Bordeaux has begun its annual en primeur tastings, when the wine trade tastes the region's most recent vintage for the first time. Wine Spectator senior editor James Molesworth is in Bordeaux, tasting the 2024 wines from barrel at some of the region's top estates and sharing his tasting notes. His latest visits are to châteaus Canon, Beauséjour, Troplong Mondot and Cheval Blanc and more in St.-Emilion for a look at the newest wines in barrel.

I got to eat at the restaurant’s sister location in New York City
they mean “on horseback,” but in food terms it means “topped with a fried egg.”

I entered the restaurant with my party a minute after they opened
and nearly every patron inside had their food and was eating.
I heard from my uncle that the root beer was homebrewed
Not even five seconds after I said that’s what I wanted
it was brought to me in an extremely fancy glass
and the taste was unlike any root beer I’ve had before
without any kind of carbonation that rises in one’s throat
I regret not getting it as a root beer float.
I almost made my burger a double cheeseburger
revealed that single cheeseburgers have two patties and double cheeseburgers have three
that helps make up for the price of the burger
I decided to simply just order French fries to share
Something I noticed was that the restaurant chef’s are always cooking
due to the mass amounts of people that wait outside to get a table
I was even told that the outdoor standby line has even had people waiting more than three hours for food
The commitment just proves that the restaurant was worth it.
and the ratio of cheese to burger was perfect
If only I could stay in that moment of taking the first bite
the bacon was thick and incredibly flavorful.
I was sad to say that I didn’t have any leftovers; the food was too good
especially since the restaurant was beginning to get busy
It was then that the restaurant gave plastic containers for both our food
they gave us a very nice bag to put these in
it was relatively similar to Gordon Ramsay Burger
The traditional cheeseburgers ranged from $17-$19
My meal at Au Cheval was an unforgettable experience
I have nothing but good things to say about the restaurant and its service
but make sure to arrive early since they don’t accept reservations

While the Japanese-trained Forever Young is the lukewarm favourite
superstar turf runner Romantic Warrior may well head international betting markets by the time they jump off
it’s French-trained Facteur Cheval in which I am most interested
This horse has been widely available at double-figure prices
but I’d have him closer to Romantic Warrior and he looks the one to be with
Although Facteur Cheval is also best known as a grass runner and won last year’s Dubai Turf
he shaped really well in his Saudi Cup prep at Meydan last month
and it is true to say he was below his peak level – but it was striking just how well he moved over what is a deep
evidently having no issue with the severe kickback
Meydan is by no means an easy place to go and run well if you're not used to the surface
He ran into some traffic in the straight and
didn’t really do a lot once in the clear
finishing seven lengths off the hard-fit local runner Walk Of Stars
But that was a testing 9½ furlongs off a 97-day break
Facteur Cheval should be better for that outing and this cut back in trip is in his favour
plus it seems fair to say the dirt surface in Riyadh can be easier to handle than Meydan
The Saudi Cup is run over the same distance as the Dubai Turf – and like that race
it's around just one turn compared to the two turns for Facteur Cheval’s latest outing
but Mishriff overcame the same stall in the 2021 edition
He was third in the two biggest races in the US last year (Kentucky Derby and Breeders’ Cup Classic) before winning his prep for this back at home last month
those races were all ten-furlong contests and this will be the shortest trip he’s raced over since just getting up in the G3 Saudi Derby over a mile on this card last year
and he’s drawn wide so they’ll probably have to use him early to get a handy spot
including winning ten G1s – seven at home
reasons for thinking he’ll handle it
albeit last year’s Saudi Cup set up for the late runners
He began his career with three straight wins over six furlongs
While his sire Acclamation was a turf runner
who won the 2002 Dubai World Cup on dirt at Nad Al Sheba
It might also be worth noting Romantic Warrior has trialled on ‘dirt’ at Sha Tin back home in Hong Kong
The track he’ll encounter under race conditions this weekend will be different
but Mishriff and Panthalassa (2023) won this race with limited experience on the surface
I think there's greater value in the French horse for betting purposes
there’s just one runner in the Saudi Cup from the States
but he did win a Keeneland G1 as a two-year-old
as well as the G2 Clark at Churchill Downs in November
Saudi businessman Sharaf Mohamad Alhariri now has an interest in this horse
as he did for last year’s big-race US-trained winner Senor Buscador
and Rattle N Roll came from off the pace to land his course-and-distance G3 prep last month
but Rattle N Roll can almost be considered a local now and that may give him an edge in a race in which the home-trained Emblem Road was an upset winner in 2022
The main action on Saturday begins with the G3 Saudi Derby
is following the same path as last year's winner Forever Young
but her compatriot Shin Forever is a tempting alternative at decent odds
Shin Forever has come up short in Graded company on turf in Japan
but his sire Complexity was a G1 winner on dirt in the US and this one goes for Hideyuki Mori
who trained the first two winners of the Saudi Derby (2020 and 2021)
The presence of UAE 2,000 Guineas winner Golden Vekoma and smart US runner Cyclone State make this an intriguing contest
The G2 Riyadh Dirt Sprint has attracted Breeders' Cup Sprint winner Straight No Chaser and I think he'll win
who won this last year but couldn't get in a blow at Del Mar
The longer straight in Riyadh is much better for Remake
so he’s going to be popular in the market and should keep Straight No Chaser at a backable price
anything odds against is fair on the US runner
The last time a Breeders’ Cup Sprint winner turned up in this race was two years ago and that horse
Remake was only third that day and I doubt he’ll be able to live with Straight No Chaser either even back under more favourable conditions
While I’m struggling to find convincing options in the Neom Turf Cup or in the 1351 Turf Sprint
I am keen on Deira Mile in the Longines Red Sea Turf Handicap
a G2 staying contest and the race before the main event
This doesn’t look like a particularly strong contest
Aidan O’Brien trained Tower Of London to win this last year and he runs Continuous
who won the St Leger at Doncaster the only time he tried a staying trip
But the ground was soft then and he has a round action
hence he may not love the quick conditions or the tight turns in Riyadh
The Owen Burrows-trained Deira Mile was fourth in the Derby and St Leger in Britain last year
can save ground from a low draw and he still looks to have some improvement in him
He is around a 5-1 chance with British bookmakers

Not only are the major hotel groups (everything from Four Seasons to Ritz-Carlton) growing at a fast pace
but we’re seeing growth from all kinds of smaller hotel groups as well
In this post I wanted to cover the basics of Cheval Blanc
I’ve been lucky enough to stay at three of the brand’s properties
Cheval Blanc (which means “white horse” in French) is a boutique uber-luxury hotel group that’s owned by LVMH (Moët Hennessy Louis Vuitton)
There are a few luxury goods company that have gotten into the hotel business (BVLGARI is another one)
and there’s always the question of whether they’re style over substance
What impresses me about Cheval Blanc is that it’s both style and substance
As you’d expect from a French hotel brand
Cheval Blanc has a huge emphasis on both design and food
and that’s reflected in each of the properties
So let’s go over the details of those — where does Cheval Blanc have properties
and what’s the best way to book them
Cheval Blanc currently has six properties (known as “maisons”)
with at least one more confirmed to be in the pipeline (in Porto Cervo
While Cheval blanc isn’t necessarily targeted primarily at French consumers
the properties are located in destinations that are popular with the French (or those who love France)
Let’s go over the basics of each of the Cheval Blanc locations
Cheval Blanc Randheli Maldives is a 46-room island getaway in one of the most beautiful places in the world
While there are lots of amazing luxury resorts in the Maldives, there’s a lot that makes Cheval Blanc special

The property has the nicest indoor pool I’ve ever seen at a city hotel
and the hotel’s Plénitude restaurant was awarded three Michelin stars within six months of opening
Many rooms at the hotel have views of the Seine
Cheval Blanc Courchevel is a 36-room ski resort in France, which opened in 2006, and was the first-ever Cheval Blanc property (I recently visited Courchevel, but stayed at Les Airelles

Harrow added: ‘It’s hard to tell if this is an example of general Bordeaux malaise – although that is certainly a major issue currently with recent vintages failing to hold value

a growth rate of just over 0.3 hotels a year will hardly have investors jumping for joy
Expansion without affecting quality is a game of patience
successful decision-making — selecting the most suitable locations — and not succumbing to the easy option: lowering standards
This latest opening from Cheval Blanc finds itself stretched along Anse Intendance beach, on the southwestern extremities of the Seychelle’s largest island

Three million Franc coins were minted which was used to pay the ransom of King Jean – the coin also made a political statement as the name was a clear reference to the freedom the coins bought for their sovereign
The obverse side of the coins depicted King Jean II on horseback galloping towards the left

Wooden cases are part of the very identity and mystique of the great wines of Bordeaux
Yet their carbon and wider environmental footprint is a growing concern
particularly for the châteaux who have rethought almost all aspects of their viticultural and vinification practice to improve both their ecological and their environmental sustainability
Cheval Blanc has been one of the leaders of this movement in Bordeaux and having been among the first to look at the sustainability of its packaging
it is one of the first to propose a solution
The project started with an ambitious brief: to promote regional expertise while using sustainable material
the estate called on the expertise of Adam
the French-based leader in wooden packaging for the wine industry
which has been working with the estate since 2009
The redesign of the packaging has now been finalised after a year of development to reflect the eco-responsible and territorial approach
It will see bottles of Cheval Blanc wrapped in individual woollen sleeve made from Basque-Béarn wool to cushion them
before being packed in cases made from pine from the nearby Landes region
This reflects their mutual desire to local sourcing and to contribute to revitalising the regional wool and maritime pine industries
Although 90% of Bordeaux wine cases are made from Galician pine – despite the fact that New Aquitaine is Europe’s largest pine-growing region in terms of surface area – Cheval Blanc and Adam opted for French wood
harvested and processed close to the wine estate
using a fourth-generation family based in the Lot-et-Garonne region
The team harvest the knotty maritime pine from the Landes de Gascogne within a maximum 60km radius of the timber processing plant
The local sourcing and lighter weight construction of the boxes help reduce their environmental impact and slashes the amount of waste produced
The knots in the wood and the irregular appearance are also celebrated as a feature of the case
explained that the project was driven by the desire to align the estate “convictions [about territorial responsibility] with [its] actions” and was part of a “process of reflection born of our changing perception of the ideal case.”

CEO of Gaspin Bois said the team at Gaspin had been very enthusiastic about the new case
noting that it was important that it worked with people “whose values we share”
“Let’s hope that this project will lead to a change in practices in the industry,” he added
To design the ideal padding that is natural
Cheval Blanc and Adam carried out the development in collaboration with Traille
which recovers wool from the Basque and Béarn regions that would otherwise be jettisoned or exported for processing and has ambitions to re-industrialise this know-how
explains that at present only 4% of the wool shorn in France is processed domestically
burnt or buried every year from the South-West alone
offers ideal insulating and cushioning properties!” he said
around 80% of the wool harvested in France was sent to China to be processed and returned “in the form of carpets
Adam and Cheval Blanc are not only helping to rehabilitate a material with many virtues
they are also helping to perpetuate a pastoral tradition,” she said
more than 20 tonnes of wool will be used each year to wrap and protect bottles of Cheval Blanc – a significant amount that will hopefully inspire others to change practises
The first releases from the château to use the new case design will be Le Petit Cheval Blanc 2022 (released on the 3 September via La Place de Bordeaux) and Cheval Blanc 2022 (released en primeur and available in bottle from the winter)
it’s notable that the woollen sleeves make a fine set of wine ‘socks’ for hiding the identity of bottles in a blind tasting
Le Petit Cheval Blanc 2022 (Bordeaux blanc; 71 % Sauvignon Blanc
29 % Sémillon; 13% alcohol; crafted from a mosaic of 13 parcels from the 6.6 hectares of what was once the Tour du Pin vineyard just across the street from the château itself; tasted in October 2024 with Pierre-Olivier Clouet)
this has a lovely leafy Sauvignon signature to the aromatics
White currant leaf; blood orange; mandarin zest; lime; linden; beeswax; which peach; and a very evident stony minerality
There’s a hint of rose petal and an intriguing note of tomato stalk and vine
Cheval Blanc 2022 (Saint-Émilion; 53% Merlot
46% Cabernet Franc and 1% Cabernet Sauvignon; there is no Petit Cheval in this vintage; 41 of the 43 parcels in production were used in the final blend; tasted en primeur with Pierre-Olivier Clouet at the property)
Fabulously elegant with quite a tight and narrow frame
so no great amplitude and that just intensifies the sense of freshness and the density and compactness
Graphite rods and cedar and the most gracious Cabernet notes – those leafy
floral undercurrents that wells up from the bottom of the palate
This texturally sublime – what a mouthfeel
So cool; so intensely cool; it is like diving into the deepest plunge-pool
But it is also opulent in its concentrated purity and it is perhaps the most finely pixilated wine of the vintage at this stage (accentuated again by the narrow frame and the additional concentration and compactness that comes from that)
A wine of perfect balance and perfect harmony
it has that slight touch of austerity that is so rare in this vintage

Cheval Blanc Seychelles is the brand’s first “Maison” in Africa, the newest property in LVMH Hotel Management’s most exclusive portfolio, which opened exactly one week ago. The now six properties that make up the Cheval Blanc portfolio – the name taken from the French château acquired in 1998 by LVMH chairman Bernard Arnault – are never referred to as “hotels” or “resorts”
and their calling card is excellence in the art de recevoir

When the Cheval Blanc brand was launched in 2006
expectations were vertiginously high: the luxury-goods conglomerate with arguably the most comprehensive understanding of the desires of the world’s most discerning (or at least its richest) consumers was bringing the sum of its expertise to bear on luxury hotel management

from the Guerlain-branded spas to the Celine Cabas totes in the concept boutiques to the wine lists
but the real buzz erupted in 2013 when Cheval Blanc Randheli
It was followed a year later by the takeover of Hôtel Saint-Barth Isle de France
And so it went, in St Tropez (2019), then a Paris flagship (2021), involving a massively costly and ambitious rehabilitation of La Samaritaine

The Seychelles is one of travel’s great castaway paradigms – barefoot luxury writ in extravagant cursive
often by extravagant resorts with extravagant price tags (the North Island resort
commands over €10,000 per night at Easter)
Its beaches are some of the most swooned over in the Indian Ocean; its landscapes overflow with rare and spectacular flora; its world-class fly and ocean fishing are catnip to the gentleman adventurer
And while it has been some years since the Seychelles was in the sights of that highest stratum of the globetrotting beau monde
Cheval Blanc is betting on having a halo effect that retrains attention on its raw beauty

All the villas are enormous – number 26, where I slept, measures 235sq m high on the ridge – and what feels like acres of wall are replaced with glass. LVMH Hotels flew in taskforces from various Cheval Blanc and Belmond properties to critique their way through every experience
There are five restaurants: Le White and Le 1947 are brand regulars
respectively handling casual all-day dining and gastronomy
But the allure of Mizumi – a wide-ranging Japanese menu with continental embellishments
served in the tiny historic house – is fairly irresistible
salads and open-fire grill gives way on Thursday nights to a family-style feast of revisited Creole fare
Which brings us back to the destination itself – that elemental backdrop onto which Cheval Blanc is projecting its brand of extreme exclusivity
Lefebvre and the team acknowledge that the challenge of building to such rarefied expectations
lies in ensuring each property comes alive through connections to the place and the people
This Maison’s design is wonderfully open to the Seychelles’ raw beauty
Here’s hoping the soul of the place will eventually be

Cheval Blanc’s polished aesthetic values inform every space
from the wellness spa to the restaurants and secluded beach villas
Cheval Blanc Randheli opened in 2013, the second Maison by the LVMH Hotel Management group, which owns Cheval Blanc Courchevel in the French Alps. They have other resorts in St Barts, St-Tropez, Paris and the Seychelles

The gorgeous Guerlain spa, situated on the dedicated Spa Island, offers a wide range of treatments, including hot stone massages, seaweed wraps and sculpting facials in the six private Orchid villas. Yoga sessions are held on the beaches, gardens or in the overwater pavilion amid banyan trees and swooping bats silhouetted against lilac sunsets.
Cheval Blanc is a paradise for children. Activities include ghost-crab hunting, pool Zumba, and mini-disco. At Le Paddock, teenagers can play billiards, table football, table tennis, and computer games. The water park at Le Carrousel contains a swimming pool with two different depths, and toddlers can play in the splash pad.
The 7:1 staff/guest ratio means visitors are never short of assistance. A dedicated “ambassadeur” (butler), is on hand to plan your daily activities and provide the kind of overall mollycoddling that weakens your executive function.
All buildings are one storey, and guests can summon buggies for transfers to all parts of the island. The sandy paths aren’t suitable for wheelchairs, however.
The Concept Store features local crafts and brands such as Pucci, Vilebrequin and Hublot, which has designed a watch exclusive to the resort. On request, the boutique can be reserved for private perusals, or their products can be presented in-villa.
