The holiday memorializing the Battle of Puebla has become
an excuse to overindulge in Tex-Mex fare and festivities
While it’s always a good idea to support family-owned Mexican restaurants and taquerias
there are other ways to honor our shared heritage with Mexico and to commemorate a proud moment in Mexican history.
On May 5, 1862, an outnumbered and untrained army of indigenous Mexicans, civilians, soldiers, and Tejanos led by Texas-born Ignacio Zaragoza defeated French invaders on a hill overlooking Puebla
a city eighty miles southeast of the Mexican capital
Victory was short-lived—the French regrouped
and then occupied the country for another few years—but not long after the conflict ended
Mexican immigrants and Mexican Americans in Texas began commemorating the anniversary of the battle that took place in the shadow of the active volcano Popocatépetl
Newspaper stories written in the late nineteenth century and early twentieth century mentioned Cinco de Mayo festivities in towns across the state
Though some gatherings were as simple as carne asada and picnics in public spaces
In 1892, the Sons of Juarez held a festival in San Antonio for Cinco de Mayo, which included a eulogy to Zaragoza, musical performances, and poetry-reading. In its story, the San Antonio Daily Light newspaper confused the date with Mexican Independence Day—a common misunderstanding about Cinco de Mayo
which within Mexico is primarily celebrated in the state of Puebla
(Mexico’s Independence Day is September 16.)
Beeville’s 1903 party was advertised as a town-wide event
to mark the 41st anniversary of the battle
According to the Spanish-language San Antonio paper El Regidor
the day included a dance recital and a speech by Sheriff J. E
They were no big deal,” says Raúl A
associate professor of history at the University of Houston
A 1918 Cinco de Mayo supplement published by La Prensa
featured an image of Zaragoza and the headline “La Inviolabilidad de las Naciones (Invulnerability of the Nations)”
“All these histories are next to and on top of each other
“They’re happening at the same time to the same people.”
like the places that memorialize the Battle of Puebla
reminds us that Texas remains a former Mexican province called Tejas
that braided histories of our state and Mexico
is merely a body of water that runs through a part of the world

Cinco de Mayo has become a day to celebrate Mexican heritage
but before Cinco de Mayo became associated with tacos and margaritas
the day served as a reminder of Mexico's triumph over the French
Celebrated annually, Cinco de Mayo commemorates the Mexican army's victory over the Second French Empire
including people of Mexican American heritage
While Cinco de Mayo honors Mexico's resilience and bravery in the face of strife
"Everyone thinks that it's just party time, it's Corona time," Mario García, a Chicanx historian from the University of California at Santa Barbara, shared in a May 2023 interview with USA TODAY
"It's OK for people to go out and have a good time on a holiday like Cinco de Mayo -- at least they have some sense that it's some kind of a Mexican holiday," García said
We should have Cinco de Mayo events that go beyond partying and drinking
where we call attention to what the history is."
Why is Cinco de Mayo often confused with Mexico's Independence Day?Though many might know the lore behind Cinco de Mayo
it is often confused with Mexico's Independence Day
It is known as the Día de la Independencia in Mexico
Part of the confusion about what Cinco de Mayo celebrates likely stems from the names of the two holidays
which might be harder for some English speakers to say
Cinco de Mayo is much catchier than the day of Mexico's independence (Diez y seis de Septiembre)
Another issue is that not enough American schools teach the importance of Chicanx history and its peoples' contributions to the U.S
"When you study the history of Chicanos and Latinos
"They've been involved in all aspects of American history
almost half a million Latinos – mostly Mexican Americans – fought in the war
And they won a disproportionate number of congressional Medals of Honor."
The Battle at Puebla also occurred more than 50 years after the country broke free of Spanish rule
The reason the battle happened in the first place was because French Emperor Charles-Louis Napoléon Bonaparte wanted to claim Mexico for himself
The French sent troops to force President Benito Juárez and the government out of Veracruz
An outnumbered band of Mexican soldiers faced 6,000 French troops at daybreak in Puebla
at which time Juárez declared May 5 a national holiday
The victory also helped prevent the French from settling in and helping the American Confederacy in the Civil War, according to History.com
Cinco de Mayo celebrations do occur in Mexico
most notably in the City of Puebla; those events don't compare to Día de la Independencia celebrations
it's become an annual celebration of Mexican American culture
It began as a form of resistance to the effects of the Mexican-American War in the late 19th century. The holiday gained popularity during the Chicano Movement of the 1960s and 1970s
because we discover Mexicans resisting a foreign invader," García said
"They link the struggle of the Chicano movement to Cinco de Mayo."
began commercializing the holiday in the 1980s
offering customers "Cinco de Mayo" specials and cocktails
The holiday is now known to some as Cinco de Drinko
and to García as "Corona Day." This Cinco de Mayo
García hopes everyone enjoys their Coronas
but perhaps with a little history lesson to wash it down

Cinco de Mayo History:
a holiday that celebrates the date of the Mexican army’s May 5
1862 victory over France at the Battle of Puebla during the Franco-Mexican War
The day is also known as Battle of Puebla Day
While it is a relatively minor holiday in Mexico
Cinco de Mayo has evolved into a commemoration of Mexican culture and heritage
particularly in areas with large Mexican American populations
Cinco de Mayo is not Mexican Independence Day, a popular misconception. Instead, it commemorates a single battle. In 1861, Benito Juárez—a lawyer and member of the Indigenous Zapotec tribe—was elected president of Mexico
the country was in financial ruin after years of internal strife
and the new president was forced to default on debt payments to European governments
In response, France, Britain and Spain sent naval forces to Veracruz
Britain and Spain negotiated with Mexico and withdrew their forces
France, however, ruled by Napoleon III
decided to use the opportunity to carve an empire out of Mexican territory
a well-armed French fleet stormed Veracruz
landing a large force of troops and driving President Juárez and his government into retreat
6,000 French troops under General Charles Latrille de Lorencez set out to attack Puebla de Los Angeles
Juárez rounded up a ragtag force of 2,000 loyal men—many of them either Indigenous Mexicans or of mixed ancestry—and sent them to Puebla
The vastly outnumbered and poorly supplied Mexicans
led by Texas-born General Ignacio Zaragoza
fortified the town and prepared for the French assault
Lorencez gathered his army—supported by heavy artillery—before the city of Puebla and led an assault
The battle lasted from daybreak to early evening
and when the French finally retreated they had lost nearly 500 soldiers
Fewer than 100 Mexicans had been killed in the clash
The same year, Austrian Archduke Ferdinand Maximilian, who had been installed as emperor of Mexico in 1864 by Napoleon, was captured and executed by Juárez’s forces
Puebla de Los Angeles was renamed for General Zaragoza
who died of typhoid fever months after his historic triumph there
Cinco de Mayo is primarily observed in the state of Puebla
where Zaragoza’s unlikely victory occurred
although other parts of the country also take part in the celebration
recreations of the Battle of Puebla and other festive events
May 5 is a day like any other: It is not a federal holiday
Why Do We Celebrate Cinco de Mayo in the United States
Cinco de Mayo is widely interpreted as a celebration of Mexican culture and heritage
particularly in areas with substantial Mexican-American populations
Chicano activists raised awareness of the holiday in the 1960s
in part because they identified with the victory of Indigenous Mexicans (such as Juárez) over European invaders during the Battle of Puebla
Mexican folk dancing and traditional foods such as tacos and mole poblano
Some of the largest festivals are held in Los Angeles
Many people outside Mexico mistakenly believe that Cinco de Mayo is a celebration of Mexican independence
which was declared more than 50 years before the Battle of Puebla
Independence Day in Mexico (Día de la Independencia) is commemorated on Sept. 16, the anniversary of the revolutionary priest Miguel Hidalgo y Costilla’s famous “Grito de Dolores” (“Cry of Dolores,” referring to the city of Dolores Hidalgo
a call to arms that amounted to a declaration of war against the Spanish colonial government in 1810

expected to draw the estimated 15,000 revelers who have made it one of the largest carnavals on the East Coast
The Carnaval de Puebla, the big annual celebration of Mexican culture in South Philadelphia
has been canceled this year out of fear that ICE might target the event to make immigration arrests
who serves on the carnaval committee and is active in Philadelphia’s Mexican community
given the worries people expressed for themselves or undocumented family members
“People don’t want to participate because of what’s going on,” she said Tuesday
“People worry if they show up for the carnaval and ICE is waiting for them.”
Organizers were also having trouble raising money to put on the event
officially known as El Carnaval de Puebla en Philadelphia
While there are up-front costs associated with the daylong festival
it brings tourism dollars to Philadelphia as people from across the region and beyond come to enjoy food
“We didn’t want this to happen,” Renteria said
noting the carnaval has a nearly two-decade history
This is the Carnaval de Puebla — it’s like a family reunion.”
ICE officials in Philadelphia did not immediately reply to a request for comment
Trump has embarked on what he promises will be the largest deportation campaign in U.S
with millions of migrants sent out of the country
reports of ICE activity have ricocheted across the region
driving anxiety in immigrant communities and causing some people to change their routines and daily lives
Immigration and Customs Enforcement has made high-profile arrests at Philadelphia businesses in recent months
and the fear of detention and deportation has led some workers to stay away
In 2017, during the first Trump presidency, Philadelphia organizers of Carnaval de Puebla canceled the event for similar reasons
fearing that a large gathering of Mexican people could become a target for immigration enforcement actions
In Philadelphia, an estimated 47,000 residents are undocumented, part of 153,000 statewide, with an additional 440,000 in New Jersey
In mid-2023 the United States was home to about 13.7 million undocumented immigrants
as calculated recently by the Migration Policy Institute in Washington
The numbers of undocumented migrants coming from many countries have only increased
but the Mexican population has ebbed and flowed
It shrank after the Great Recession of 2008-09
That increase occurred because of economic instability in Mexico, even as the U.S. economy strengthened after the pandemic
Violence in Mexico also caused people to leave
They include a reenactment of the battle in Puebla where the Mexican army repelled invading French forces in 1862
as well as other significant historical moments
like the country’s first Christian wedding in the 1500s
Organizers now are trying to arrange a smaller, alternate event at the Tamalex Bar & Grill — and hoping this pause on the event won’t last four years
“It’s truly unfortunate that the committee had to cancel this year’s event,” Renteria said in an email
“This tradition means so much to our community
and we’re hopeful that the situation will improve in the coming years so we can once again bring El Carnaval de Puebla back to Philadelphia.”

In some ways, the city of Puebla, Mexico feels like a gigantic, open-air museum. Its historic downtown, a UNESCO World Heritage Site
Planning a trip to Puebla provides memorable opportunities to connect with culture
as I discovered during my most recent visit
the city of Puebla is the capital of the eponymous state
It’s the birthplace of several quintessentially Mexican traditions
Talavera pottery and the original Cinco de Mayo celebration
making it even more fascinating to explore
Following are more insights into this special destination
Puebla’s international airport is served by nonstop flights from Houston
but the destination’s proximity to Mexico City makes it an easy side trip from that larger — and better connected — metropolis
time-pressed travelers do Puebla as a day trip from Mexico’s capital
but the number of sights to see — as well as the often-heavy traffic between the two cities — makes overnight trips a much more enjoyable option
travelers can choose from transportation options such as private transfers and public buses
which depart from multiple bus stations in Mexico City
including the one at Benito Juarez International Airport
My husband and I took a first-class bus on our latest trip and found it quite comfortable
After taking a taxi from Puebla’s bus station to the historic downtown
but I never fail to be impressed by the sheer size and number of Puebla’s historic architectural treasures
The Zocalo — the leafy central square — is the logical place to start a walking tour
It sits next door to the city’s massive cathedral
which dates to 1575 and features the tallest church towers in Mexico
The cathedral’s ornate interior hints at Puebla’s importance and wealth during the colonial era
Nearby, Palafoxiana Library was established in 1646 and is considered the first and oldest European-established library in the Americas
Its vaulted ceilings and artwork showcase its original religious roots
While the cathedral may be the city’s most iconic religious edifice
many consider Capilla del Rosario (Rosary Chapel) in the Santo Domingo church just a few blocks away to be the most beautiful
the 17th-century chapel has an elaborate interior of gold
I also recommend visiting Museo Amparo
a museum and cultural center that deftly blends exhibits of historic art and artifacts with contemporary and modern art
it’s also home to a rooftop cafe and terrace that’s a nice place to stop for lunch or refreshments
There are several worthwhile reasons to venture beyond the limits of Puebla’s city center. History and art lovers will want to make time for Museo Internacional del Barroco (International Baroque Museum)
a spectacular venue set in an eye-catching modern structure designed by Japanese architect Toyo Ito
Taxi and Uber provide the most efficient ways to arrive at this facility
which hosts large permanent and temporary exhibitions of baroque artwork
Farther outside of the city, the town of Cholula is another must for first-time visitors. This small town, a designated Pueblo Magico (Magical Town)
and by volume is ranked as one of the world’s largest pyramids
In a bold statement of disrespect by the European colonialists
a small Catholic church was built atop the pyramid in the late 16th century; it’s still open to the public
as are tunnels that run through the pyramid
Cinco de Mayo is used by businesses as a marketing opportunity; some people mistakenly believe that it’s Mexico’s independence day
this special day is celebrated for what it is: a commemoration of Mexico’s victory over French invaders during the Battle of Puebla on May 5
The annual event includes a grand military parade and a variety of festivities around the city; advance booking is recommended for hotels during that time
One of the newest hotel brands in the city is Voco Royalty Puebla Downtown, an IHG property set in a historic building across the street from the Zocalo. While the hotel doesn’t offer cooking classes, it’s within walking distance of Casa Mexicana
a facility that hosts culinary workshops and tours
When it comes time to search for souvenirs
some of Puebla’s most interesting shopping takes place right on the sidewalk
a variety of vendors sell everything from handmade crafts to original artwork and vintage collectible items
Callejon de los Sapos (Alley of the Frogs) is a picturesque street and a good place to start any shopping excursion
Those looking for a more structured visit may want to consider booking a guided tour with companies such as Vibe Adventures, which offers one-day tours that include visits to downtown Puebla and Cholula, and Eat Mexico
which offers food and culture tours of the city

New Jersey for two of its three Phase One games including James Rodríguez and Club León's visit
The identities of the three Liga MX teams New York City FC will face in the 2025 Leagues Cup are now confirmed, with Club Puebla, Club León, and Deportivo Toluca FC officially lined up as opponents during Phase One of the reformatted tournament
Two of the three games will be "away" matches for New York City, though they just have to travel across the Hudson River to Harrison, New Jersey. Puebla and León will both face NYCFC at the newly-dubbed Sports Illustrated Stadium
That will be followed by a marquee visit from Colombian star James Rodríguez and his Club León teammates, scheduled for Friday, August 1 – with the James connection already being promoted by New York City FC over on Twitter
Expect ticket sales to be decent for a Friday night game with him and the rest of his León teammates in town
NYCFC then plays its final of the three Phase One games inside New York City at its usual home
Toluca steps onto the Yankee Soccer Stadium pitch for the first time on Tuesday
August 5 to round out the not-quite-Group Stage
Part of the new setup for this tournament involved splitting the field of 36 teams into two geographic regions
and then ranking the teams within those regions based on their 2024 regular season performances in MLS and Liga MX
NYCFC gets an opponent from each of the three tiers – Toluca is the highest-ranked Mexican side in NYCFC's group
while Puebla is the very lowest-ranked team
To advance to the Knockout Stage of this year's tournament
NYCFC will need to put up enough points to be one of the Top 4 MLS teams in the competition – while MLS teams are only playing Liga MX sides during Phase One
they're competing against their fellow MLS sides in one big league table to determine who gets the league's four spots in the Quarterfinals
To get back to the Quarterfinals for a second straight year
NYCFC will have to get through a trio of potentially tricky Liga MX opponents
Toluca finished sixth in the overall table during the 2023-2024 season
then followed that up by placing second during the Apertura portion of the 2024-2025 season
They currently sit in eighth place through six matches of the ongoing Clausura half of the 2024-2025 campaign
and they're one of the top-ranked Liga MX sides who benefit through hosting privileges and less travel
Toluca gets two games in the classic New Jersey/New York area
as they also will host CF Montréal in Harrison
NJ at Sports Illustrated Stadium as part of their Phase One schedule
two assists through five matches so far) and they've jumped out to an unbeaten start to the Clausura after placing 11th in the Apertura and ninth in the overall 2023-2024 table
Puebla was dead last in the 2023-2024 Liga MX table
but they climbed up to 15th during the Apertura of 2024-2025 and are a similar 14th through six Clausura matches
New York City's MLS rivals CF Montréal and Columbus Crew will play these same exact Liga MX opponents during each of their Leagues Cup Phase One campaigns
That means it will be easy to compare and contrast the point totals each of NYCFC
and the Crew take from their three games – so it's kind of like a big six-team group
but we will continue to not call it a group stage
Here's why the goal Santiago Rodríguez scored against Tigres should have been included among the Best Goal nominees announced by Leagues Cup this week
The four best teams from MLS will face the four best teams from Liga MX as determined by Phase One (don't call it a group stage)
A slimmed-down version of the tournament will feature 18 clubs each from MLS and LIGA MX

The two San Diego FC attackers earned spots on our latest MLS Player of the Matchday ballot following the expansion team's huge 5-0 home win
A lethal low strike from Julián Fernández and a strong showing from a shorthanded defense propelled New York City FC to a 1-0 win over FC Cincinnati at Citi Field
The stalemate was almost broken by 14-year-old McKenna Whitham of Gotham FC

Thoughts on New York City FC's second straight win
and the potential to make it a three-match streak next weekend

PUEBLA - Volkswagen de México has started production of the Tiguan 2025 at its Puebla plant
marking the beginning of the third generation of this successful model
The SUV's first destination will be the Mexican market
reaffirming the country's importance in the German brand's strategy
the Puebla plant has produced more than 1.3 million units of this compact SUV
Volkswagen confirms its position as a key player in the North American region
“The first production destination for the new Tiguan is Mexico
which confirms the importance of the local market for the Volkswagen brand's strategy in this segment,” said the automaker in a statement
the Puebla plant has strengthened its production capabilities by building a new paint shop equipped with 100% electric technology
capable of painting up to 90 vehicles per hour
such as the replacement of dies and the installation of elevated tunnels for the transfer of bodywork
These changes made it possible to integrate the New Jetta and New Tiguan processes into a single production segment
reaching a combined capacity of more than 1,000 units per day
The Tiguan 2025 is built on the MQB evo platform
an evolution of the Transverse Modular Platform
which optimizes manufacturing through shared components
This model features a revamped body with a shorter rear overhang
and a more spacious and adaptable interior
technological advances were incorporated as an infotainment system with larger screen

has been structurally restored after its dome collapsed during the 2017 earthquake
The devastating Sept. 19, 2017, earthquake in Puebla
killed 370 people and injured thousands after dozens of buildings collapsed in the greater Mexico City area
Now, almost a decade later, one beloved piece of Mexican history that was damaged in the quake has been restored
Built in 1668 by the Catholic Order of the Redemption of the Captives
the temple is of historic significance in the region as it was part of a convent built in 1619
when the Mercedarians expanded their presence in New Spain supported by residents of Spanish descent
The restoration works were carried out between September and December 2024
by the Ministry of Culture of the Government of Mexico in collaboration with specialists from the National Institute of Anthropology and History (INAH) under the National Reconstruction Program (PNR)
artisans and tradespeople worked together to reconstruct the dome using historical photographs
With a diameter of 8.5 meters and a height of 6 meters
the dome consists of eight segments along with skylights (windows) and a lantern
The workers preserved the dome’s original style and appearance while enhancing its structural security
noted that the temple “was restored in several stages
and some vaults were consolidated.” The dome area was temporarily covered to allow parishioners to continue using the area while specialized analysis and administrative procedures for its restoration continued
Villareal said that the biggest challenge was keeping the shape similar to the original
slimmer structure to provide greater support and security
He further explained that restoration efforts focus on recovering the original values
and construction materials of historic structures
while documenting the interventions made during a restoration process
the restoration is evident in the exterior moldings of the dome
This allows future historians or restorers to easily identify the original and reconstructed elements
there are some pending works that will be done in the future with support from the community
Villareal said that some of these works include floor renovation
The official handover of the building took place on Feb
A mass was celebrated in honor of the INAH Puebla Center
with participation of the federal and local authorities that contributed to the temple’s rehabilitation
The Puebla plant has eliminated the use of natural gas and has an 'ability to paint up to 90 vehicles per hour while maintaining high environmental standards.'
PUEBLA - In light of the imposition of 25% tariffs on all steel and aluminum imports to the United States
the National Chamber of the Transformation Industry (Canacintra) in Puebla warned that six sectors will be affected
These are the following sectors: electrical appliance manufacturing; automotive and auto parts; electronic products; agro-industry or food (packaging
etc.); tool manufacturing; machinery and equipment
commented that while the United States is hurting itself
they will also resent President Donald Trump's tariff measures
He indicated that there will be a reduction in the competitiveness of local industry; regional supply chains will be affected; in addition
production costs will increase in all sectors
He commented that the main concern is layoffs and salary cuts
of which they still cannot calculate the impact in numbers until the tariffs are applied
He indicated that the red lights are on in Puebla's industries and that in the rest of the country there is the same reserved prognosis
economic growth will be encouraged in 2025
which goes against the plans that were in place in the different industrial sectors,” he said
Sosa Spinola said that in order to try to counteract the effects of aluminum and steel tariffs
Puebla's industries will have to rethink their manufacturing processes with greater automation
reducing the human factor within the company
He indicated that expansion projects of companies in Puebla would be stopped
so it is up to the authorities to intervene
He also recalled that this would have an inflationary effect for the United States
since they do not have the capacity to cover the demand for products within the country
making life more expensive for their citizens

Dell Med psychiatry residents team with Benemérita Universidad Autónoma de Puebla faculty at a local psychiatric hospital as part of a Spanish language immersion elective
Dell Med psychiatry residents join Benemérita Universidad Autónoma de Puebla medical students in their psychiatry course
“We hope to expand our collaborations with the BUAP medical school psychiatry department
M.D., chair of the Department of Psychiatry and Behavioral Sciences at Dell Medical School
who has expressed support for this program since its inception
“Our hope is to develop this program into a two-way street in which students and residents at BUAP are able to visit Dell Medical School on a regular basis
The Spanish immersion that our residents receive will have immediate impact
as a sizeable proportion of our patients in our hospital and clinic settings are Spanish speakers.”
“Training can be overwhelming, and the collective experience is often what gets us through each day,” Selinger said. “One of the most surprising things to me was how much the residents enjoyed connecting with the residents in Puebla and socializing with them. This will help build their community of practice for the future.”
Left to right: Aaron Snodell, Hailey Barab, Minou del Cármen Arévalo Ramírez and Itamar Shapira.
In Puebla, the psychiatry residents shadowed Mexican residents at the hospital and offered mutual support in preparing lectures for students. They met for coffee, lunches and final week send-offs. And they’re still in touch with their counterparts over WhatsApp, agreeing that these relationships can positively impact training and patient care in both countries over the long term.
The hope is that the language elective continues — not only for psychiatry residents but also as a gateway to reciprocal exchange for mental health trainees and more from Puebla to visit Dell Med under the AMPATH partnership.
“Global Health electives expand our communities of practice so we make new connections and feel less alone,” Selinger said. “Experiencing the practice of psychiatry in a different country can make us see new ways of doing things.”

he explains what made him embrace Kensington and why the fear of immigrants is just plain wrong
I’ll call you Chef because after watching The Bear
I feel like that’s what I’m supposed to do.[Laughs] Thank you
My house is just starting to think about Christmas
but I know that another holiday has been on your mind of late: November’s Day of the Dead
Is this holiday actually a big deal in your motherland?Oh yes
The only thing maybe bigger countrywide is Mexican Independence Day
it’s all about memories and respect for those who have passed away
It’s a time to connect with them as well as with those who are still living
And what form does the Day of the Dead take in your house?Every year
we dedicate an altar to the people who died from our family but also especially here in our Kensington community
We encourage people who have lost family members in Kensington to come and put a picture of their loved ones on the altar at our restaurant
And I put mole and tamales and el pulque — this is a drink we make from the agave sap — on the altar
Given that Mexico has such a huge Catholic population
I can only assume that Christmas is also a major celebration. Not really
Our big religious holiday is Three Kings Day on January 6th
and whoever wins the toy has to make tamales and atole for the family on February 2nd
Cantina is going to be three years old this February
what did people say when you told them you were opening a restaurant in Kensington?People told me I was crazy
but Kensington … I had relatives tell me to just give them all of my money instead of me throwing it away
but the challenges are different every day
You face things you’ve never had to face before in other restaurants
Dionicio Jiménez heating things up in the kitchen at Cantina la Martina / Photograph by Kyle Kielinski
Tell me about your hometown.San Mateo Ozolco
there were maybe two or three thousand people there
So you might have to walk to get to the next town
My earliest memories from there are taking care of the animals
We planted fava beans and all kinds of other vegetables
And what we planted would become what we ate for the next season
When did you come to the United States?I’m 48 now
I did good in school in Mexico and wanted to go to university
so I traveled all over for a couple of years taking whatever work I could get
He was in Philadelphia working as a food runner for Stephen Starr
and then go back to Mexico and use our money to open a restaurant
And how did you actually get here?Illegally
I took a plane from Mexico City to Tijuana
Then I walked through the desert and into Arizona
My brother sent some guy in Arizona money to drive me to L.A
and then buy me a plane ticket to Philadelphia
and I got on that plane without having any idea what would happen next
What was your first impression of Philadelphia?Well
my brother told me a lot about Philadelphia
so I kind of had an idea of what the city would be like
But what I didn’t expect was how cold it was
Where did you find work?My brother knew someone who used to work for Philippe Chin at the Locust Club
and I was working the next morning as a dishwasher at that restaurant
this guy named Marc walks in to see Philippe
He saw me washing dishes and asked me if I wanted him to teach me some cooking tricks
I was originally thinking I wouldn’t stay in Philadelphia for long
I realized I should throw myself 100 percent into the kitchen there
I told Chef Marc I wanted to learn more and more
He also sent me up to work in New York with Mario Batali and Rocco DiSpirito
Before I made my decision, I would come up to the neighborhood and see certain things that would scare me away. But then one day, I came in the morning just before school was starting, and I saw all of these families everywhere. All these kids and their parents, and I think seeing that, seeing that this really was a community, was what sold me.
Speaking of kids, do you have any?I do. I just got married to my current wife three months ago. I have four kids from my previous marriage, and my wife — her name is Mariangeli Alicea Saez — has three from her previous marriage.
Seven kids! You’d better sell a lot of tacos. We try. [laughs] My wife works with me and does so many things, including the design. She was an architect in Puerto Rico and then here in Philadelphia.
You opened your second restaurant — La Baja in Ambler — just a few months ago. Has the community there embraced you?I cannot complain. We really had to open La Baja. We needed to diversify our income so that we can keep Cantina floating and stay with the people of Kensington. So we applied for and got various pop-up permits at Penn’s Landing and in Fishtown and also opened La Baja. The money from these helps us with Cantina. I do not want to ever leave Kensington.

Is there something you’ve served at Cantina that most Americans haven’t encountered?Cow’s head tacos. When we do cow’s head tacos at Cantina, we clean the whole head, mix the meat, the brain, the cheeks, the tongue, the eyeballs … everything! And you can choose to have it served with the actual head on your table. Otherwise, we have a big table that we put all the heads on so everyone can see.
Mexico is high on my list of travel destinations. I constantly hear how dangerous it is, but somehow I think that’s a lot of fearmongering.Depends on where you’re going. Just like in Philly! What kind of trip do you want?

“Early on the morning of September 16, 1810, Father Miguel Hidalgo y Costilla summoned the largely Indian and mestizo congregation of his small Dolores parish church and urged them to take up arms and fight for Mexico’s independence from Spain,” according to The Library of Congress.

see Cinco de Mayo as a day to drink tequila
But the American celebration of the day has much deeper roots than a day to party
“The celebration of Cinco de Mayo began as a form of resistance to the effects of the Mexican-American War in the late 19th century. The holiday gained popularity during the Chicano Movement of the 1960s and 1970s,” USA TODAY reported on Cinco de Mayo 2023
Like with many other minor holidays in the U.S
it only took a decade or so to morph into a highly commercialized opportunity for big companies to rake in some extra cash
especially by beer companies and restaurants that will offer Cinco de Mayo specials and cocktails.”
Taco Bell has yet to announce how they’re celebrating Cinco de Mayo this year, but last year the chain ran a deal for loyalty rewards members to get five tacos for $5 on the holiday

Tijuana Flats, another Tex-Mex restaurant chain, has also not yet announced its plans for Cinco de Mayo 2025, but offered a ton of deals last year. For Cinco de Mayo 2024
the restaurant chain had a $5 menu that included the Tijuana Trio

have developed an unexpected passion for crafts
with the plethora of stunning “artesanías” the country has to offer
Nowhere is this more obvious than in the town of Cuetzalan
“Crafts” is not nearly adequate enough of a word to do justice to Mexican artesanías
It brings to my mind childish “arts and crafts” or knick-knacks from a fair
artesanías are more akin to exquisite handmade arts — very intentional creations for display or usage
often using near-ancient methods passed down from generation to generation for centuries
It’s particularly delightful when one encounters talented artisans experimenting with modern designs using traditional production techniques
It was this allure of artesanías and fascination with indigenous culture that drew our trio — Lourdes, Bethany
though crafts as I had imagined them were not quite what we found there
We set out from Mexico City on a Thursday morning
I had packed my habitual giant bag of snacks: raisin and walnut baguettes from Rosetta
dark chocolate and a relatively unappetizing Cliff bar for emergencies
spend a night and continue onward to Cuetzalan the following morning
Puebla proved to be a treat. We enjoyed a tourist-free jaunt around the city, browsed antique markets, dined at the delightful Oaxacan restaurant Casa Bacuuza and enjoyed several hours sunning ourselves at the hotel’s rooftop pool. In the morning, we stopped at the glass factory Fábrica de Vidrio la Luz
and after excitedly ogling a Mexican actor we recognized from a Netflix show from behind a rack of margarita glasses
The roads became winding and misty as we ascended to the city
and chickens mingling on the side of the road
About an hour and a half from our destination
we stopped at a small roadside vendor to stock up on some of the crunchiest and most flavorful apples we’d ever tasted
dozens of kilometers of winding roads and 38 songs later
Being the adventurous exploradoras we were
we had opted for an eco-hotel run by indigenous women
which was very much akin to cabins or glamping
other accommodations might be more comfortable for those such as myself
mosquitoes and the excessive moisture that creeps into such structures
I had romanticized the experience in my mind
but nevertheless the surrounding nature was undeniably lovely
Having donned our raincoats and with our belongings situated in our cabins
we ventured out into a storm to find a glass of strong mezcal and a cozy restaurant for dinner
While not number one rainiest spot in the country
Cuetzalan is still one of the rainiest areas in Mexico
Set high up in the Sierra Norte hills in northern Puebla State
the region enjoys a warm and humid climate due to its proximity to the Gulf of Mexico
jungle-like vegetation and numerous waterfalls
cobblestone streets carefully designed for grip in the perpetual dampness
It’s built along a multitude of sloping boulevards
As Bethany would later aptly caption an Instagram post accompanying a photo of the town
Our first evening led us to Taol
an exceptional restaurant efficiently run by what seemed to be an all-woman team
set in a mystical indoor-outdoor space where we watched the rain from a covered garden patio as we sipped our cocktails
We devoured chicken over warm banana bread bathed in mole
queso sizzling over cecina and steaming corn tortillas
overstuffed and guided by the glow of mezcal in our bellies
we stopped into a very local bar — think Cheers
but most likely someone’s converted living room — to enjoy a glass of the region’s traditional liquor
Nahuatl for“medicine of the heart,” is very much like Cuetzalan — a mix of everything
It’s rumored to cure everything from heartache to illness
and it certainly provided a hearty start to our adventure as we made our way back to our lodgings
Cuetzalan’s “bread and butter,” our guide Ricardo would inform us the next morning
Cuetzalan has largely escaped commercialization
It’s a study in contrasts: charming yet gritty
small-town Mexican rustic crossed with remnants of Spanish colonial architecture
Many of the men wear ranchero-style cowboy hats and leather belts
while the women don colorfully embroidered white huipils
It’s picturesque yet “real.” Live music blasts from quinceañeras set in giant barn-like halls while
in the town square next to the incredibly opulent Parish of St
as families share a meal together in neighboring restaurants
a 19th-century monastery surrounded by a gloomy cemetery hosts murmuring lovers seated among the parapets
while cemetery visitors pray at the graves of their deceased loved ones
There is so much going on that it’s almost absurd
I was not opposed when Lourdes — a bit of a daredevil and adrenaline junkie — suggested we embark upon a 6-hour tour of some of Cuetzalan’s caves
The tour would encompass several ziplines hundreds of meters above Cuetzalan’s valleys
descending 60 meters by rope into the impressive Chichicazapan cave
we explored Cuetzalan’s famed Sunday market
The region is renowned for its fragrant coffee
which is grown on plantations in the surrounding hills
It’s also celebrated for its textiles
including intricately embroidered blouses and quechquemitls (one-piece shawls) created using traditional techniques like back-strap loom weaving
chasing a lead from a staff member of our hotel
we passed through the tiny town of San Miguel Tenextatiloyan — nicknamed “the town of clay pots.” The town is rumored to have been producing clay artesanías since pre-hispanic times and it did not disappoint
The handmade clay pieces were a crafts-lover’s dream
So the next time you find yourself in need of a weekend escape
It isn’t just a destination: it’s an unforgettable escape filled with authenticity and adventure that will throw your senses into a tizzy
Just remember to pack your sense of humor and an umbrella
The Tijuana Xolos will face Puebla at the Estadio Cuahtemoc this Friday
Club Tijuana is coming off a crushing 2-1 loss against FC Juarez at home
which has really complicated the playoff hopes for this season
The Border City Dogs have 10 regular season games left in this campaign and only four games left at home
The Xoloitzcuintles have struggled on the road historically
and it has been no different with manager Juan Carlos Osorio
Of the six road games remaining this season
this is definitely one of the more winnable ones against an inconsistent Puebla team
Puebla only has one win this season and is coming off an embarrassing 3-2 loss against Atlas
La Franja was winning the game against Atlas 2-1 and went on to concede two unanswered goals in stoppage time
Former Xolos manager Pablo Guede leads Puebla but is now in the hot seat after losing the game against Atlas in that fashion
Former Xolos fullback Brayan Angulo will be back for Los Camoteros after serving a one-match ban
who is arguably Puebla’s best player
will be unavailable for this match due to an injury
New signings for Club Tijuana like Shamar Nicholson
and Jackson Porozo are yet to fully adapt to Liga MX play
This adaptation process is not always straightforward
and it will be interesting to see if any of these players finally hit their stride in this match
Raul Zuniga has certainly hit his stride this season
with four goals scored in five games as a starter
Zuniga is at the forefront of this Tijuana attack and other players like Efrain Alvarez have also played well
but the team as a whole has lacked consistency
The backline has especially struggled as it has given up 17 goals in seven games played
Juan Carlos Osorio’s team has been left vulnerable to counter-attacks at times
and the goalkeeping situation is very unclear
Osorio also picked up a red card in the game against FC Juarez and will not be on the sidelines in this match against Puebla
All games moving forward are vital in Xolos’ season
if the border city club wants any shot at a playoff spot
