What happens when a barbecue restaurant meets an oyster bar
You get a venue that's grillin' and chillin'
The Shed Barbecue and Blues Joint
is tackling some of Mississippi's most treasured culinary experiences and bringing them to customers in a one-stop dining experience
The Shed also has an RV park and campsite for those wanting to make a weekend — or a week — of it
The Roasted Oyster brings the talents of Tres Hundertmark
a chef with more than 30 years of experience
whose oyster career was shaped over the past eight years
Hundertmark has worked in the oyster industry for decades
before returning to the Mississippi Coast after working at restaurants in Biloxi and New Orleans
"What I like about oysters is they speak exactly for themselves," he said
there is nothing that I can do that changes that oyster from being that oyster
And oysters change flavors twice a day — every single day."
Hundertmark explained that oysters live in brackish water where the tide comes in and goes out every day
changing the level of salinity at those times
weather conditions and algae species affect the oysters' flavor and appearance
"There's all kinds of different things that chefs can do — like all the dishes I make — but at the end of the day
Hattiesburg: Golden Chick opens third Mississippi location. This one's near the zoo
who for most of her career was a bookkeeper
turned in her office chair for a shucking knife and found a more vibrant job working with oysters and engaging with people who enjoy them
"I have learned to love shucking," she said
She may be newer to the profession than her partner
but she has taken her new skills to oyster competitions
Coney Island Cafe: Here's what happened at the MS diner on its last day after 102 years
In addition to the Gulf Coast's Eastern oysters
Roasted Oyster offers a sampling from other areas
with each area producing a unique look and flavor profile
The Roasted Oyster offers a gallon bucket of shuck-your-own coastal oysters for $30
which can range from two dozen to two-and-a-half dozen oysters per bucket or more adventurous oyster connoisseurs can try a flight of specialty oysters with half a dozen raw and half a dozen grilled for the same price
Hundertmark said curious customers who try the pork sandwich at The Shed are invited to stroll over to the Roasted Oyster to sample a few oysters for free
Rivers said the flavor profiles range from buttery to briny
so there are oyster varieties to suit anyone's preference
"Everyone's palate is different," she said
One of the more colorful breeds is the green gill oyster. The vibrant greens and blues of the gills come from a microalgae found only in certain places around the world
They are usually only found a few weeks out of the year in the wild
but are becoming more plentiful with cultivation
Farming oysters is one way to replenish dwindling populations
pollutants and dead zones contribute to the loss of oyster habitat
but scientists and entrepreneurs are hoping to change that
"Aquaculture has taken a big role in helping support the need
the wild harvester can't do it," Hargrove said
See details: The wait is over. Vicious Biscuit is finally ready to open in Hattiesburg.
In addition to meeting the demand for oysters
cultivating them is beneficial in other ways
feeding on the plankton and algae they collect while releasing particle-free water
"The amazing thing about shellfish farming
is that fact that they clean the water — about 50 gallons of water a day per oyster — they clean better than a Brita," he said
Brad Orrison
who opened The Shed in 2001 with his sister
is an innovator with a larger-than-life personality who has made several TV appearances
including food competitions and a series called "The Shed," which aired in 2013
He starred in the "Life With Bubba" movies released in 2021 and 2023

(WLOX) - Ocean Springs leaders are looking to see how they can open the Hanshaw Bridge sooner rather than later
The state ordered the bridge closed on March 5 until it can be repaired or replaced
The bridge was given a substructure rating of three
Wooden pilings that support the bridge have deteriorated
Ocean Springs Mayor Kenny Holloway is set to meet with the state agency that ordered the closure on Wednesday to ask about temporarily reopening it to allow cars and motorcycles but prohibit heavy trucks
then we’ll open the bridge back up and we’ll do the construction part of it when school lets out,” Mayor Holloway said
“When the students aren’t in and we’ll do it over the summer break.”
“We got a waterline attached to the bridge and we’ll have to take care of the removal of that,” Mayor Holloway said
“There’s also a sewer line that’s attached to this bridge that will need to be removed along with the gas line
the county will then come and lift this deck off
drive some new pilings and set the deck back on top of it.”
the city asked the Jackson County Board of Supervisors to help make repairs to the Hanshaw Road Bridge
and the Ocean Springs Board of Alderman voted on the agreement Tuesday
The plan is to repair the bridge as quickly as possible and consider replacing the 34-year-old structure sometime in the next five years
“They’ll be more wood pilings driven and replacing the ones that are there because the cap won’t accept a concrete piling because it was specifically designed for a wooden piling,” Mayor Holloway said
Since the bridge closed
nearly 9,900 vehicles travel the bridge daily
That includes traffic going to and from Ocean Springs Middle School
The mayor says trucks and school buses will have to continue on using alternative routes if the state signs off on reopening the bridge
officials with the Ocean Springs Police Department announced the arrest of 34-year-old Ian Anthony Seghers
who is wanted for second-degree murder out of Baton Rouge
a family member of Seghers told investigators that he was staying at his home in the 5000 block of Southland Street
Officials set up surveillance on the house just before 11 p.m
and contacted the owner of the home over the phone to confirm that Seghers had been staying there for the past several days
a search warrant was obtained and carried out on the home
Seghers was not located in the home or in the nearby woods
the homeowner contacted dispatchers to tell them he had been contacted by Seghers over the phone
Seghers explained he was hiding in the woods near the home and asked the homeowner to place his belongings outside for him to retrieve
detectives with Ocean Springs PD obtained a second search warrant for the residence
A perimeter was set up around the area near the home
and deputies with the Jackson County Sheriff’s Office also responded to the area
Seghers was eventually caught hiding in a shed on the property by a JCSO K-9 unit
He was taken into custody without incident and taken to Jackson County Adult Detention Center

J was born in New York and eventually moved to Georgia where she spent the first seven years of her life as an only child
She then gave up that title when her baby brother Jaxon was born
She quickly fell in love and became his very best friend
being able to make him laugh like no other
We moved to Ocean Springs where we later welcomed her baby sister Charlie
She spent hours upon hours dressing her up like her own personal baby doll
She spent the remainder of her life in Ocean Springs
meeting many great friends turned family along the way
she had big dreams of moving back to New York to become a stylist after attending Arrojo Academy in Soho
She could “slay a look” like nobody’s business
J was loved by all who had the privilege of knowing her
She was a bright light whose smile lit up any room she walked into
She had a knack for lifting people up and always rooted for the underdog
J was funny without trying and could make you laugh when you needed it most
The courage that she showed just to be herself in a world that frowns upon differences was admirable
She was preceded in death by her favorite person on this planet
We are confident that she is currently cradling her in her arms
Kera and Jordan Maye; her baby brother and sister
Emmy and Nichelle; her maternal grandparents
Timothy and Tricia Fortney; and her paternal grandparents
She also has countless cousins and extended family that love her dearly
Her absence leaves a gaping hole in our hearts
The world is a much darker place without her presence
and we will keep her memory alive for as long as we live
we ask that you consider donating to Harbor Camps in Massachusetts
Please use this link if you so choose to donate to a great cause that was near and dear to Jordan’s heart
A memorial service will be held at 2:00pm on Thursday
