The 7,211-square-foot space next to Fault Line Park includes nearly 3,000 square feet of an interior ground-level dining room with its finishing ovens, a 1,546-square-foot patio, and almost 1,900 square feet of basement area, where Izola’s dough kitchen now resides. Brown walked me through the facility last week during a surprisingly uncrowded morning.

they’d most likely start with one attached to the Dough Factory to help build community in the neighborhood
“City Heights has some amazing food and a whole bunch of amazing stuff. But in terms of investment in the community, it’s under-invested,” he explains. Izola will focus on hiring from within the immediate community and the Second Chance program
which helps pair formerly incarcerated employees with employers
It’s part of Izola’s five social justice principles: economic
But expansion at the cost of quality would be a “deal killer,” explains Brown. He and Chen scoured the world to find equipment that could increase output and quality, looking everywhere from Germany to the Netherlands, Spain, Japan, and the United States. He thinks they’ll have it dialed for the buildout, but in the meantime, they’re full steam ahead in East Village
Izola is only available Tuesday through Saturday
but Brown assures me they’re “moving mountains” to open on Sundays
“We’re growing production at somewhere between four and six percent a day,” he says, a slow ramp-up to get his primarily brand-new team of employees up to speed without pushing too hard. But he says in about a month, they’ll likely be able to double their inventory, which will get them closer to his goal of “having a hot croissant for everyone who wants one.”

having reached the limits of its homegrown origin story
Originally billed as a two-month kitchen renovation
the closure instead led to a long move into new home
and last month Izola returned as the latest tenant of the distinctive indoor/outdoor restaurant venue overlooking the East Village green space
the property now proves an excellent place to tap sample the bakers' ever-expanding menu of breads and pastries
Banks of shiny new commercial ovens stand where there used to be beer taps
And rather than the usual glass counter bakery display
Izola has a display of its wares atop the counter
modeling whatever treats may soon show up warm at your table
it's "96 gossamer layers of butter from Normandy" that go into Izola's wide and interesting range of laminated dough morning buns and croissants
We'll get into just how wide and interesting these may get
because every visit should begin with a plain croissant ($7)
The thing hits the paradoxical croissant ideal: at once crispy
It's well worth standing in line here for nothing more than a croissant and coffee
East Villagers remember how good they had it when Izola was serving up their daily bread
and the rest of the city is gearing to show up besides
And what they will find more of every month is new flavors
and developed 27 new bread and pastry flavors
So in addition to a succulent Tahitian vanilla knot ($6)
offering the same vanilla flavor with hibiscus
topped with candied jalapeño and lime zest
This one has special significance to Izola's founders: Brown tells me he and Chen were drinking hibiscus tequila cocktails when they first fell in love
Already, customers may enjoy Izola's decadent, twice-baked almond croissant stuffed with melted single origin French chocolate ($12)
and notorious Moroccan black olive chocolate croissant ($9)

every month Izola will debut one of its new

Izola won a cult following for its flaky croissants and its unique way of delivery in its early days when the bakery would lower baked goods down to customers out of a third-floor window
so the new East Village outpost has a pre-ordering option through its website to avoid disappointing its guests
The counter-service cafe offers coffee and tea
and is open Tuesday through Friday from 7 a.m
Its acclaimed croissants and wild sourdough bread are back on the menu
made with ingredients like Normandy butter and Valrhona Grand Cru dark chocolate
the team plans on expanding into other inventive flavor profiles with croissants featuring ingredients like ramen
Sweeter options will include s’more croissants and a date shake croissant with Medjool date ice cream
a new croissant and sourdough bread flavor will drop
“We want to bring joy through food to our customers,” co-owner Jenny Chen tells Eater

The Bake Bar features counter seating for ten people with a full view of its baking process
which starts when baskets of dough are brought up from the bakery’s underground prep area called the Izola Vault
A team of bakers oversees its four proofing ovens
and three sourdough ovens shipped from San Sebastian
Overlooking the dog park and playground at the adjacent Fault Line Park
Izola can seat 250 people comfortably in the space
which can also be reserved for private events
a zero-emissions dough production facility being built in City Heights
While their original bakery produced approximately 1,000 croissants daily
the goal is to increase capacity to 20,000 high-quality croissants per day to eventually supply a dozen Izola locations throughout Southern California; the company is looking for investors as they expand across the region

which helps forecast demand down to the hour

When contacted by the Reader, Bakery owner Jeffrey Lamont Brown did not initially respond to Yvonne’s derogatory comments about his business on her Instagram
which pulled on local musicians’ heartstrings and garnered many supportive comments and shares

to help them grow without being properly compensated
Among the hundreds of five-star Yelp reviews commending the bakery’s treats and coffee are comments that indicate musicians are indeed part of the venue’s attraction
“[I] went on a Sunday morning,” commented Yelp Elite member Anthony D
which added such a great energy to an already amazing place
It was almost as if we stumbled upon an open mic night that happens to serve some of the best baked goods!”
Great energy doesn’t usually come free of charge
“I worked multiple days during the week [at the bakery] without compensation,” Yvonne told the Reader
and share personal equipment with other artists.” Yvonne says Brown promised her $100 if she brought other singers to the bakery on Sunday and sang as well
“Artists consistently canceled and failed to show up,” she said
“especially when they discovered they wouldn’t be compensated.”
Brown told the Reader that poets and musicians are still welcome to perform at the bakery
“Doesn’t matter if they’re amateurs or professionals,” he said
“People bring in their instruments and play whatever they want for an hour
and they can eat all the croissants and sourdough they can eat and make whatever tips they can make.” He says that Yvonne walked out of the bakery without saying anything to him
“You should just come in and speak to everyone here
When I talked to other performers who’ve played at the bakery
“We’ve never asked to be paid at IZOLA,” said Fatima of State Park

“It’s worth it,” said Aaron Bowen, a local guitar player

But songwriter Julia Sage doesn’t buy into any of it
“It was already a no when I heard they were paying with pastries instead of fair compensation
During the first terrifying shutdowns of the pandemic
Pulitzer-nominated photographer Jeffrey Brown and his partner started lowering bread out the window of his third-story studio in downtown San Diego
They used a basket and rock-climbing rope (Brown is serious about rocks and ropes
at first—would pay for the bread Brown and his partner Jenny Chen were making upstairs
But the pandemic activated their obsession: the perfect croissant
They only had a single small oven in the studio
“We made so many bad croissants,” Jeffrey says
“I have 726 pages of them,” Jeffrey confirms
try different butters and flours and techniques—700 pages later
Jenny built a series of computers and systems in the bakery to maintain quality control. They took the guesswork out of making the notoriously finicky pastry, which allowed them to hire people who didn’t have (and possibly couldn’t afford) culinary school. They wrote social justice into their operating agreement, certifying that their business offered a living wage. They made Izola Bakery a haven for different cultures
and community groups into the space—formed a whole creative scene around that croissant
Yelp named Izola the “Best Bakery in the U.S.” and the resulting onslaught of customers nearly broke them. And now they’re planning a baked good cathedral in City Heights (you can take a gorgeous 3D tour of the upcoming bread castle here)

“She’s probably one of the first black restaurant owners in the city of Chicago
and female — that’s a lot back then” when she opened in 1957

she worked at a soda fountain at 61st and King Drive
as a waitress at the Vernon-Rhodes restaurant and at Vernola’s eatery on 61st Street
whose Chatham restaurant was a Chicago institution
She always cooked the ham hocks and peas separately
“I throw salt pork in the black-eyed peas for flavor.”
“I was crazy about the short ribs of beef and the pork chops; greens and sweet potatoes
mac and cheese — the best in the world,” Mason said
One of her most popular breakfasts was brains-and-eggs
and Izola’s Restaurant was there,” Leak said
one of those South Side streets where there was every kind of business you could think of.”
She hosted regular political fund-raisers at the restaurant and at her nearby home in West Chesterfield
“I met Obama at one of her parties,” Mason said
“Her restaurant was symbolic of her heart and her caring.”
White sponsored a number of Little League baseball teams
Many people got their first jobs at Izola’s
“She hired people who couldn’t get hired anywhere else,” Mason said
Izola’s Restaurant closed in December 2010

“She was heartbroken and depressed after her store closed,” Mason said
and she couldn’t go down there anymore and run it.”
White had been married but was divorced years ago
telling the Sun-Times: “I talk to a lot of kids who come in here and try to get them straight
Just parents talking to them and hugging them and saying
`I love you’ makes a difference a lot of times.”

“I want to do for croissants and bread what Starbucks did for coffee,” he says from the artisan bakery and eatery on the corner of 13th and G Street
perched three stories up from the bustling sidewalks
It was boiled in an aluminum pot for hours and served in a Styrofoam cup
We want to make that same kind of educational shift for Americans.”
The 3,200 square foot space is bright and white with huge windows
bright red bistro tables and a line of hungry patrons that’s growing longer by the minute
The smell of baked goods wafts through the space
around couples and families and dogs and business partners all carving their way to a baked treat
their business has grown 300% since they opened and the company is “hiring constantly.” But it hasn’t been easy; in fact Brown
opened Izola in the middle of COVID in June of 2020
were inspired by a trip they took to France and then eating their way through Paris
This is lonely.’ We wanted to do something for the community that could have a positive impact
It took a while to get the whole “bakery” part of the bakery up and running
especially since Brown and Chen had no baking experience whatsoever
But Brown’s studio space made for the perfect location
Brown worked as a commercial photographer with companies like Adidas and Nike and was also a finalist for the Pulitzer Prize as a feature documentary series about undocumented immigrants.)
he simply started baking from the recipe on the back of the bag
were less than amazing and he ended up throwing a lot of stuff in the trash

“We basically failed our way into what you’re eating now,” he says
smiling as he hands me a Mercer 8-inch bread knife to cut with; they don’t mess around with the cutlery here
He says he personally tested more than 50 knives before they settled on this one
“And don’t worry about the crumbs
Warm and crusty and doughy and delicate all at the same time
“The butter croissant is the spiritual home of any bakery,” says Brown
you come out and apologize because there’s no such thing as ‘good enough.'”
Izola started taking orders during lockdown in June of 2020 so there was nowhere to go but up
where Brown and Chen lowered a basket of hot bread down from their window to street level to keep customers safe from infection
“It was a picnic basket,” laughs Brown
and put it on a rope and lowered it to the ground
and we would lower down the basket.”
Brown says IZOLA has been blessed with a passionate and supportive community since day one
he loves having customers come and dine inside the bakery
“I really wanted to make a place where people can come and hang out
and show up with their whole selves and be seen and valued and heard,” says Brown
We have some customers who are too old to go up the stairs to check out the bakery
they just can’t get up to the kitchen to take a look
So I make videos of the kitchen and AirDrop it to them.”
Brown escorts me upstairs so I can take a look
He explains that the making of croissants is a four-day process
they mix the yeast and the flour so that it sits and ferments for a day
the butter is incorporated and on day four
“There is no rushing,” he says
Most bakeries bake at 2am and then it just sits there on the counter until you come in
But the croissants that we serve have all been baked in the last hour.”
He takes me into a room that’s chilled to 60 degrees to keep the butter from melting and the yeast from rising
“Paris temperature,” where two women work at lightning speed
pulling apart squares of dough and stretching and folding it to create the Tahitian Knots
“This is where the magic happens,” says Brown
“The making of the dough is the hardest thing and it’s very physical
So how do the bakers at Izola know how many croissants and treats to make each day
to ensure that they come to your plate hot and fresh
there’s a secret ingredient to Izola’s success
It’s called the Izola Operating System
and it’s the technology that allows the company to execute a very simple idea: creating something with great ingredients
“Jenny invented it,” says Brown
“She built the system to use historical sales data to calculate what should be ready
He says first they calculate how many croissants they would usually sell
That’s what gets produced and lined up
and production can be changed to meet for current demand
The ovens are all controlled by iPads so the bakers know just what to put in
Not only do customers know they will get a fresh-from-the oven baked good
but Izola operates with minimum waste–around 3%
“This is the technological advantage that gets delicious croissants to the customer in a way that is authentic
but getting something that’s hot out of the oven…that’s really the magic.”
Brown says it’s a challenge to consistently operate at such a high level
But the system allows Izola to do just that
“There are always like 800 croissants in the air at all times
and we are trying to find out where they are going to land
so they go to your plates at the right time,” says Brown
Brown says that he feels lucky to get to help lead a team of talented workers
and hopes that every day he encourages them to do something special
He says Izola is very mission-driven and justice-focused
“I really want to encourage people to show up with their whole hearts and do something amazing every day,” said Brown
“We believe in economic justice; we believe in gender justice
Everyone here gets paid the same from the dishwasher to the person making the sourdough or the croissants.”
“I am proud to say that we are actually exceeding minimum wage specifications
and we are going to be awarded a living wage certification in San Diego
Brown credits strict COVID protocols for keeping his employees safe and yet sympathizes with other eateries nearby that have been forced to shutter
He says employees at Izola have been wearing masks religiously since COVID started
Izola also requires employees be vaccinated and boosted
“No judgement if you don’t want to do it
“But you can’t work here.”
Brown says they have a building under contract to function as a production center and a restaurant in City Heights
He envisions an eating space where the ovens are front-and-center
so you can watch the team cutting and rolling the croissants
Izola’s technology also makes the business scalable
Why not replicate the idea and bring other bakeries into different San Diego communities
“Europeans go to bakeries every day,” says Brown
But Americans do go to Starbucks every day
In fact, Izola just launched a capital campaign to help power the development of new distributions channels like other bakeries as well as live-bake trucks (envision a food truck turned inside out.) In the last three weeks
more than $350,000 has been pledged to support Izola’s dual mission of joy and justice
“Some Americans have never experienced a croissant like this,” says Brown

who has a broad range of experience in community activism in affordable housing
announced the following endorsements during a fund-raiser last Thursday:

He said that the Ministry of Regional Development and EU Funds of the Republic of Croatia launched consultations with key stakeholders already in 2023 to develop the national position on the future of cohesion policy
Mr Mikulić stressed that cohesion policy must remain focused on reducing disparities between EU regions
promoting long-term convergence and narrowing the gap between less and more developed EU regions and member states
He also highlighted the important role of macro-regional strategies
which contribute to cohesion objectives through institutional cooperation and knowledge transfer
while praising the successful cooperation with Slovenia in the framework of the Interreg Programme Slovenia-Croatia

we must sit together with the people and listen to them to be able to develop the objectives of the future multiannual financial framework so that EU citizens get the most out of EU money
