Dining
Porano is back
After closing the restaurant’s downtown location in 2018
acclaimed chef Gerard Craft is reviving the quick-service Italian dining concept in the former First Watch location in Des Peres (13323 Manchester)
The much-anticipated restaurant is slated to open on Monday
July 29. Here’s what to know before you go
Louis Dining In and Dining Out newsletters to stay up-to-date on the local restaurant and culinary scene
Porano’s menu has four categories: salads
In keeping with the humble Italian hospitality that Craft intends to recreate at Porano
the menu is filled with such favorites as Caesar salad
which were a favorite at the flagship Porano and still are at Pastaria Deli & Wine (on weekends) and at CITYPARK (during soccer matches)
In keeping with the creativity for which the James Beard Award-winning chef is known at Niche Food Group’s other concepts
there are also such dishes as the Suzie Salad (made from a base of mixed greens and farro
dressed with pumpkin seed pesto and red wine vinaigrette
“There is something for everyone at Porano,” says chief operating officer Ryan Hux
who has a background at such national fast-casual brands as Shake Shack and Raising Cane’s
“We know that families and groups don’t always agree about what or where to eat
and we’re giving you the options and flexibility to get something for everyone in your group.”
This flexibility is most evident on the build-your-own menu
Guests first select a base of house-made pasta
from traditional Italian vinaigrette to creamy anchovy to Smoky Sunday Sugo
And the crowning touches are the toppings: fresh herbs
Among the sides are risotto balls with red sauce, a dish that longtime fans of Niche Food Group may recognize from Pastaria in Clayton
Desserts will also feel familiar to anyone who’s tasted Pastaria’s gelato; at Porano
the light Italian ice cream will be served as a gelato pop in a rotating array of flavors such as chocolate
A couple of beverages will also rotate seasonally; the initial offering is Meyer lemonade
and boozy slushies round out the beverage menu
Porano’s colorful 3,200-square-foot location is situated in Des Peres Pointe
“Being in Des Peres is a good fit with lots of families nearby,” Craft says
There’s also plenty of parking and easy access to major thoroughfares
all of which the original downtown location lacked
Mademan Designs planned the 64-seat dining room
where guests seat themselves after ordering at the counter via digital kiosks
A “noodle lane” expedites pickup for to-go orders that are placed in advance
Craft says Porano’s style was inspired by popular chains that incorporate visual design decisions from the start
customers who remember dining at the downtown location may remember the large mural of Italian landmarks superimposed on notable St
(Porano is inspired by a small town in the Italian region of Umbria.) A similar mural reappears at the Des Peres location
along with an artistic rendering of Porano amid nearby businesses
Even the takeout bags—with playful designs by Atomicdust—are synced to the concept.
Craft’s goal is to connect the place that inspired this eatery—the real-life town of Porano
Even though many years have passed since the concept launched
the Italian way of life continues to be top of mind for Craft
“I still spend a ton of time in Italy,” he says
“I was there in the winter for a wedding
and I’ll be there in September to help lead a food tour.”
Following Porano’s initial run in downtown from 2016 to 2018, Craft patiently awaited the right time to relaunch the chef-driven concept. After announcing plans to reopen the concept
he reintroduced Porano’s menu at a series of pop-ups earlier this year
with company veteran Hannah Rehmer (who started in the deli and wine department) serving as the general manager and Matt Masek managing the kitchen
The restaurant’s also planning to add catering options soon—and two more Porano locations are slated to open in the next 18 months
“One of the things that surprised me the most is that the market has not become flooded with really great fast casual options,” Craft says
That may be because it’s challenging to do pasta well in this format
something that Craft and his team have mastered
Everything is made by the Niche Food Group
either at Porano or at the Pastaria kitchen
“We were very sad to close the original location,” says Craft
“and are thrilled to bring the concept back after six years.”
The neighborhoods for the new locations are still to be determined
but one thing is for sure: Each new Porano location will have a foosball table
It might just be Craft’s favorite detail in the whole restaurant

Laura Wilhelm talks about remodeling the Des Peres home she grew up in and the importance it holds for her and her whole family
A porch stretches across the front of the Wilhelm home
growing up with her parents and five sisters in a 1963-built
two-story home in a quiet Des Peres subdivision
Clement of Rome Catholic School and later attending Visitation Academy where her grandmother was a librarian
Upstairs was like a sorority house,” she remembers
The home’s new open floor plan includes a dining area with seating for eight
and a new family/TV room where the garage used to be
Wilhelm’s parents lived in the house for 44 years before moving to a single-story ranch in Kirkwood in 2019 to begin their next chapter
it was hard to fathom not keeping it in the family
the house needed updates and the question of who might be willing to invest in it came to light
No one else was ready to take on a project
decided to take the leap to purchase and renovate the house for themselves and their three teenage sons
Her parents even wrote into the sales contract that the couple must continue the tradition of hosting the family’s big annual Easter Egg Hunt
they were forced to put the renovation on the back burner for a year as stay-at-home orders and labor shortages took hold
Laura Wilhelm’s parents built this covered deck for outdoor dining and entertaining
Two of the Wilhelms’ three sons attend college at Ole Miss and they proudly fly the university’s flag
they started in the finished basement and worked their way up
The process was not without challenges and doubts
“As they were tearing apart my mother’s home
I thought ‘what have I done?’ There was that emotion going through it,” she says
The Wilhelms opened up the traditionally divided rooms on the main floor and extended it into what was the garage
adding a cozy family room space off the kitchen with a sectional and TV
“We wanted to get rid of as many walls as we could,” Laura says
The spacious and bright kitchen includes glass-front lighted cabinetry
clean white countertops and two large islands with seating for the whole family
The new open floor plan includes a more formal living room
a dining area with a round table for eight
and a huge chef’s kitchen with two islands ideally suited for family gatherings and casual hangouts with the boys and their friends
each of the existing bedrooms and bathrooms were fully remodeled
and a spacious primary suite with a vaulted ceiling was added over the new family room
A new garage will be built this fall to replace the original that was removed to create those spaces
Laura Wilhelm designed the entire interior of the home
working with contractor Matt Rothgangel to execute her vision and complete all of the finishes
The house and its furnishings are nearly all white with accents of beige
She hand painted or distressed many of the antique furnishings
including pieces found at estate sales and local shops as well as family heirlooms
her mother’s piano remains the only unpainted natural wood piece in the house
left untouched to preserve the memories it contained
“They had friends who would play the piano
The home’s outdoor spaces offer as much opportunity for memory making as the inside
the private backyard includes a covered deck for outdoor dining overlooking the original swimming pool
Under the deck is a built-in bar area leading into the finished lower level
the backyard has been the site of numerous family gatherings
and even Laura and Ken’s wedding over the decades
Laura Wilhelm poses with her dog Josie on the front porch
The final piece of the renovation was the addition of an expansive front porch
Well-appointed with a traditional porch swing
Wilhelm kept a sign that her mom always had hung next to the front door that reads
“Friends like flowers give pleasure just by being.”
Now that the Wilhelms have settled into their renovated home
they are overjoyed to share it with Laura’s extended family including her sisters
“It was a big project and an emotional one and I’m just so happy that our parents are healthy and can come back and enjoy it,” says Laura
“To be in my childhood home is one of the coolest things
I didn’t realize how awesome it would be to still see some of the neighbors from when I grew up here.”
Occupations: Laura volunteers and does interior design; Ken works in marketing for Nestlé Purina
Family: The Wilhelms have three sons: Tommy
They also share the home with their goldendoodle

Olivette residents who oppose a plan for a medical marijuana farm hold signs outside a city building ahead of a city council vote on the issue on Tuesday
LOUIS COUNTY — An effort to ban recreational pot sales in two suburbs here went up in smoke Tuesday after failing to garner enough support from voters
But the measure needed at least 60% approval from city voters to pass
a ban failed to get even a simple majority approval
the cities would have been the first Missouri communities to outlaw sale of adult-use marijuana within city limits since voters legalized it statewide in 2022
State law bars cities from banning sales of marijuana for medical use
but it allows cities the option to have residents vote on banning recreational marijuana sales during November presidential elections
It requires at least 60% of city voters approve such a ban
This year was the first opportunity to try
Leaders in both cities put the question on the ballot at the behest of dozens of residents who claimed dispensaries would be too close to residential neighborhoods and bring odor
previously voted to put the question on the November ballot — but then reversed the decision after finding sales tax revenues were benefiting two drug-prevention and treatment programs
a city of about 15,000 residents between Rolla and Springfield
would not have barred marijuana dispensaries from locating in either city
But a ban would have limited dispensaries to selling only to adults with state-issued licenses to use the drug for medicinal purposes
Recreational marijuana was legalized in November 2022 with the support of 53% of Missouri voters
dozens of recreational marijuana dispensaries have opened across the St
including several in cities neighboring both Des Peres and Olivette
cities also set regulations on both medical and recreational pot businesses’ locations and operations
including limiting them to locations more than 1,000 feet away from homes

Soon after water destroyed homes and killed two people in University City two years ago
residents began to search for ways to prevent a similar flood from hitting their community again
After looking at solutions in other communities around the world
some think tiny forests could help absorb water and stave off damage from flooding that is expected to worsen because of climate change
A tiny forest is only about the size of a basketball court
chair of the Green Practices Commission in University City
“It’s something we can do to help with climate change and our immediate flood problems,” Mueller said
The tiny forest trend started in Japan, pioneered by botanist Akira Miyawaki
who began restoring natural forests in the 1980s
the micro-ecosystems can be found around the world
One potential location Mueller is considering is a triangle of land owned by the city off Groby Road near Olive
The lot borders the River Des Peres and is near Brittany Woods Middle School
which Mueller hopes could lead to student participation in the project
Mueller envisions a densely planted parcel of land full of native trees
The long roots of these plants do a better job soaking up water than a lawn-like alternative
Mueller said it’s also important to add things like mulch to the soil to make it less dense
improving water absorption and creating conditions for the plants to mature much quicker than they would in nature
“It won’t totally solve the flooding problem in U City or anywhere
“It’s a small thing that we can do and part of the attraction for me is that it’s an achievable project.”
Don Fitz’s basement filled with 7½ feet of water during the 2022 flood
destroying books and papers collected over a decades-long career dedicated to the environment
he helped form the University Heights neighborhood association’s flood task force
“I experienced and I watched the devastation of my neighbors
and so that’s really what got me into the issue,” Fitz said
Fitz has learned climate change is just one factor creating more dangerous floods in St
Fitz said building homes right next to rivers
overuse of pavement and efforts to channelize rivers have made the situation even more dangerous
“It’s not a natural disaster if you know that floods are going to happen and you just don’t build right up next to them,” Fitz said
“As soon as you build next to them and build roads next to them it becomes a human-made disaster.”
Fitz believes the solution will be returning the River Des Peres to its natural state as much as possible
working with the land to find natural ways to soak up water
He especially hopes the city will begin to take out unused parking lots
“There’s many areas in University City that are covered by large expanses of concrete where there’s not an ability of the land to soak up water,” Fitz said
Mueller will give a presentation on how tiny forests could lessen flood damage at 7 p.m
Wednesday at the University City Library Auditorium
She aims to inform the community and find people who might be interested in volunteering to create the pilot plot
