ASHEVILLE - A neighborhood dive bar’s extensive renovation project to improve guest experiences from entertainment to dining has included the introduction of a new restaurant concept
Chef Luis Martinez and Henry Padilla’s common respect for Mexican food and corn led them to partner on the new taqueria focused on heirloom corn from places like Mexico
“Heirloom corn is alive and we’re still thriving from it,” said Martinez
a food import and distribution company that sources ingredients from growers and businesses indigenous to Mexico and supports its native-led agriculture and tourism industries
said he intends for Taqueria Rosita to be a sustainable business built on tradition
Martinez said the idea is to bridge between different cultures and continents to showcase the diverse ways corn is used beginning with classic Oaxacan cuisines and evolving into other recipes
“We’ll be able to take something different that hasn’t been done here and run by people of color and migrants,” Martinez said
“It isn’t intended to be just a taco place
It’s not a lot of places where we – Oaxacans – can meet

But the Food Shed co-op is not the only new grocery store in the McHenry County area. Carniceria La Rosita in Crystal Lake will open a much larger store in town, while new grocers KD Market in Crystal Lake and Fresh Market in Algonquin also plan on opening this year

Construction of the 9,000-square-foot store started in July after nine years of raising funds

“I think a lot of people were aware of us but holding out,” she said
More than 100 local vendors already are signed on to sell produce and other fresh foods

Mallory said Sesame Place's statements showed "gaslighting and complete disrespect." She also called on SeaWorld, who owns and operates the Sesame Place theme park, to speak up and take action.
USA TODAY reached out to SeaWorld for additional comments on Thursday.
In addition to what the Brown family experienced on Saturday, LaMarr said, his office – as well as Mallory's office and the office of civil rights lawyer Ben Crump – has since received numerous reports from families who say they have experienced similar, racist incidents at the theme park over the years from various costumed characters.
"We’ve come to learn that what took place Saturday is not an anomaly, but what we’ve seen is business as usual – to deny, to defend and to delay accountability," LaMarr said.
In a statement sent to USA TODAY Thursday evening, Sesame Place wrote that, "We sincerely and wholeheartedly apologize to the Brown family for what they experienced. To be very clear, what the two young girls experienced, what the family experienced, is unacceptable. It happened in our park, with our team, and we own that. It is our responsibility to make this better for the children and the family and to be better for all families."
Sesame Place also said that it had been in contact with the Brown family through LaMarr, and had offered to meet in person. Sesame Place maintained that the park was "taking action and are reviewing our practices to identify necessary changes" – including the mandatory training for all employees. The statement did not address the family's call for the Rosita performer's firing.

The Tarragona brewery, Rosita, has launched a new craft beer using the leftover cereal from the Kellogg’s factory located in the nearby town of Valls. The final product is the result of an objective to reduce food waste and create an intriguing and tasty new beverage.
The agreement between the breakfast makers and beer brewers sees Kellogg’s send surplus supplies of their popular Choco Krispies cereal, also known as Coco Pops, to the La Gardènia brewery in Alcover to make the new drink.
Kelloggs’ aim is to achieve a 50% reduction of food waste before 2030, according to sources of the company. The leftovers they are sending to be turned into beer are fit for human consumption but cannot be sold due to variants of weight compared to what is indicated on the label, or for damage to the packaging.
"It is inevitable that during the production process a certain amount of product is discarded, our goal is to minimize this waste and, whenever possible, to reuse it for human consumption," says Amparo Lobato, head of Corporate Affairs at Kellogg’s in Spain.
It is about "giving a second life to foods with a craft beer made in a sustainable way," Lobato points out, noting that cereals are left over from the production process, but that they are in perfect condition.
The rice produced by Kellogg comes from the Ebro Delta and is processed at the factory located in the industrial estate of Valls. In the neighboring municipality, Alcover, there is the La Gardènia brewery, specialized in the production of artisanal beer produced in a sustainable way.
Given that rice is perfectly suited to combining with malt, a fundamental basis for brewing beer, Kellogg’s proposed giving the spare chocolate toasted rice to the brewery, and tests for the perfect recipe have gone on for almost a year.
"Using Choco Krispies in the making of a beer has been a fun challenge, which we feel very proud of because we are collaborating with a sustainable project that contributes to the zero waste objective," says Pep Pérez, a cofounder of the brewery.

Here's a rundown of some restaurants that closed in 2018 and some that project opening in the new year:
a popular and long-established Oldtown restaurant known as the place "where John Steinbeck ate," closed its doors in May
Owners James and Donald Sang decided to retire and close the restaurant
a family member wrote on social media before thanking customers for many years of eating and creating memories at the restaurant.

The restaurant's biggest claim to fame was that John Steinbeck had eaten there more than once
Rosita's Armory Cafe closed its doors
posting a sign outside thanking customers for all the memories
"Carmen wants to thank all of our friends and loyal customers who have supported us over the years," the restaurant posted on its Facebook page
"Your friendship has meant (the) to world to her
She hopes to see you all again one day as she enjoys a well-earned retirement."
The restaurant opened nearly five decades ago and proudly advertised "serving Monterey County a taste of old Mexico since 1970," on its menu

One long-time patron wrote that they first ate there in 1976 and then regularly visited Rosita's for 11 years while stationed at Ft

"A lot of people have asked 'when are you opening a restaurant because your food is so good,'" Alvarez said

and smoked fish which will be flown in from New York weekly
"We’re excited to be opening in Salinas," he said. "I lived in Salinas for a little over 20 years and I was looking for the correct place to open Wild Thyme for many years," he said
"So I’m just glad this opportunity came up and I think it’s going to be a great place for the people of Salinas."

We caught up with Cristina Garcia to find out what the new place will be like..
What made you decide to open the new restaurant
The idea of opening a second venue has been in our minds for the last couple of years but it takes a while to find the right place
We think that there are plenty of people in the area for a new venue with a different product
Battersea clientele are very supportive in terms of independent business and they are also open minded on trying new ideas
Antonio and I will be supervising both restaurants and working very closely
Rosita & the Sherry Bar will be mainly based around sherry and natural food
The menu is organised with several tapas that match with sherries but are not necessarily Spanish
Main courses will be cooked on a Josper oven (Catalan charcoal oven) that we have brought specially from Spain
There will be a variety of local meats and "toro de lidia" as well as Iberian pork
fish and seafood and a list of side orders and home made sauces to choose from
Our customers will have the choice of a meal based on tapas or a couple of tapas to entertain and then a charcoal main course
You'll have the opportunity to sample different sherries for a set price and we are going to have more on the Specials Board
whites and cavas but we have ovbiously given priority to the sherry this time
a Spanish artist that lives in Menorca where we spend a few days of the year to relax
to do a 3 metre painting of ladies (rositas) happily drinking sherry on a sea background. All the rest has been designed with a few of our ideas by Andy Hardwood from Design LSM (Burger & Lobster) and Bluecrow projects (Granger & Co)
