He has served on The Nature Conservancy’s Hawai‘i board of trustees
and currently serves on TNC’s Hawai‘i emeritus Ihupani Council and chairs the Palmyra External Advisory Group
“The virtuous cycles of nature are alive on Palmyra,” says Eiichiro
“This is a globally significant and unique asset that truly differentiates TNC
is happening here.” It was TNC’s commitment to science that first drew Eiichiro’s support
and the relationships he developed with researchers and practitioners inspired him to become a member of The Legacy Club
“I have been able to see people on the front lines
trying to solve problems that will affect all of us,” he says
“It’s so easy to designate TNC as a beneficiary of a 401(k)
it shows a commitment to the fact that we want TNC and its work to outlive us so our children and future generations can experience the beauty of Hawai‘i and the world.”
Keris Kuwana has the sweetest job in the world—literally
a company that partners with chefs and restaurants to develop brands and concepts
she gets to make treats all day long for beloved Las Vegas restaurants like Al Solito Posto and La Strega
the native Hawaiian honed her sweet tooth on the Strip at Aureole and Yardbird
and she recently launched her own line of desserts
at select Coffee Bean & Tea Leaf locations across the Valley
The Weekly caught up with the sugar dynamo to talk pastry inspo
mochi doughnuts and turning tiramisu on its head
and I actually graduated with a gemology degree
I loved it … but I never knew exactly what I wanted to do
I was decorating Easter eggs with my cousins
Downstairs was a very small cookie shop called Hokulani bakery
and I worked for $7 an hour as a cookie decorator
It was a really fun experience—all we did were cookies and cupcakes
Then you eventually made your way from Hawaii to Las Vegas
I was the corporate chef at Yardbird [in the Venetian] and we did Chica as well and we worked on the pool upstairs
It was super fun—piles of pancakes with syrup and confetti
They let me be creative with a peach cobbler
and they also gave me a lot of creative freedom
to be a small person from Hawaii and to make it in a large casino
Tell us about your current role at the Lev Group
I do restaurant development for all of the concepts
There’s a dessert program we’re doing for La Strega
the large crostata and the pour-over tiramisu—those are all of our desserts
That pour-over tiramisu at Al Solito sounds intriguing
So we didn’t want just the regular tiramisu where you line it with lady fingers and it’s a square cut out of the pan and you slap it on a plate
We took mascarpone mousse—we did a coffee mousse and we froze it into a half sphere that gets popped out and put onto a biscuit joconde
And so that dome sits on top of that white cake
And of course there’s whipped cream with the tiramisu
so we made little spikes of whipped cream on top of the spheres
It sits in a slightly shallow bowl and we pour the coffee liqueur
and you’ve got all the flavors of the tiramisu in a very unconventional form
You just launched your own line of sweets at Coffee Bean & Tea Leaf
We’re going to start with the regular flavors so people are not too scared to order
people think that mochi doughnuts are ice cream
They’re made of glutinous rice flour called Mochiko flour
We have a mochi doughnut machine that we actually flew in from Japan
The greatest part about our mochi doughnut is that we don’t use any artificial powders
Where do you find inspiration when creating desserts
I’ll see how some girl does her wafer flowers
and then it kind of carries me into doing things
maybe I should do more flowers for our Mother’s Day cupcake
I would have never known that they had those Russian ball tips to make these beautiful flowers just in one piping swipe
You get to see people’s different approaches into doing things like an Italian wedding cookie or a Mexican cookie

Sin City is home to a lot of restaurants and bars, but there are tons of hidden gems that the majority of Las Vegans aren't unearthing. To help guide us to these potential discoveries, we've enlisted some of our city's food players to share their recommendations for a feature dubbed Dining Confidential
Yardbird Southern Table & Bar’s pastry chef Keris Kuwana got her start in Las Vegas in 2008 when she joined Roy’s and graduated from Le Cordon Bleu College of Culinary Arts
Aureole at Mandalay Bay and finally Megan Romano’s former bakery
Chocolate & Spice before returning to Aureole and then Charlie Palmer Steak at the Four Seasons
the pastry chef behind the Southern restaurant at the Venetian shares three of her favorite places to dine in Las Vegas
Which restaurants do you turn to when you’re not working
Yuzu — The chef used to cook for the emperor and empress of Japan
Chada Street — I always get the duck panang; it’s so rich and delicious
I love to stop in and get a slice of the wedding cake
especially when I don’t feel like making myself dessert
It’s soft and moist and spongy with a sweet custard and strawberries tossed lightly in sugar
It’s so fresh and it has a sweet whipped buttercream that’s so light
Yuzu — it’s close to my house and the dedication that they have for their food is second to none
He hand-shreds it like a traditional Japanese chef
Freed’s — It reminds me of my grandmother’s cake she used to make me for my birthday

Memphis basketball assistant coach Larry Brown contracted the delta variant of COVID-19 following the 2021 Nike EYBL Peach Jam Basketball Tournament last month
Brown disclosed the news during an appearance on the Jason and John Show on 92.9 FM ESPN Friday
and I was kind of out for about 10 to 12 days
but I'm all good now and you know anxious to get back," Brown said.
is vaccinated and said he has made a full recovery
The recent hire attended the event with coach Penny Hardaway
He said that his favorite part of traveling was being able to spend time with Hardaway
the two coaches saw recent Memphis signee Jalen Duren play
FANS: Jalen Duren chose Memphis and Tigers fans should savor the feeling. You earned it. | Giannotto
SCHEDULE: Memphis basketball releases home nonconference schedule
Brown compared Duren to a young version of Shawn Kemp
citing his athleticism and size as two factors that remind him of the six-time NBA All-Star
He added that what stands out about Duren is his attitude
"He just seems like a great teammate who wants to get better
and those are the people that I think Penny is lookin to recruit
and those are the kind of kids I want to be associated with
want to come to practice every day want to get better
and I think that's entirely what Jalen is about," Brown said.
Brown said he had been on a Zoom call with Hardaway and Duren before as well and was impressed by his maturity
Duren turned down an offer of over a million dollars to play in the G League
as well as offers from other top basketball programs
HIGH SCHOOL: Jalen Duren chose Memphis. Here's how the Delaware basketball standout got here
"When you're able to compete against Miami and Kentucky for a kid
of his program and what he's trying to build," Brown said.
Brown said other factors that may have pushed Duren to college basketball over the G League. He would prefer young athletes to assimilate into a college environment that teaches them the importance of an education
"I wish the NBA would realize that college basketball might be the greatest minor league system that we have ..
I really think they're going to do away with this one-and-done because of this likeness
but a lot of times kids that make that decision really aren't ready
and we don't talk about those kids that fail
I think the system fails more than the kids fail," Brown said

Metchie played alongside Heisman Trophy winner DeVonta Smith and was able to learn off his technique
especially as far as "minor little details," things only receivers work on or really notice
Metchie III said at 2021 SEC Media Days on Wednesday.
RECOGNITION: Alabama football receiver John Metchie III named top Canadian in college football
ANALYSIS: 5 things we learned about Alabama football at SEC Media Days 2021
TOPPMEYER: Hey, Nick Saban, is it OK if I call you Nick?
came from just being Smith's teammate and observing him off the field
bringing in your best self day in and day out and just being consistent," Metchie III said.
Metchie III exploded into the national college football scene after he delivered a standout performance against Texas A&M last season
With Waddle's injury expanding his role
Metchie totaled 916 yards and six touchdowns on 55 catches.
Metchie III continues to take after Smith and stress the importance of his mindset
He said part of why he is such a solid and tough receiver is his competitiveness and ability to put his mind to something and do it
and sights are set on another national championship
The question remains of whether Metchie III can take what he learned from Smith and help his team to back-to-back titles.

college student Jacob McGary picked up 25 boxes of Penang curry at Mark Thai Food Box in the University District and drove to Swedish Medical Center on First Hill
He handed the donated meals to hospital representative Jae Lim
who rushed to bring them to a crew at a mobile COVID-19 testing site in Federal Way — before they got cold
The delivery was one of several coordinated that day behind the scenes by Ellen Kuwana, a Seattle freelance science writer who is on a mission to feed the local health workers on the front lines of the coronavirus pandemic
Relying on family friends who volunteer as delivery drivers, contacts in the medical community, a fundraising campaign through social media
and restaurants that take her orders — and sometimes even donate the food — Kuwana estimates she has fed more than 5,000 health workers in 15 clinical sites in just about a month
It all started with a simple idea: to buy pizza for the UW Virology department volunteers who were working long shifts processing COVID-19 tests
But when the restaurant she called offered to donate the food
she was so touched that she just kept going
Delivering food is something very nurturing

Tiyon Evans joined Tennessee football out of Hutchinson Community College in Kansas
With the transfers of Eric Gray and Ty Chandler, who combined for over 85% of the Vols' rushing totals last season, Evans is expected to lead the running backs along with Jabari Small this fall
Here are three things to know about Evans:
Evans attended Hutchinson Community College in Kansas
He led the team to its first 10-win season in five years in 2019 and had 538 yards and nine touchdowns
BACKS: What Tennessee's 'one-two punch' says about how running backs will be used in Josh Heupel's offense
CONFIDENCE: Tiyon Evans: Tennessee football is 'headed in the right direction'
GAME ONE: Tennessee football releases depth chart for Bowling Green season opener
While there, he was rated the No. 1 junior college running back and No. 3 junior college player, according to the 247Sports Composite.
Back and forthEvans committed to Tennessee football on April 30, 2020, then decommitted Sept. 21. Two months later, Evans committed to the Vols again.
After enrolling in January 2021, Evans participated in spring practice but was sidelined for most of it with an ankle injury.
Despite his wavering commitment, Evans has been an outspoken advocate for the Vols. Evans has two years of eligibility available with Tennessee.
Evans said he fell in love with Knoxville as soon as he arrived. After just half a year in the college town, he insisted he was going to stay permanently and even raise his family in Knoxville.

And even before being drafted in the first round of the ’14 WNBA draft
the UConn graduate won back-to-back NCAA national titles in her last two years as a Husky
is a decision she made nearly six years ago: getting her toy/miniature poodle puppy
“I knew I wanted a dog when I had played overseas
so I think I just wanted a companion and someone or something to be there with me,” Dolson says
What may have started off a companion has quickly shifted to be much more
And though the love is surely not one sided—the two just clicked when they first met—Dolson's obsession with her furry friend is obvious
She has a blanket and a pillow with his face on it

the former Terp almost looked more relieved than surprised—for good reason
Just one year out from a knee surgery (following a 2021–22 season spent playing on a fractured kneecap) that would have kept many players off the court for close to a year
Miller was on the other side of her senior season and an Elite Eight appearance
hugging her dad and walking up onstage to pose alongside the next uniform she’ll don in her basketball career: a sleeveless

Kevin Hughes said his son Kross had four dreams: he wanted to be a police officer
Hughes often questioned how the 4 year old
who he affectionately called "Kross the Boss," could achieve all four of those at once
He reassured his dad that it would work for him
(and he would say) 'Well they're gonna work for me
it was fitting that Kross loved to dress up and play pretend. The minute he arrived home from daycare
Kross would change into one of the 25 costumes he had in constant rotation
Hughes and his family were staying in Kissimmee
last weekend to play in a basketball tournament for older brother K'Cyn's Memphis-based Reform Sports team
Kross died after drowning in the pool at the rental home on July 4
according to the Osceola County Sheriff's Office.
Hughes talked to K'Cyn and offered him two options: They could drive home that night or stay and play for an AAU national championship in Orlando.
his son K'Cyn gave a simple answer:
"I want to play for my brother," the 10-year-old said
Reform Sports won the title two days later

THE 901: How Penny's decision to stay sets up team for future
By the time sheriff's deputies arrived at Acadia Estates Court
live-saving measures were already being performed on Kross by Osceola County Fire Rescue.
It's unclear how long Kross had been under water before he was found.
Hughes had been sitting outside on a chair but did not realize his son was missing
according to an incident report obtained by The Commercial Appeal
which had been redacted to exclude all names.
Hughes was identifiable as "father" in the report.
Hughes advised deputies that he was the only adult in the pool area around the time of the incident
He believed Kross was inside the house and did not see him enter the pool or how he was discovered.
Hughes was "extremely distraught," according to the report
was "crying hysterically and could not talk" when police attempted to gain information on the event.
Kross was transported to AdventHealth Celebration Hospital
A sheriff's department spokesperson said the case has been closed.
his death was reported to the Florida Department of Children and Families
WEEKEND IN MEMPHIS: Violent holiday weekend leaves 7-year-old boy dead, 3 people critically injured
Reform coach Jelisa Scruggs said Kross' death gave the team renewed purpose. Hughes
offered other players the choice to stay or go home
and each gave the same response as K'Cyn to stay
and it showed a brotherhood," Scruggs said
"They supported their brother throughout that entire time
If one kid wasn't around him three or four was around him
They wrapped their hands around their brother and protected him."
Scruggs described the moment as one of the hardest days of her life
The group of third-grade boys were ecstatic to win the championship; some players cried
and many of them slept with their hats and medals still on that night.
"It was like Kross was in the building," Hughes said
described as energetic and spontaneous
He was a constant presence in the gym
At one Reform game, Kross was hanging out in his usual spot on the team's bench when he asked Scruggs if he could play with the team
She told him he could but only if he found a jersey
Unsurprisingly, the young boy picked up one of the players' shooting shirts
To keep her promise, Scruggs sent Kross onto the court to run around with the team for a short while.
Kross was the boy everyone loved to be around
and Kross could make people laugh by just being his carefree self
whether that meant snatching the hat off someone's head or playing on the bleachers in the gym.
"If you didn't know the definition of how to have free spirit and how to live your life and have fun

He just had life in him. It was just pure life."

has served as the backdrop for the “Ageuma Shinji” (Horse jumping festival)
designated by the prefectural government as an intangible folk cultural property
features powerful horses mounted by young people charging up a muddy
earthen ramp near the entrance to the shrine
At the top is a 2-meter-high mud wall that they are supposed to scale
How well they do is said to foretell the state of the coming harvest
But next year’s event will almost certainly be different due to concerns about the way the animals are treated
The festival had come under intense criticism following revelations the horses are administered stimulants to get them through the ordeal
broke its leg and had to be put down this year
There were also reports of horses being lashed with ropes before they ascended the slope
This year marked the first time since 2019 for the event to be held because of the COVID-19 pandemic
Mie prefectural authorities called for aspects of the annual ritual to be reviewed so as not to put an undue strain on the horses
taking note of campaigns to stop animal abuse
Long-established cultural practices that had triggered howls of indignation over the mistreatment of animals were already an issue half a century ago when legislation was first drawn up to protect living creatures from abuse
Diet discussions on the draft of the animal protection law in 1973 tackled live shows in Okinawa featuring fights between highly venomous “habu” vipers native to the island prefecture and mongooses
it was argued that the performances had “historic value” and as such could not be regarded as abusive
the legislation has undergone repeated revisions in line with growing awareness about animal welfare
It was renamed the law on welfare and management of animals and given teeth with provisions for harsher penalties
some events and shows referred to as legal when the legislation was first drawn up have already disappeared
no bouts of that kind have been held since a specialized facility in Katsurahama Park closed for good in 2017
A legal revision in 2020 stipulated that putting animals in situations that result in external injuries constituted abuse
The snake-mongoose show--a tourist draw generally not found outside of Okinawa Prefecture--can no longer be watched
Around the time when the Group of Eight summit was held in Okinawa Prefecture and Kyushu in 2000
the prefecture instructed the organizers of the snake-mongoose show to modify the entertainment program to one that goes without fighting
organizers of other time-honored events have taken steps to match the spirit of the times in the hope of conserving their traditions
Among them is the Tsunotsuki bull-versus-bull showdown in Ojiya
which is designated as a nationally important intangible folk cultural property
A veterinarian is now on hand at the festival site following a 2013 legal amendment that rendered it mandatory to provide injured animals with swift and proper treatment
a folklore professor at the University of Tokyo who chairs the Ojiya Bullfighting Promotion Council
Festival organizers also started study sessions on animal welfare
They were gratified to learn that their traditional custom of ending matches in a draw before any real harm was done was highly praised
as was their policy of not sharpening the bulls’ horns before a fight
The officials believe those rules should be handed down to posterity
“We will be preserving Tsunotsuki while changing what can be changed in line with the trend of the times,” said Suga
some things that were long taken for granted are no longer compatible with modern norms
Asked if any accommodation can ever be reached on such occasions
“Enormous efforts are essential for those passing down traditions while outsiders need to continuously build channels in a quest to understand each other’s opinions.”
Even time-honored events can be classified as illicit abuse under the law on welfare and management of animals
given that it bans putting animals in situations that can result in traumatic injuries
“It is possible that events will not be categorized as abuse if appropriate reasons are offered
such as handing down a ritual for posterity,” acknowledged an Environment Ministry official
the ministry said causing unnecessary pain to animals could be construed as abuse
it falls within the judicial scope” to examine individual cases and make specific judgments for each of them

National Report
Mie Prefecture—The Mie prefectural government will issue improvement instructions to organizers of the “Ageuma Shinji” (Horse jumping festival) after the event came under intense criticism over its treatment of the animals
During this year’s festival held at Tado shrine here in May
one horse stumbled and broke its front left leg
It was administered a painkiller but was put down after deliberations between its owner and a vet
Sources said prefectural government officials also observed festival participants repeatedly hitting the horses with traditional “happi” coats or ropes
Although such behavior “cannot be described as animal abuse
it was still inappropriate” in light of the Welfare and Management of Animals Law
the Kuwana city government tweeted about the festival with photos
The tweet garnered more than 1,000 comments
most of them critical of the decision to put down the injured horse as well as the treatment of the horses
Many responses blasted the way the horses were forced to run up a steep slope and jump over the high wall
The prefectural government also received about 1,000 complaints about the festival from across the country
The verbal improvement instruction will be issued to the shrine and an “ujiko” organization that has traditionally provided horses for the festival
according to sources at the prefectural government
Ujiko literally means worshippers of a guardian deity of a particular area
is held at the shrine on May 4 and 5 every year
Horses carrying young riders in traditional warrior attire rush up the steep slope during the festival
It is believed that the state of the coming harvest can be predicted by whether the horses can jump over the 1.5-to-2-meter-tall mud wall placed at the top of the slope
The festival is believed to have started around 700 years ago during the Nanboku-cho period (1336-1392)
The prefectural government has designated the festival an intangible folk cultural property
horses belonging to the Mikuriya ujiko organization came from six districts to take part in the festival
The six horses each ran up the slope three times
only three horses successfully cleared the mud wall after being manually pulled to the top of wall by festival participants
the participants hit the animals with ropes and happi coats
Some aggressively waved the happi coats or yelled loudly at the horses
The “council for measures to prevent accidents at Ageuma Shinji,” whose members include Mikuriya representatives and officials of the prefectural government and the Kuwana city government
The prefectural government plans to give verbal instructions for improvements at the meeting
But an official responsible for animal protection issues at the food safety section at the prefectural government said improvements must be made for the festival to continue
“We would like to report to those concerned the fact that the festival attracted much criticism,” the official said
“It’s difficult to continue the festival without making improvements
A shrine official said about the reported behavior at the festival: “If that was true
We will strive to follow relevant laws and regulations
and make sure that historical and cultural values (of the festival) will not be harmed.”
The festival had been accused of abusing horses in the past
drink sake or were kicked in the lower belly before they ran up the slope
the Mie prefectural board of education instructed festival organizers to stop behavior that goes against the spirit of animal welfare
Mikuriya decided not to give the horses unnecessary medication or injections during the festival
It also decided that people who are not riders will not carry tools
Foreign workers the winning ticket at horse racing stables
Mie Prefecture--Horses scrambling up a steep slope emerged none the worse on May 4 after changes were made to a shrine festival in response to accusations of animal cruelty last year
horseback riders in the Ageuma Shinji (Horse jumping festival) at Tado Taisha shrine here get their animals to leap over an earthen wall about 2 meters high after reaching the top of the slope
is held to divine crop harvests based on whether the horses ridden by young residents in feudal attire can clear the final obstacle
the festival came under fire after a horse broke a front leg and was put down last year
organizers decided to do away with the earthen wall
modify the slope to make it less steep and prohibit riders from inflicting violence on the horses to make them run
The steps to lessen the burden on horses were adopted based on a recommendation from the prefectural board of education
six horses conquered the slope in turns to applause from spectators
“I am relieved that everything went well,” said Yoshichiyo Ito
“The festival has changed from its traditional form
but it is OK if both people and horses are safe and unhurt.”
A 47-year-old resident who watched the festival said: “For someone of my age
But we must accept that changes must be made
so the festival turns out to be a success.”
Some members of an animal protection group held up placards in the front row of spectators that said the festival must not serve as an excuse for animal cruelty
