Anna Landmark is now running the cafe at Seven Acre Dairy
Landmark’s cafe moved from her building at 6858 Paoli Road down the block to the Seven Acre cafe space
where it is called Landmark Creamery & Cafe and incorporates foods from both businesses and more dairy collaborations
“Now Seven Acre owns part of a cheese and butter company
and we have access to more resources to grow Landmark,” Landmark says
“I think it’s a win-win for both companies.”
Landmark has been making butter at Seven Acre since 2023
But the dairy focus of both businesses presented opportunities beyond butter
Seven Acre menu items now feature Landmark’s cheeses and butter
which is a swath of butter on a board finished with herbs or other accoutrements and served with a roll or bread
The lunch menu in the cafe features grilled cheese sandwiches, as it did at the original Landmark property. Biscuits are made with Landmark butter and buttermilk. The cafe also serves raclette hot dogs with a creamy
fondue-adjacent cheese melted onto the dog
Landmark also makes ice cream that is served at the cafe
Seven Acre owner Nic Mink says the restaurant has a new chef
Ben Serum from Madison’s DelecTable and A Pig in a Fur Coat
who is eager to bring more dairy items to the menu
more artisanal things that Anna is testing or doesn’t yet make at scale,” Mink says
Landmark’s original facility down the road is now used for aging cheese; she makes cheese at Chalet Cheese Cooperative in Monroe with milk from Voegeli Farms’ Brown Swiss herd
Landmark has more time and space to host more events
Landmark will host a cheese cave tour and tasting event at her facility that include samples of three or four Landmark cheeses
a glass of wine or other beverage as well as accompaniments
It’s not like a tour at Cave of the Mounds
“I have to tell people a little bit about that,” Landmark says
He and Landmark plan to work together on a “cheese garden” at Seven Acre during the summer
It’s possibly the most Wisconsin thing ever invented — a beer garden with cheese as its focus
“We’ll have fun with cheese boards and cheese
cheese spreads and other dairy foods,” Mink says
“And a really nice selection of local beers.”
Mink also plans to add a performance space in the far back of the property to host music during the summer
With a partnership that is just getting started
neither Landmark nor Mink are out of ideas or room for them to grow

PAOLI – Bedford North Lawrence posted its first wins on the court this season while finishing third in the Paoli Invitational during girls high school tennis action on Saturday
Emma Conover recorded a first-round win in No.1 singles
while the No.2 doubles duo of Emma Voris and Claire Edwards also broke through with a win in the opening round as the Stars totaled 4 team points
Southeastern won the team title with 15 points while Evansville Christian had 13 in the four-team event
Conover conquered Paoli’s Morgan Flannery 6-2
6-1 decision to Christian’s Kate Cashmer in the final
”Emma played super well against Paoli,” BNL coach Ian Dillman said
but she was able to get around to the side of the ball
“Her second round was some of her best hitting
Her movement was there and her errors were low
That’s a good sign to see as a No.1 singles player.”
Voris and Edwards fought off Paoli’s Addie Payton and Kendyl Thompson 6-2
then fell to Southwestern’s Jacelyn Johnson and Kaylee Hite 6-0
”Emma and Claire did a fantastic job in their first-round match,” Dillman said
“They were dominant at the net in the first set and forced their opponents off the court
In the second set you could feel the heat coming
but we were able to hold our nerves and pull it out
I couldn’t be happier with my freshman duo that match.”
BNL was able to win six games during the two rounds on the other three courts
we still struggled with moving our feet and anticipating the next ball,” Dillman said
“We are hitting the drawing board for those people with more footwork drills
“The other teams were just too strong with their groundstrokes
They were able to place their shots and make my team work for it.”
1 Ann Curtis and Lauren Salzmann lost to Ava Barnes and Raygan Crawford
6-4; lost to Jacelyn Johnson and Kaylee Hite

Amtrak has awarded the first of three crucial construction contracts for the Zoo to Paoli Electrification Transmission Line Program
HNTB was selected for project and construction management support for the substation at Bryn Mawr and the Bryn Mawr to Paoli segment of the overall project
The multi-year program – separate from the track work underway between Harrisburg and Lancaster – will upgrade the electrification system along an 18-mile section of track between the Zoo Substation in Philadelphia and the Paoli Substation in Chester County
The multi-year program will be implemented in coordination with state and local partners at the Pennsylvania Department of Transportation (PennDOT) and the Southeastern Pennsylvania Transportation Authority (SEPTA)
all overhead wire and catenary poles will be restored to a state-of-good-repair
The existing high voltage transmission line (138kV)
Amtrak’s Keystone Service and Pennsylvanian trains
will benefit from more reliable service thanks to a modern overhead catenary system (OCS) and power generation and distribution infrastructure,” said Amtrak Executive Vice President of Capital Delivery Laura Mason
“Our goal is to increase reliability and efficiency along this heavily traveled portion of the railroad
which includes Amtrak’s longest distance between power substations along the New York-Washington-Harrisburg corridor.”
Construction of the new transmission line will require:
The work will be completed across three major components:
The existing Bryn Mawr switching station (12kV) adjacent to Bryn Mawr train station (located on Bryn Mawr Avenue in Montgomery County) will be demolished and replaced by new substation equipment to reinforce the power supply for the track section between Philadelphia-Paoli and ease maintenance by consolidating infrastructure on the right of way.
Amtrak has awarded a contract to Vanalt Electrical Construction
which is slated to begin construction in fall 2024.
Amtrak plans to apply for FSP-NEC funding to support the Zoo to Paoli Electrification Transmission Line Program.
Amtrak intends to deliver both transmission line segments through a Design-Bid-Build approach
A RFP is underway for the program and construction management services contract to support the Bryn Mawr Substation Replacement and Paoli to Bryn Mawr OCS Upgrades
with a future option to support the Bryn Mawr to Zoo OCS Upgrades.
Amtrak will inform local community members about any potential impacts due to construction
such as road closures or other activities.
Rail Yard Upgrades in Philadelphia and more.
“This is a critical infrastructure project that will greatly benefit SEPTA’s customers who travel along the heavily used Paoli/Thorndale Line,” said SEPTA CEO and General Manager Leslie S
“The planned power system upgrades will improve reliability and significantly enhance the customer experience
We look forward to working with Amtrak throughout the project to minimize the construction impacts on our customers.”

The Frost to Flower series runs January to April
featuring nearly two dozen James Beard-nominated chefs and authors from around the country
Nic Mink had one of the best meals of his life at Ina Mae Tavern
a New Orleans-inspired restaurant in Wicker Park
Since then, Mink has been trying to get Ina Mae’s chef, two-time James Beard semifinalist and Michelin Bib Gourmand-awarded Brian Jupiter
“That was kind of a fanboy reach-out,” said Mink, who has organized several pop-up series featuring guest chefs for about a year and a half at Seven Acre Dairy Company
The Frost to Flower dinner series presents Mink’s most ambitious lineup yet
Events span January to April and feature nearly two dozen chefs
from the foods of the Cherokee Nation and “Haute Creole” cooking to elegant Venezuelan dishes
Italian American classics and Turkish fare
Ticket prices range from $30 for a Mexican buffet to $175 for an Argentinian steakhouse dinner
“It’s a new level of geographic diversity and food diversity,” Mink said
“We need to give people more of a reason to travel from downtown Madison than just dinner
special brunches … generally that’s where we’ve found our most success.”
Mink has asked some chefs to stay longer and do a little more
starting with chef and activist Nico Albert Williams from Jan
is based at the Burning Cedar Sovereign Kitchen in Tulsa
She will host a dinner inspired by Cherokee cuisine
another highlighting foods and producers across Turtle Island (North America)
“We usually do one dinner with Indigenous foods every season
noting that one of his regulars who’s an outdoorsman suggested Shaw
“It’s different audiences than we’ve spoken to.”
“We’re starting to get chefs who are pretty big names talking to me about coming here
Some guests, like Anna Landmark of Landmark Creamery (Feb. 5-6, with Milwaukee chef Cole Ersel), have closer ties. Four chefs from Madison — Dan Bonanno (Pig in a Fur Coat), Patrick DePula (Salvatore’s Tomato Pies), Joe Gaglio (Gotham Bagels) and Tory Miller (L’Etoile and Graze) are calling themselves “the Paisanos.” On Sunday, Jan. 12, they’re cooking an Italian American supper you can’t refuse
February brings that long-awaited dinner with Chicago’s Brian Jupiter
or “Jup,” for which tickets are already selling well
including the founders of Tortillas Los Angeles
making a Mexican buffet along with a showing of Disney’s “Coco,” and chef Yusuf Bin-Rella making a Fat Tuesday feast to the sounds of a live jazz band (March 4)
Mink frequently brings in cookbook authors. This spring, one of the most high-profile among them is Wisconsin-born chef Joshua McFadden. He has three restaurants in Portland, Oregon, and wrote the James Beard Award-winning cookbook “Six Seasons” (2018). Remember the kale salad trend of the mid-’00s? Blame, or thank, McFadden
Milwaukee food writer Christina Ward comes through on March 19 to talk about her book “Holy Food,” subtitled, “How Cults, Communes, and Religious Movements Influenced What We Eat — An American History.” Paul Fehribach, known for the Southern restaurant Big Jones in Chicago, will talk Midwestern food and his 2023 book of the same name on March 20
Rounding out the schedule in late March and April will be acclaimed Boston-area chef Cassie Piuma
who has been up for a James Beard Award for Best Chef: Northeast seven times (2015-2022)
Piuma runs Sarma, a “hot spot since 2013” making “nouvelle Mediterranean,” per one recent critic
with a strong vegetarian lean.” Piuma’s first dinner promises to turn Seven Acre into a “Turkish Meyhane
fun and laidback restaurant/tavern found across Istanbul.”
the married local chef team of Lauren Montelbano (The Vibrant Veg) and Kyle Julius (Chef at Large Catering) will host hunter-gatherer dinners
former Cleveland Browns and University of Wisconsin-Madison football player Joe Thomas will be joined by chef Jeremy Umansky from Larder Delicatessen & Bakery in Cleveland
previously of Heritage Tavern and Steenbocks on Orchard
When a guest chef dinner series is running
two different styles of service every week,” Mink said
Seven Acre’s pop-up dinners tend to be served family or buffet style
especially historic properties and unique locations
that have gone almost entirely over to a visiting chef model,” Mink said
but it’s something that we’re certainly looking at.”
When the chef series started at Seven Acre
a sell-out for the season was around 400 tickets
Ticket sales do not cover the roughly $50,000 in expenses to bring the chefs in
“I follow these collaboration dinners really closely
and I think they are going to become an increasingly more important part of the business model of restaurants,” Mink added
“They give people something to be excited about
“People want these bespoke experiences that are one of a kind
