opportunity I couldn’t pass up – to be able to go from a 2A program to a 4A program and not have to move very far to do so,” Hobbs said But he also said he was very sad to leave Schulenburg where he got his first head coaching job two years ago He inherited a Shorthorns team that had gone 0-10 the year before he arrived They went 5-6 and made the playoffs his first year in Schulenburg Then last season Hobbs and the Schulenburg football team went 8-4 and made it to the second round of the play- offs Hobbs told his players he had accepted the Giddings job during a meeting Monday afternoon “The best part of Schulenburg was those kids Those kids are winners and they are going to keep winning Hobbs now faces another rebuilding effort in Giddings The Buffaloes have fallen on hard times the last credit it’s more than just meat in many ways It helps us understand who we are and where we’ve been the meat market pitmaster who many generations ago brought a Texas community together The story is told in Texas Monthly, where Daniel Vaughn is barbecue editor Listen to the interview above or read the transcript below This transcript has been edited lightly for clarity: Texas Standard: You write that in 2019 the Texas House of Representatives passed a resolution honoring “Tootsie” Tomanetz of Snow’s BBQ in Lexington – a very famous pitmaster who just been inducted into the American Royal Association’s Barbecue Hall of Fame as you did a little bit more research into her story you wanted to know more about the pitmaster who tutored Tomanetz way back in the day Daniel Vaughn: Orange Holloway is the long forgotten pitmaster who taught Tootsie Tomanetz,  one of the most famous barbecue pitmasters in Texas I think a lot of people know Tootsie from her work at Snow’s BBQ, who’s been at the top of our Texas Monthly list for many years long before she was working at Snow’s BBQ long before she and her husband were working at their own market in Lexington she was down in Giddings as really a barbecue greenhorn and didn’t really know where to start as far as cooking barbecue or making sausage who was a long time employee there in Giddings at the City Meat Market that taught her how So I gather that this prompted you to sort of make a pilgrimage to Giddings yourself You went  to a family reunion nearby to learn more about Orange Holloway and his impact on the city and she had mentioned Orange Holloway and really what a meaningful character he was in her life But there weren’t really a whole lot of details about Mr So it had been really a long time and couldn’t really find a whole lot of recent information One of the family members actually reached out to me and noted that his four children were still alive but were getting rather up there in years So we gathered together in Giddings at the City Meat Market and shared a meal and talked about their father That must have been a heck of an experience because back when Orange Holloway was at his prime as pitmaster I guess you might say Giddings was quite a segregated place And just talking to this group – I mean Vergie Brown and Myrtle Holloway Mitchell – talking to the four of them but just about what life was like in Giddings They talked about wanting to go to the movie theater but having to go up into the balcony if they wanted to watch anything There was a side door into the City Meat Market where most of the Black customers would enter right next to the pit Orange was a Black Texan there in Giddings. He was known for his hunting dogs and there was a notable tragedy involving those dogs. It’s a moving story that you recount and I’m going to suggest people read the full version in your Texas Monthly article But the short version of those dogs – what happened he had these highly trained hunting dogs and he had different dogs for hunting different animals – rabbit dogs But the most prized one we have were his wolf-hunting dogs “wolf” is just the name that they called coyotes back then But any of those coyotes who were out and about were likely hunting small calves and sheep and so they would hire Orange Holloway to come out and use those trained hunting dogs to track down the wolves he was out hunting and there was a farmer who was unhappy about the dogs being on the property and Orange Holloway ended up taking him to court that was his first court case that he argued in front of a jury he went to court and he argued that this white rancher needed to pay for these dog’s compensation He needed to pay for the damage that he’d done that was the first time that a jury in that county had awarded damages to a Black man from a white man Orange Holloway had many effects on the community I gather that the food that he served was so well known people would pass by some of the bigger towns around so they could get his sausage right now is known as the “sausage capital of Texas.” But the legend goes that when Orange Holloway Sr they would bypass Elgin to come down to Giddings to get the sausage or at least has a recipe that she thinks closely resembles the sausage that Orange Holloway used to make because he never measured anything He would basically lay out the ground meat and just sort of spread the spices across that meat until it looked right So she has a recipe that she thinks is a good approximation but she hasn’t made it in many years why did you want to share the story of Orange Holloway I focus so much on the pitmasters who are alive today and those that are sort of making the story of Texas barbecue right now But I think telling the history of Texas barbecue and certainly telling it through the people who actually did the work and not just the people who own the barbecue joints and the meat markets is an important thing So that’s really why I wanted to find out more details about Orange Holloway and understand how he became so influential as to teach really one of the most famous pitmasters that we celebrate now in Texas If you found the reporting above valuable, please consider making a donation to support it here. An FBI agent came to the Ivory family home in Howell Township The dust had largely settled on the summer’s struggle between her group of concerned parents and the local chapter of the Ku Klux Klan The agent tried to explain that Klan speech was covered by the First Amendment and that little could be done against them Events in rural Monmouth County had been sparked by homework A Black student in Howell Township schools had been assigned to write about their “family heritage.” The student’s grandmother asked for an exception writing that neither she nor the student had ever studied African American history and that the school had no texts available to guide them Black parents and guardians organized themselves into Citizens for Progressive Action and called for the local school board to start a Black studies curriculum in grade school and to close schools for Martin Luther King Jr.’s birthday trash and Klan literature were thrown into the yards of four CPA leaders and Elenora cautioned the local newspaper “We intend to use whatever means of support necessary to protect ourselves.” It was liberation time, and “by any means necessary” was language that flowed naturally for Elenora, who would become the third ordained Black woman in the Presbyterian church. Rural New Jersey was not exempt from what Black liberation had set in motion nationally. While driving, Elenora would be routinely stopped by police, mistakenly identified as Assata Shakur The Klan had deep roots in Monmouth County. In the 1920s it was strong enough to build Klan summer resorts, and set up marches through Jersey shore towns. A renascent New Jersey Klan was trailed and surveilled by the FBI in the mid-1960s In 1971 the language of the United Klans of America was also shaped by the politics of Black liberation One of the flyers loosed on the Ivory lawn decried “those who have promoted race mixing to pollute our white race; the SDS and Black Panther revolutionaries who are working to destroy our country to achieve their fanatical goal of WORLD COMMUNISM” [capitals in original] Citizens for Progressive Action sought something radical: authentic encounter among people They wrote “The incorporation of multi-ethnic history into existing social studies programs is essential It would help promote better understanding and communication between races.” The UKA held this to be the leading edge of a plot to dominate the society of Howell Township: “Our organization is dedicated to the purpose of never permitting this take-over by the Blacks of our community occurring at any time now or in the future.” (As of 2023 Howell, NJ was 73% white.) 1971 a man was arrested by Howell police for burning a shoddily constructed cross as the police “feared reprisals.” On the 25th the Board of Education met in closed session with Citizens for Progressive Action In the end they managed a letter writing campaign of three the schools had announced an in-service commemoration of Martin Luther King on January 15 and had promised to develop a multi-ethnic social studies curriculum Elenora Giddings Ivory’s course would lead her to Harvard Divinity School The public pursuit of justice and mercy would shape her whole career In a public prayer contributed to the volume African American Presbyterian Clergywomen Elenora called for truth and understanding in much the same way she had in Howell in 1971: “Lead us from public deceptions that weaken trust / Lead us from divisions among us based on class or sexuality / Lead us from wealth that will not share.” Archives 18-1108 World View From Elenora Giddings Ivory Tower Use this form to sign up for any one or multiple blogs and/or newsletters at once If you would like to learn more about each Lafayette contestant Kayla Giddings and her 'Wizards of Baking' partner Yohann Le Bescond work on an intricate cake as the time clock ticks down Lafayette's Kayla Giddings and Yohann Le Bescond met for the first time when they were teamed up on Food Network's 'Harry Potter: Wizards of Baking.' says Food Network went all out to create a magical backdrop for the set of 'Harry Potter: Wizards of Baking.'
