I had been away from the Texas Coast for far too long. It was December
and I needed a break. I called my buddy
and we agreed to rendezvous at 9 am at Anahuac National Wildlife Refuge. The weather was overcast
and a steady bay breeze of 15-20 miles per hour
and began the several mile long drive to the main entrance gate. As I began my drive the ground fog was lifting and the air felt a bit cool
I saw a Black Vulture on a powerline pole. At the next pole I saw a Crested Caracara
and then a large Red-tailed Hawk. Things looked very good for this trip with birds active everywhere
I had already seen 14 different kinds of birds. Since I’m not a “good birder”
I knew that four or five more kinds of birds had eluded my meager identification skills. A large
to the right of me revealed Roseate Spoonbills
I parked my car near the entrance gate and waited for Dave. As I waited
Snow Geese flew overhead going to breakfast
somewhere to the east. He arrived shortly
and we took a walk through the butterfly garden
and Skullcaps showing their colored glory in small doses
We then walked to a small pond. Before we knew it
we had seen more than a half-dozen Bullfrogs. Their heads were barely out of the water. Some called “reep” as they leaped from the side of the pond into the water because we had disturbed them
flitted through low vegetation. Blue-gray Gnatcatchers pulled Giant Ragweed seeds from dead plants right in front of us. These were wonderful signs that Nature continued despite the eruption of human arrogance and craziness that my daily life revealed
After walking back from the butterfly garden and frog pond
we loaded up our gear and I backed out of the parking lot to begin our auto tour. Or I began to back out. To the left of our parking space is a building where you can buy t-shirts books
about birds and Nature. There also are several signs at the end of the parking lot before you get to the building
red and black bird that I knew instantly. Several years before I had seen this bird in the butterfly garden. The Vermillion Flycatcher looked straight at me
as if to welcome me to Anahuac for the day
I pointed out the Vermillion Flycatcher to Dave and we both ooded and aahed. I felt like an old friend had surprised me with his/her presence. I recovered my cool and we began our auto tour. As we drove to the freshwater marsh
we saw a Great Blue Heron and Red-winged Blackbird
familiar denizens of this watery landscape
We circled Shoveler Pond and nearby areas and saw countless birds including:
Swamp Sparrow; the birds seemed endless as we continued our tour
dozens of American Alligators either sunned themselves on vegetated islands or propelled themselves along in the water like submarines in search of prey. Down near East Bay
we saw two White-tailed Kites as we drove along West Line Road
with a few bright blooming goldenrods and Fire-wheels lining the right-of-way
We finished the trip by driving into the town of Anahuac and having a Tex-Mex lunch. What a great day and what a great way to loosen the bonds of civilization and slip into the comfortable and varied topography of Anahuac National Wildlife Refuge. Always a pleasure and delight for these sore eyes and quiet longing ears

At the height of core alligator season in Texas
this small town celebrates its gator overpopulation with deep-fried alligator on a stick and competitions for the longest gators
If you buy something from an Eater link, Vox Media may earn a commission. See our ethics policy
The blaring horn sounds, and a line of pickup trucks pull in. These signs mean the hourly Great Alligator Roundup, held at Anahuac’s annual Texas Gatorfest
pull out an alligator they caught and killed earlier that morning roughly a mile from park grounds
“I think this one is the biggest of the day,” someone whispers
as officials string up the gator’s lifeless body to weigh and later display it for all festival attendees to see
the hefty 602-pound reptile is lowered to the ground; it measures just over 13 feet from snout to tail
On-site experts estimate that it could have been around 100 years old — a dinosaur in its own right
it’s all a part of the town’s historic process to keep its alligator population under control
Since 1987, Anahauc, the official alligator capital of Texas, has held the Texas Gatorfest, a celebration dedicated to the area’s most popular — and overpopulated — animal. The Lone Star State designated Anahuac, a small Texas town where alligators outnumber people three to one
“There are no predators that prey on the alligator
They would go unchecked if it wasn’t for this festival,” says Samantha Humphrey
the public information officer for Chambers County
and Anahuac officially launched its alligator festival to bring awareness to the mission
“We love them,” Humphrey says of alligators
“We have a whole festival dedicated to them
and we want to make sure we’re doing the best we can for them to have a healthy future.”
overlooking marshland where actual alligators rove
Gatorfest draws in around 30,000 people from around the state for gator-themed activities
gator-themed souvenirs from various merchants
a barbecue cook-off with an alligator category
The county goes as far as encouraging food stalls to use alligator meat by discounting their vendor fees if they feature gator dishes
a tomato-based stew; alligator nachos; fried gator bites; alligator sausage; and — a crowd-favorite festival staple — deep-fried alligator on a stick
“We want to encourage people to utilize alligators,” Humphrey says
The hourly alligator roundup, however, is the most popular event, when hunters are challenged to bring in the longest alligator for a cash prize. Depending on the season — which, for core counties like Chambers
spans a short 20 days from September 10 to September 30 — and how successful hunters are
the festival could see anywhere from 30 to 60 alligators a day
many of which are typically brought in “fresh,” caught and killed just a few hours before their display
the American gator can measure anywhere from 6 to 14 feet.)
“We’re just trying to conserve what we have by hunting them
and that may not make sense to a lot of people
but you have to take some out of the gene pool to help them thrive,” Foster says
The festival also promotes the sale and sustainable use of alligator meat, with officials and partners particularly adamant that all parts of alligator carcasses, including those featured in the festival’s competitions, are used in their entirety. Porter’s Processing & Alligator Farm
an Anahuac-based company that is considered the largest alligator processing company in Southeast Texas
transforms all Gatorfest catches and around 600 alligators caught during Texas’s core season into edible meat and trophy-worthy hide
Hides sent to a tannery in Georgia are later morphed into leather products or mounts
while the meat undergoes a lengthy process at Porter’s
and then vacuum-sealed in 1- or 5-pound packages
Much of the alligator’s white meat is specifically packaged for restaurants
while the red meat is sent to meat markets
where Hedges says it’s typically used in sausage
as well as restaurants in Kemah and wholesale companies in Beaumont
Hedges says Porter’s also helps with conservation efforts by collecting
