"I really don't believe in people dying because they've done bad things but in the world of the justice of this show there's such a redemptive element to Kate's demise that it would've been OK," she added Ritchie said she's happy that Henry has a consistent and stable parent "She's done some pretty dastardly things and she's got herself into scrapes and been responsible for a lot of people's downfalls," Ritche said I was on the fence as to what should happen to her but I was obviously really pleased that she comes through." Email hello@SeattleRefined.com It's not often that I walk into a restaurant and see a chef prepping something that I've never seen before but that's exactly what happened the first time I met Chef Nathan Lockwood at Altura He was shaving dry-cured tuna heart over pasta I haven't seen that presentation anywhere else in the city What's your first memory of someone cooking I grew up in a very health-conscious household in the early 80s I've always remembered my Italian grandmother making ragu in our kitchen while my parents were out I don't have any recollection of tasting it I remember my mother's disapproval when she returned home carrots and onions simmering in animal fat with spicy garlic and tangy tomato I remember seeing the way the tomato paste dyed the fat a glorious red-brown and the way it clung stubbornly to the dishes and utensils I'll never forget the reverent way she gazed into the pot of simmering sauce or for how many hours she slowly stirred family and the future all at the same time without ever saying a word It's taken the better part of 40 years to begin to understand Most likely my competitive nature combined with my desire to stay up late and a distaste for sitting down I am a restaurant operator by chance and a line cook by trade I enjoy creating menus and designing new dishes and l have learned to find rewards in the process of managing and mentoring like-minded individuals But it is the challenge of service that holds my attention The simple task to perform better every day than the last To have my station and person as clean and organized at the end of service as it started What's your most memorable job besides feeding people and I've never really done anything else I was a janitor at a steel mill for a couple days and inventory/stocking associate at big box stores for a dozen or so shifts I assembled prefab furniture in the middle of the night to open Walmarts across Northern California during the aggressive expansion of the mid-90s and got a glimpse at big corporations I'll certainly never forget it and I got out as fast as I could I got a job washing dishes and never looked back How long have you been in the industry and how many places have you applied your craft 2024 marks 30 years I've spent in the kitchen I'd estimate I've been through around 15 kitchens across 5 states or so From dive bars and brewpubs to Michelin-starred spots I've held every position from dishwasher to executive chef from 20-seat tasting menus to hotel kitchens and 2,500-person banquets What is a favorite dish or menu you've created and what inspired it The menu at Altura is an extension of my person and a road map to my experiences there are dozens of dishes that reappear every year often with subtle or dramatic changes that reflect either the evolution of our understanding of the ingredients or nuances of the weather and seasonal changes that are particular to that moment Interpreting the present through the lens provided by our collective past makes for a tasty dinner the first dish I made at Acquerello is the lamb and beef ragu we serve every night at Carrello The inspiration was the hazy memory of Grandma's sauce I mentioned but it still sings a familiar song to me some 40 years later Tell us your favorite ingredient and something we should know about it technique and determination to make tripe into the favorite thing we serve Nowhere is the transformation from raw ingredient to finished product more pronounced What’s a memorable meal that someone else created for you Likely as I don't often make room in the kitchen at work or at home for them to do so It's the only time I can recall while I lived in San Francisco that I came home to a fresh cooked meal which is good because it never happened again Which local restaurant or bar are you loving right now and what do you order 37 portions of the monkfish liver at Ltd Edition Sushi Tell us something you enjoy outside of work Skiing as much as possible while these knees hold up and playing and building acoustic guitars I've been an avid homebrewer and beer advocate for as long as I've been cooking.
