Stella Zylbersztajn–Tzur survived the Holocaust
She’s now 97 years old and is a Polish woman of Jewish heritage
She was placed in Łosice Ghetto in eastern Poland at the age of 15 but was able to escape the ghetto during its “liquidation” on 22 August 1942 when the Jews were rounded up and deported to concentration camps
The majority from Łosice Ghetto – including Stella’s mother – were killed in the Treblinka extermination camp north-east of Warsaw
Stella contributed to 23 Poles being honoured with the title of ‘Righteous Among the Nations’ by Yad Vashem – The World Holocaust Remembrance Centre in Israel
‘Righteous Among the Nations’ is an honorific title awarded on behalf of the State of Israel and the Jewish people to non-Jews who risked their lives to save Jews during the Holocaust

according to the 1st results of a Danish scientific study
Researchers at the University of Copenhagen, Denmark, tested whether the inclusion of rape seed cake, prefermented with lactobacillus, could substitute 2,500 ppm zinc. After all, zinc oxide has to be phased out in the entire European Union by 2022
they wanted to know if the preventive effect on diarrhoea would be more pronounced if the cake would contain brown macroalgae species
First results or the research were published late January at the university’s pig event ‘Up to Date 2018’
Effects of lactic acid producing bacteria are often used as probiotic supplements to promote gut health
but results had not always been convincing
The researchers tested these ingredients in piglet diets from 10 days prior to weaning until 91 days post-weaning
The scientists hoped to find the effects on feed intake and growth rate both by the end of the grower phase and at slaughter

The trials were conducted at a commercial farm in Łosice
In total 9 different dietary treatment groups were included
The following diets were offered; each treatment group had 50 piglets per pen
The ingredients were products used from Danish company Fermentation Experts
The prefermented rape seed is commercially available as EP100i and the brown algae product as EP900
The researchers reported that feed supplied by prefermented rape seed
when compared to the negative control (without zinc) led to an increased average daily gain (ADG) from 10 days prior to weaning until exit from the weaner unit
the researchers reported that villi and enterocytes were had developed
with maximum effects at 8 and 10% dry matter
the diets improved small and large intestinal barrier function and the small intestine’s surface area
and it reduced the number of lost and eliminated piglets without reducing the diarrhoea incidence
When comparing the feed supplied by prefermented rape seed with the positive control (with 2,500 ppm zinc)
the scientists noted that both average daily gain and feed conversion ratios were better
leading to heavier piglets at weaning and exit
This prevented mortality and the need for antibiotic treatments to the same extent as in the zinc approach
The researchers also stated that adding the brown algae to the feed led to increased piglet weight at weaning
It also decreased average daily gain from day 31 to 64 after weaning and therefore decreased the exit weight
The brown algae addition blocked the stimulating effect of the prefermented rape seed approach on villi length and enterocyte height
but not its effect on the intestinal barrier function
Further results are expected after March 2018
when the pigs involved will be sent for slaughter

Wilson’s built her fan base by making custom ice cream in small batches—you give her some ideas
and she’ll whip up the most transcendent ice cream you’ve tasted
(She will also advise you that putting gummy bears in ice cream will lead to an epic dental emergency and is not advised—ahem.) Her menu of flavors is long and includes classics like vanilla bean and mint chip
but it’s her ultra-chunky signature flavors—lemon bar
Cap’n Crunch Berry—that are truly revelatory
and it shows: her flavors are balanced and crave-worthy and innovative
It would be easier (and cheaper) on Wilson if she—like many of Seattle’s other ice cream shops, including Molly Moon’s and Full Tilt—relied on a pre-made base to make her ice cream
But Wilson’s business model has always revolved around using no stabilizers or preservatives and making everything by hand
from her base of cream and egg yolks to the cookies
Pouring a jug of premade ice cream is just… taking your soul
