two-ingredient omelet, whipped eggs and dry Jack Vella cheese, with a squirt of backyard lemon and some Pezzini Farms Artichoke Seasoning elegant but indulgent element of dill that made me wish my omelets were bigger I remember that instead of the usual olive oil I deployed Lemon Dill Chef Butter on the pan longtime friends and former chefs Jane Hayes and Janet Melac had to be smiling This outcome—to make restaurant-level flavor so easy it approaches accidental—was front of mind for Hayes when she called her friend amid COVID to share a long-held ambition for fancy compound butters, made easy She tapped Melac—who graduated top of her class at Le Cordon Bleu Paris—to conjure the flavors which originally numbered 25 that they tested with friends all over the country The nine they’ve simmered down to inspire recipe ideas by themselves Consider the possibilities for any and all of the following: Basil Garlic Melac loves the “umami bomb” quality of the Shiitake Ginger Monterey Bay staple that happens to tasty healthy and labor intensive—into a max convenient ingredient that doesn’t sacrifice a nanoparticle of freshness or flavor When I dug into the area artichoke industry with “Artichokes: Diving to the heart of what makes the local gem great,” her Salinas-centered workshop—just down the road from her favorite Castroville artichokes—was the coolest discovery As I report in the print issue out now (Spring 2025): she and her team rescue artichokes deemed too flawed to sell whole—because they might look a little iffy from frostbite or have a hole in a leaf—hand-trim them to their hearts and give the leaves to local beef ranchers whose cows love to munch them oils or leaves of typically imported jarred hearts and one whose simple freshness and flavor speaks to the thought that went into it our fresh artichoke hearts add an element of richness and complexity to a meal not found anywhere else,” Hayes says “I have vegetarian customers tell me Natalie Scharf; Paul Asaro A CCB set is both exhilarating and educational: Andy knows and has arranged or transcribed Twenties and Thirties compositions that would otherwise be only entries in discographies and the band plays them with spirit and accuracy Even when the resulting performance is less than three minutes long a force of nature has made itself at home onstage clarinet trios and evocations of the Apex Club Orchestra are a singular pleasure And the CCB can become a 1926 dance band or the Henderson orchestra with no more effort than choosing number 826 as their next offering The most consistent pleasures came from Dawn Lambeth and her Daybreakers (a band name coined by Danny Tobias) I’ve been a devoted fan for more than two decades and at last year’s Bash she sang with great style This year saw the addition of the nonpareil guitarist The group occupied the fertile space between 1936 Teddy Wilson and 1955 Bethlehem Records and she sang marvelously: touching ballads (I Get Ideas) which should be available when you read this The Daybreakers were a splendid band on their own and brought a marvelous Kansas City Six feeling to (Way Down Yonder in New Orleans) Other instrumental features were (Lady Be Good) and the rocking rhythm section cheering everyone with (Rosetta) and (Bei Mir Bist Du Schoen) Reynolds brought his impish magic to each set with (Pardon Me in a hurry to get a good seat so that I could get the best video I fueled myself with packaged sandwiches and plastic cups of ice water because the Bash was somewhere between the best dream and a party full of the most generously creative friends Michael Steinman has been published in many jazz periodicals, has written the liner notes for dozens of CDs, and was the New York correspondent for The Mississippi Rag.
