The Leungs are major players in Sobrang Sarap April’s monthlong celebration of Filipino food across 16 Portland restaurants “It’s a food month that’s recognized in the Philippines The project blossomed out of the recent founding of Kolectivo, a collective started by Magna, Sun Rice, and Tikim; the Leungs look forward to getting involved with the collective as much as possible in the coming years “There was a need for a third space for the FilAm community — a place where we can finally come together “We hope we can inspire more Filipino American businesses and create a blueprint so that more people can do this.” We met with the Leungs at Kolectivo to chat over coffee and bibingka where they also filled us in on their picks for post-shift sushi Can you talk a bit more about Kolectivo and the way you feel its founders are reflective of the spirit and style of Baon Kainan chef Carlo (Lamagna of Magna) and Ethan are all very similar and really strive to do the same thing with Filipino food: starting out traditional and classic but elevating it to a place that’s uniquely personal to them We’re not just a homogeneous group of Filipinos who can cook Ethan Leung: A common theme when people think of Filipino food is that it needs to taste or be presented a certain way. Ethan Leung, who was previously cooking at Seattle’s buzzy hotel restaurant Ben Paris lived the life of a chef in a demanding market: 12 all with the high pressure of working in a traditional restaurant kitchen making dishes like smoked salmon sinigang and ube panna cotta But after coming down to visit Matta power couple Richard and Sophia Le the Leungs realized they wanted to do something for themselves on their terms in a way that allowed them to live the life they wanted “To see Matta do what they do so very well that really opened my eyes,” Ethan Leung says Baon Kainan will land in Portland as a food cart and seasonal dishes like wintertime arroz caldo Baon Kainan is an exploration of the foods both Ethan and Geri ate growing up as Filipino Americans While Ethan pivoted into professional cooking after a short-lived career in engineering Geri grew up cooking at home for her younger brother absorbing what she could from the Food Network and a “ratty old binder of recipes,” including her mother’s Filipino dishes After Ethan’s first year cooking professionally he felt compelled to attempt the food he ate growing up through this new lens and the two of them started hosting supper clubs for their friends and family I was the tester of all the foods,” Geri says “I put the homey spin on it; he had this fine dining experience When the Leungs talk about Baon Kainan — or Filipino cooking in general — they often frame their food as a departure from the home-cooked staples common to most Filipino families The couple uses the phrase “Not your tita’s cooking” in their Instagram bio a recognition that the food at Baon Kainan is not the textbook version of any given Filipino dish while holding full respect for that traditional interpretation “What we want to convey in the food is that this is our story; this is our upbringing,” Geri Leung says We grew up on fast food and the buffets and pizza rolls and so we’re inevitably going to honor the foods that we grew up with the cart’s kare kare fries are a nod to Geri and Ethan’s college trips to Canada The chef sears seasoned short ribs before braising them with carrots Ethan combines the braising liquid with peanut butter “We make the peanut stew with the braised beef as traditionally as we can that pays homage to our time in college,” Ethan says The rest of the menu will include gluten-free versions of both chicken and mushroom adobo and a rotating selection of dishes like sinigang The two hope to offer desserts as well — the Seattle pop-up has served things like ube brownies and ensaymadas — but the Leungs don’t want to bite off more than they can chew The Baon Kainan food cart will open August 7 at 4311 NE Prescott. a bit of philosophy as well “My kitchen is deep,” says chef/owner Alvin Balabastro Balabastro grew up in a village called Santa Rosa Laguna in an area of rice farms about half an hour outside Manila on the island of Luzon The dominant cuisine in the area surrounding the capital is known as Tagalog But he and his wife Odette – who grew up in the northern province of La Unión speaking another language called Ilocano – are quick to point out that the Philippines are a land of more than seven thousand islands colonized and influenced by many foreign cultures over many centuries Favored ingredients and styles of cooking are different wherever you go in the islands as well Areas more heavily influenced by Chinese culture tend to incorporate more soy sauce His own parents died when he was in his teens so it was mainly his grandparents who taught him to cook As he had to care for a younger brother and sister from an early age This talent applies as Balabastro travels around the world as a perquisite of his “day job” as a mechanic for United Airlines he likes to immerse himself in the culture and try what the natives eat rather than falling back on fast food or something generic “My benefit of travel is eating local food and drinking local beer.” And always he can figure out from the taste how a dish must be put together he can incorporate elements of many cuisines into the dishes he creates Not every special offered at Hapag Kainan is the same thing that can be found at any Filipino restaurant with an intent to sample some of his specialties he steered us away from the more commonly known Filipino dishes such as pork sisig and silog (although you can certainly get those classics there) he – along with head chef Edwin Maravilla and assistant Sam Santillan – produced a veritable feast of less-familiar dishes that exemplify Tagalog style a cold dish that might be described as the Filipino equivalent of whitefish salad a bony-but-delicious fish that needs to be imported from the Philippines It’s mixed with chopped green onions and chilis given a distinct tang by the addition of citrus juice Like nearly every food in Filipino culture but any leftovers you take home would make a refreshing substitute for tuna on a sandwich as well Another seafood entrée we sampled was palabok: shrimp sliced eggs and crumbled chicharron served over rice noodles Odette notes that they don’t use any artificial colorings or flavorings in their kitchen and vegetarian and gluten-free diets are easily accommodated Wheat flour is typically only used in breakfast pastries in the Philippines A side salad mingles chopped tomatoes with spinach the green substituted for a type of edible fern available only in the Philippines It’s topped with thick slices of salty eggs a specialty that involves fermenting duck eggs for a period of 19 to 21 days packed in a “mud” of salt and clay or charcoal before cooking while he had restaurant jobs while attending school his first foray into commercial cooking on his own was starting a salted egg business at age 21 He recalls attending a Catholic school for underprivileged children and taking home the eggs that hadn’t been found during the annual Easter egg hunt as part of doing the cleanup That sense of nostalgia around eggs manifests in a number of dishes on the Hapag Kainan menu but you won’t see the notorious balut: fertilized eggs in which the chicken embryo is allowed to develop substantially before being deep-fried It’s a popular street-vendor food in the Philippines But its preparation violates the taboos of some religions and is simply unappealing to many foreigners “Most other nationalities are scared to eat Filipino food because of that,” he says Pork is a staple ingredient in Filipino cooking and we tried two styles of preparation: Crispy pata is deep-fried pork knuckle with a delicious crunchy skin Binalot can be made with either pork or chicken it’s cooked and served on a bed of rice wrapped in banana leaf Binalot is meant to be eaten with the fingers as was generally true of Filipino food prior to the Spanish occupation The process of steaming food in banana leaves infuses it with a unique flavor but the leaves were originally used in place of dinner plates for serving a big family party in the Philippines will often feature a long buffet table covered with banana leaves where guests simply stand and eat with their fingers the tradition evolved during times of scarcity when people had to eat fast or go hungry Today it has evolved into what Millennial Filipinos call a Boodle Fight: competitive fast eating Participants will even cheat by surreptitiously throwing tiny super-hot peppers among the food to slow down their rivals So popular is this phenomenon that Hapag Kainan is offering a $140 Boodle Fight package featuring 11 different traditional foods in quantities to serve six to eight people All these customs point up the social nature of dining in Filipino tradition Hospitality is an important cultural value; people will vie for the right to pick up the tab for a large group dining out Hapag kainan translates as “dinner table,” and © 2022 town decided to tap into its association with Japan’s second most common surname when it launched the campaign in 2021, by targeting the estimated 750,000 Suzukis who live in Tokyo or the neighbouring prefectures of Chiba, Saitama and Kanagawa. totalling ¥70m from their namesakes across the country including the Suzuki motorbike and carmaker The town has also hosted regular gatherings of Suzukis who want to learn more about their ancestry While Sato tops the list of common Japanese surnames with 1.86 million Suzuki is a close second with 1.77 million Kainan is not alone in experiencing a steady decline in the number of residents although the number of foreigners rose to a record high of almost 3 million The National Institute of Population and Social Security Research forecasts that the country will be home to just 87 million serious here,” he said “We thought we could make our campaign stand out by appealing to people with the surname Suzuki but the hurdles in the way of actually getting people to live here are high.” Officials in the town – famous for its lacquerware kuradashi mikan tangerines and beautiful coastal sunsets – hope the completion next year of a hotel will tempt more Suzukis to visit and get a proper feel for their spiritual home “It’s unreasonable to ask someone to drop everything and relocate,” Fujita said “There is so much to consider before making a decision like that But if we can get people to come just for a short time and sense the atmosphere here I think some of them will quickly fall for the place.” The new method could be used to reduce greenhouse gas emissions and reliance on nondegradable plastics Technology to produce bioplastics has been developed by Susie Dai and a team of Texas A&M AgriLife researchers A team of Texas A&M AgriLife Research scientists has developed a system that uses carbon dioxide to produce biodegradable plastics that could replace the nondegradable plastics used today The research addresses two challenges: the accumulation of nondegradable plastics and the remediation of greenhouse gas emissions The research was made possible by the John ’90 and Sally ’92 Hood Fund for Sustainability and Renewable Products Texas A&M AgriLife and Texas A&M University Electrocatalysis converts CO2 to ethanol and other carbon-chain molecules consume carbon molecules to produce bioplastics Dai said today’s petroleum-based plastics do not degrade easily and create a massive issue in the ecosystems and “Carbon dioxide has been used in concert with bacteria to produce many chemicals but this design produces a highly efficient smooth flow through our carbon dioxide-to-bioplastics pipeline,” Dai said it is kind of like a train with units connected to each other,” she said “The first unit uses electricity to convert the carbon dioxide to ethanol and other two-carbon molecules – a process called electrocatalysis the bacteria consume the ethanol and carbon molecules to become a machine to produce bioplastics which are different from petroleum-based plastic polymers that are harder to degrade.” Using CO2 in the process could also help reduce greenhouse gas emissions Many manufacturing processes emit CO2 as a waste product “If we can capture the waste carbon dioxide we reduce greenhouse gas emission and can use it as a feedstock to produce something,” Dai said “This new platform has great potential to address sustainability challenges and transform the future design of carbon dioxide reduction.” The major strength of the new platform is a much faster reaction rate than photosynthesis and higher energy efficiency “We are expanding the capacity of this platform to broad product areas such as fuels commodity chemicals and diverse materials,” Dai said “The study demonstrated the blueprint for ‘decarbonized biomanufacturing’ that could petroleum-based plastics But if the technology is successful enough to produce bioplastics at an economic scale industries could replace traditional plastic products with ones that have fewer negative environmental impacts mitigating CO2 emissions from energy sectors such as gas and electric facilities would also be a benefit “This innovation opens the door for new products if the bacterium is engineered to consume carbon dioxide-derived molecules and produce target products,” Dai said “One of the advantages of this design is the condition the bacteria grow in is mild and adaptable to trees were first planted thousands of years ago in Kainan the city has been trying to make a name for itself as the “town of sweets.” Local businesses involved in the campaign have developed various unique sweets using the citrus and other local products The golden yellow fruits are slightly smaller than the popular unshu mikan oranges and are characterized by their sour taste and fresh scent tachibana orange trees grow naturally in many parts of Japan dried foods and sweets shop operator Maru San Noda Sho-ten has been using tachibana to make their Kainan Gugelhupf cake The batter is not only mixed with tachibana oranges but also includes locally produced dried hijiki seaweed is said to have been loved by Marie Antoinette “I use tachibana oranges as a way to help promote Kainan as the ‘town of sweets,’” said Tomoya Noda president of the company operating the shop I bought a Kainan Gugelhupf cake at one of the shops operated by the company called Sanji no Kanbutsuya-san the
