Austria he said that he felt a palpable Stimmung of Slovene-ness Stimmung is an untranslatable German word that basically means a vibe or aura You can feel Plečnik’s Stimmung throughout Ljubljana The name means “sky toucher,” which is technically true for this Yugoslavia's first “skyscraper,” finished in 1933 technically anything touches the sky and this is hardly scraping it—it's only 13 floors tall at 231 feet Today it’s hard to imagine that this was awe-inspiring this was the ninth-tallest building in Europe with its petite dimensions and grandiose name you’ll find striking stone atriums and a gorgeous torqued winding staircase with a view up to the roof That roof contains a wraparound terrace and café with the best views in the city so order a bela kava (white coffee) or a glass of Rebula part covered Ljubljana Central Market is another of Plečnik’s designs the market has needed no renovations since it first opened in 1939 Be sure to stop by the sauerkraut stall run by Marjetka Zabjek a local legend whose family sells an indigenous cabbage that makes the best sauerkraut You can also get sour turnip (which sounds kind of dreadful but is delicious sauerkraut made with turnip instead of cabbage)—a perfect side served with sausage and dressed in cracklings A vending machine run by a family dairy farm sells unpasteurized You can also take home a souvenir jewel-colored candle—just be aware that while they may look like lovely decorative objects for the home they’re designed to adorn the graves of your loved ones Tomb candles or grave candles are often used in celebration of All Souls' Day in Slovenia Ljubljana is a city without an architectural icon No single building stands in for the city like the Eiffel Tower does for Paris or Sagrada Familia does for Barcelona But the four bronze dragons that top this bridge are the closest the city comes to a mascot this was one of the earliest reinforced concrete bridges in Europe a fun fact that may only excite engineering students The green dragon became the symbol of the city (and mascot of its sports team) thanks to an apocryphal legend that Jason (of “and the Argonauts” fame) stopped by the marshes of what would later become Ljubljana to slay a dragon on his winding way home with the Golden Fleece The best cakes in the capital are found at Zvezda (which means “star”) one of a small local chain of fashionable patisseries You can lose yourself admiring the vitrine a veritable jewel box of cakes and confections The most traditional are gibanica (a filling layer cake made of poppy seeds kremna rezina (a famous cake from Lake Bled with custard and cream sandwiched between mille-feuille) Their original cakes are what summon me: chocolate dream cake (like an ultra-sophisticated Nutella mousse situation) Pear Crostata (caramelized pear and vanilla tart) One of the oldest and most bohemian streets in town is named after Primož Trubar (1508-1586), a Protestant priest who published the first books in the Slovenian language and smuggled them into Catholic, German-speaking Slovenia, then part of the Habsburg Empire. Here you’ll find the House of Experiments (an interactive science museum for kids), a half-century-old umbrella repair shop, bookshops, cafés, and Carniola Antiqua flying-mustached Jaka Prijatelj (whose name translates appropriately as Jack Friend) The prices are reasonable and the treasures immense from Slovene Impressionist paintings to Yugoslav posters and graphic work by IRWIN the progressive art collective associated with the ironic performance art rock band Laibach a then-24-hour horse burger stand located in Tivoli an expansive park in the middle of the city This was where you’d gravitate after a night of revels for an enormous bun stuffed with your choice of toppings and sauces over a pleskavica (a minced meat patty This won’t meet with universal moral approval but it does taste good and it’s a classic option You can find Hot Horse stands in several spots today but they still should be on any carnivore’s to-do list Slovenian architect Plečnik sought to make Ljubljana into a “new Athens” and managed to get the commissions to design all of the spaces and buildings that would feature in an ancient Greek city like Athens: a stadium covered walkway (stoa) meeting square (agora) and included a giant bronze statue of him being crowned with a laurel wreath Beside the square is Plečnik’s Triple Bridge or Tromostovje—three bridges at slight angles to one another that cross the Ljubljanica River Historians believe that a bridge of one sort or another has spanned the river at this point since the 13th century Plečnik’s redesign radically rethought the structure this also contains some of the earliest public toilets in Europe founded this eponymous restaurant at a time when nouvelle cuisine was unknown in Yugoslavia He’s been described as the godfather of fine dining in this part of the world and has a reputation for developing sophisticated dishes based on the best local ingredients many of them indigenous: from trdinka (a red corn varietal) to blackstrap pigs (considered to have the best fat of any breed) which simply consists of a fresh egg cooked at the table by pouring pork cracklings over it This is his Proustian moment—he grew up so poor that a big treat was a single fried egg that his grandmother would make him once a week the restaurant is in a building designed by—you guessed it by now—Plečnik as the headquarters of Triglav Insurance Company One of Plečnik's last creations was a renovation of a former monastery of an order of Teutonic knights into an outdoor concert venue he designed an open-air seating arrangement inspired by ancient Greek theaters semi-circular seating of classical theaters Križanke required a proscenium arch format with a gentler slope He deliberately kept a low wall around the performance area and created a public garden beyond it allowing those unable to afford tickets to still enjoy the music from outside One of his most inventive designs at Križanke was a smaller secluded space known as “The Devil’s Court.” Nestled between the presbytery and cloister walls this area featured low benches running along the walls beneath four vertical rows of embedded lamps these lights—resembling hooded drainpipes—are unassuming when the interior lights are turned off and only the wall-embedded lamps are illuminated replaced by a constellation of floating lights transforming the space into something almost celestial How many times can a city be called a “hidden gem” before it stops being hidden Judging by the enthusiastic throngs wandering its cobbled Baroque streets in summer Slovenia’s capital has certainly been discovered Though it is popular it is never overcrowded and each visitor who falls for its charms (and they inevitably do) feels as though they’ve stumbled into an urban catalyst prioritizing sustainability and spatial richness in the industrial district of Ljubljana the Dimnikcobau company organized an international competition to design the DCB business centre in the Moste industrial zone of Ljubljana The chosen project was conceived by the Barcelona studio BAX and it transcends the building’s functional character as an office space turning it into an urban catalyst adding value to this suburban area which is historically linked to generic spaces for business and logistics one of which already exists and two others which are newly-built situated facing each other on Leskoškova Street The buildings integrate together through the use of diagonal chamfering which establishes a formal dialogue and through the public space that integrates them as a whole was built in a first phase along with an external area of terraces and gardens on the ground floor that create various microenvironments defined by garden zones and serpentine benches with the ground floor shaped like a rhomboid and 10 floors above ground level is taller than neighbouring buildings and dominates the landscape of the area The diagonal displacement of the ground floor allows access to the central foyer consisting of a large atrium with a fluid shape and which goes up vertically to end in a skylight overhead The atrium opens up to the exterior through two large windows that are the height of three levels and which add a sculptural character to the space allowing it to be bathed in natural light from two sides as well as allowing views of the city’s outline and the mountainous Alpine scenery from its terraces The building has an above ground level surface area of 12,556 m2 and 8,114 m2 below ground occupied by three parking levels The public area is located on the ground floor: a restaurant and a multifunctional gallery that can be used to host different events The central atrium coordinates the flow of people and maximizes the interaction between the different programmes Each level has four office modules that can be configured combined or extended according to the requirements of the tenants Both the covering of the interior and exterior facade seeks to dematerialize the volume mass by giving it a certain fragility and elegance The exterior dark glass facade is covered with white brisesoleils sloping at different angles and placed at different progressions the vertical foyer shaped around the atrium is covered with “L” and “Y” gilded anodized aluminium profiles whose tones change depending on the sun’s movements The delicate treatment of the space and the surfaces as well as the sensitive way that the detailing has been handled have resulted in a building possessing high spatial richness at different scales but also as a key element of its ventilation system This space acts as a return duct for ventilation of the offices extracting used air and pushing it upwards like a chimney an advanced climatic control system recovers the energy and humidity in the air before redistributing fresh air throughout the offices The air conditioning system for the offices combines underfloor heating and cooling with low level individual fan coil units which allows for accurate temperature control and guarantees maximum comfort for all users DCB Montana was planned as one of the first sustainable office buildings in Slovenia Its compact design optimizes energy efficiency while the different passive and active solutions – such as the shading elements on the external facade abundance of natural light throughout all areas and low water consumption – guarantee minimum consumption of resources These measures have earned it the DGNB Gold certification and an A1 energy rating making it a leader of sustainable architecture in Central Europe The building combines high-quality reinforced concrete and a steel structure The use of reinforced concrete enables the creation of larger volumes than usual maximizing the flexibility of internal spaces by eliminating the need for intermediate pillars In the terraces formed by the two large windows within the volume the steel structure has been strategically used to Thyme seems to pervade the wines here alongside bruised apple and rosewater Popularised in Italy in the late Renaissance the decorative technique that adorns that walls of Strelec is called Sgraffiti which means 'scratching through' to another surface giving the style texture and colour - elements that pervade the cooking of head chef Igor Jagodic A trio of amuse-bouches arrive with one standout creation Chicken pâté dyed with beetroot juice on a buckwheat biscuit displays top class design and realisation skills that mercifully drown out the soul version of ACDC’s Back in Black I would happily listen to it again in exchange for more of this exquisite paté As Des'ree's You Gotta Be takes on a swing groove I feel embedded in a universe of ‘familiarity but not as you know it’ Marinated salmon with pickled daikon is presented as a rose and finished off with cucumber citrus juice which I would happily drink over ice in the castle grounds outside The locals named it after this endorsement and wrote it down how it sounded to them Venison in Barolo (wine from the Nebbiolo grape made in northern Italy) and wrapped in shiso leaf with goose liver ice cream topped with crispy shiso canopy and shallot shavings is a tour de force and I can hardly believe this is only a starter The wine pairing - Belo 140 (named after the number of gold coins it cost to rebuild this vineyard after phylloxera) is for the shiso rather than the venison and I rather admire that Slovenian reds are rare in this particular wine region - Bela Krajina - and this dish works as an early in the order ‘night watchman’ brilliantly These flavour combinations are such Christmas for the senses that I almost don’t hear the big band version of Aha's Take On Me I would have thought Hunting High and Low may have suited venison more admirably but you can’t have everything then the hills of Rašica and finally Mount Saint Mary Levels of landscape serving as a wider setting for Jagodic's structured levels of flavour and texture unchanged for six out of their twelve years as the Castle's premier restaurant The pairing is a Zelen made by the brilliant Primož Lavrenčič Egg and truffle are one of those forever friends combinations but the cauliflower gives it a rusticity There are few ingredients here but a lot of techniques being thrown together The beautifully macerated Zelen throws a Mediterranean sunlight on the comforting melée coming as it does from the south facing and sun-drenched Vipava valley A catalogue of bursting fruit and minerality I’m lying on a summer haystack in a roofless barn I haven’t noticed a song for quite a while Pasta filled with celery and chanterelle mushrooms and doused in aged cheese foam comes next paired with a late harvest Malvasia from the Karst region that was aged in concrete for 2 years and displays a nose of herby butter This savoury minx blocks out the reggae version of Sorry Seems to be the Hardest Word And although I understand the philosophy of 'simple ingredients/multiple techniques' Service is slick and educational. Slovenians want you to know about them. And they love their own wine, much like the Swiss and have a similar issue with scale of production They make world class wine but not that much of it Case in point is the wine in the next pairing Muscat and the native (along with Croatia) Kraljevina grape this 2016 'Akord' from Otmar Šturm matures for two-and-a-half years in small oak barrels after nine days on the skins It's incredibly rare and there have been no more releases since 2016 to be presented with this on a tasting menu It's up against a dish that comes across as a reformatted French onion soup without the broth Gnudi in butter and onion soup gel with mustard seeds, spring onion and some dehydrated yeast that connects with the beer in the Jama cheese (named after the cave in which it is matured for 13 months) sauce This dish is elevated rusticity personified and probably the pairing of the night This unusual wine that has echoes of Amontillado is the perfect foil so much so that the flavours meld into each other and I can no longer distinguish the aftertastes nettle and Adriatic prawns served with a Slovenian Chardonnay that almost rivals those from the Côte d’Or but at a fraction of the price as you would expect from a cool-climate cuvée vegetal notes and these are brought out splendidly by the chard sometimes serves this dish with a red wine from the Fedora winery (and apparently the winemaker does indeed wear such a hat) made from the Pokalca grape and aged in concrete It's chilled like a Gamay but the Pokalca has more plush fruit and more smoke but crucially there is something herbal that has a nice chat with the Swiss chard and the nettle Veal with smoked bone marrow gravy is brought pine nuts and a sweetbread terrine fashioned from cheeks and tongue This terrine is a knockout -
