda Productions started shooting in Bethlehem last week for the 30-minute film that's scheduled to be shown four times a day every day at SteelStacks
the arts and cultural hub being built on the former Bethlehem Steel site
such as the Emmy-nominated series "WWII in HD," for the History Channel
Now it's using its expertise to bring Bethlehem to life
From the grounds of the old steel factory to the roof of the Hotel Bethlehem
the documentary will show the city from perspectives residents haven't seen before
Those views are complemented by familiar scenes: Lehigh University
But modern-day shots are only part of the story
was stunned at the depth of Bethlehem's history
decided to write this one herself and explore the city back to its Moravian roots
The script has an emphasis on Bethlehem Steel
but Reph said her crew paid particular attention to sound effects so the sounds and sights of the steel mill take viewers back to the plant's heyday
After seeing the inside of the shuttered buildings

from the finest gemstone dealers to crystal healers
accompanied by the Dior Joaillerie buying team

joining Hermès as director of the jewellery department in 1984 before moving to Dior in 1997 to set up a fine and high jewellery division
recruited Victoire de Castellane as creative director and she relied on Scordia’s stone-buying knowledge for the next 22 years as she reshaped the jewellery landscape with coloured gemstones that had rarely been seen before
Scordia formally retired in 2021 but still works for Dior
It’s clear from the moment that we enter the show that he is much-loved and respected
Dealers reach across their showcase cabinets to shake his hand and he is stopped frequently to be warmly embraced
“As a buyer you begin to know the dealer’s inventory,” Scordia says
“Before we arrive at the fair we’ll chat on the phone and let them know what we’re after – it’s an ongoing relationship
But the question that we always ask ourselves is: what is the excellence of one particular supplier
It is the main supplier to Dior of rare black opals and regards de Castellane as instrumental in turning around the once-maligned stone’s fortunes; many of Dior’s most iconic pieces contain an opal
is bought from Lightning Ridge mine in New South Wales and cut in Australia
to ensure ethical standards of employment and practice
started digging in 1974 but gave it up to cut and sell
“We had our first meeting with Dior in 2003 and Victoire immediately understood the opal’s rarity and vitality that no other stone can give,” he says
“Our journey with them has just been the most fantastic adventure

Scordia says that they are the perfect suppliers to Dior for excellent stones of consistent quality and dimension
all the Parisian companies just used rubies
but around 15 years ago it all changed – and now we very much specialise in colour
all because of her creativity,” Arnoldi says
Arnoldi’s showcases are filled with a rainbow palette of aquamarines
tourmalines and spinels that it buys from Mozambique
Companies such as Arnoldi support many local artisanal mines and have done so for decades; René has just cut some aquamarine from the 1920s
“I will sell the stones when I feel like it
this time to a closed stand that’s run by an Indian family based in New York
elegantly dressed in cream Brunello Cucinelli with serious watches on their wrists
Their inventory is incredible – juicy rubellites the size of gobstoppers sit beside strings of emerald beads fit for royalty
the Dior buying team are looking for sapphires
gemstone packets are brought forward and laid in front of Philippe and two other buyers
They’re looking to build a set for a run of blue in a necklace – but crucially all must be from the same origin (Sri Lanka
“It’s what the client wants these days – it’s more selective
The team start studying the stones closely under a loupe and a gem torch
Any additional treatment of the stone is noted (many coloured gemstones are heated to increase the depth of colour); in this case all packets are marked “no heat”
the perfect scenario (although some stones marked “moderate heat” will be purchased here)
which is not on their shopping list: an extraordinary 26-carat Sri Lankan sapphire from the Elahera mine
The buyers are calm; this is like a well-choreographed dance and they work in pairs to check each other’s decisions
The sapphire won’t be bought on the spot but instead will be sent to Paris for a decision “by committee” made up of de Castellane

so I ask Scordia what the competition is like for the best stones
“It’s all a question of human relationships
but I don’t want to compete with other houses and I don’t want to feel I’ve missed out
We’re a very small community so it’s important everyone leaves feeling happy.” Interactions between the houses are polite but brief
We’re ushered out and are about to leave the fair when Alan Kleiman
He wants to show us a rare emerald from Mozambique and a ruby that he has recut from ten carats to 8.25
“It’s important I have the best stones,” he says
“I need to hear ‘magnifique’ from you Philippe
“C’est tout magnifique,” Scordia says quietly as we leave
Renato Amoroso: I pedaled as fast as I could... as if I were escaping from longing, from innocence, from her. Time has passed, and I have loved many women. And as they've held me close... and asked if I will remember them I've said, "Yes, I will remember you." But the only one I've never forgotten is the one who never asked... Malena.

But this will not be enough to get us out of trouble
as the international crisis is truly testing us."

a gifted artist and dedicated community activist
died Friday in Clove Lakes Health Care and Rehabilitation Center
he was 5 when he moved with family to Scordia
He began drawing and painting as a boy and was apprenticed at 14 to Alessandro Abante
a famous Sicilian church artist and decorator
and helped to restore San Rocco Church in Scordia
Barchitta then served as a reconnaissance scout in the U.S
Army's 6th Armored Division during World War II
to Grasmere in 1958 and to Clifton in 1968
but returned to South Beach in 1978 and settled in Bulls Head in 1988
Barchitta studied at the Artisan Art School in Scordia and the Leonardo DaVinci Art School in Manhattan
Puerto Rico and the waters of New York and New Jersey
Native Americans were also favorite subjects
He worked as a backdrop artist for Universal International in Los Angeles
as well as an associate artist for Creative Art Studio in Manhattan
Barchitta later established his own painting and decorating business
He taught drawing classes at South Beach Community Center and the College of Staten Island
and judged competitions for the South Shore Artists Group and Conference House Association
Barchitta received many awards and accolades over the years
His work has been exhibited in the Staten Island Museum
as well as one-man shows at the Scordia Cultural Center and Atlantic City Art Center
He was a member and past commander of the Cespino-Russo Post
and former commander of the Richmond County Legion
Barchitta's community ties were numerous
including memberships in many senior centers
Borough President's Senior Citizens Advisory Board
and the Borough President's Advisory Board for the Disabled
He was honored many times for his service to organizations and the community at large
