For those looking for experiences outside of skiing and snowboarding, consider these Colorado winter activities that not skiing Located roughly 30 minutes south of Denver, Roxborough State Park is a local favorite for hiking the park is filled with distinctive red rock formations that lay the groundwork for unforgettable views While the park’s busiest season is summer and fall with its many hiking trails it is also a popular winter destination as well One of the reasons this park is particularly enjoyable in the winter is the contrasting scenery that arises when the red rocks greet a fresh layer of snow visitors can enjoy the park by snowshoeing or cross-country skiing hiking in your winter boots alone is possible with the park’s relatively flat trails A great trail to start with is the Fountain Valley Trail It is a 2.5-mile loop with two overlooks and a historic site Visiting Mesa Verde National Park in the cooler months is one of our favorite winter experiences in Colorado While the tours of the park are done for the season there is a certain quietness and beauty that settles in between November and March Aside from the fewer crowds, Mesa Verde opens up an entirely new world of exploration in the winter and early spring and hiking opportunities in a quiet winter landscape One of the most popular places in the park to cross-country ski or snowshoe is along the Cliff Palace Loop road It is a six-mile un-groomed loop with options to ski to the Cliff Palace overlook The road closes to vehicles in the winter on December 1 or after the first significant snowfall drive the Mesa Top Loop Road to explore 700 years of Ancestral Pueblo history the loop may briefly close until the road and walkways are cleared be sure to check the road conditions before going the park’s third-largest and best-preserved cliff dwelling The view of the Spruce Tree House is particularly beautiful in winter You can observe from areas near the museum or take the trail to the lower viewpoint It is short but steep and can be icy so use caution Snowshoes are available for loan at the park entrance station Information on winter trails and trail conditions is available online You can also find out about conditions and which winter trails are open by calling 970-529-4622 or 970-529-4631 Avoid the harsh winter conditions that exist in Colorado’s mountains and check out the warmer part of the state at the Colorado National Monument. Located just six miles from downtown Grand Junction, the majestic Colorado National Monument is often an overlooked destination for many travelers the area is home to sheer-walled canyons that slice into sandstone the monument is also home to an abundance of wildlife such as bighorn sheep Its biggest appeal in the winter is its mild winter conditions The monument and area surrounding it are considered high desert which provides a temperate year-round climate and mild winters In the summer temperatures can reach as high as the low 100s on the valley floor While average low temperatures reach 20 degrees Winters at the monument are generally mild While the monument hardly sees any snow in the winter it is truly a special occasion if you can catch it right after a fresh dusting of snow The canyon walls and valley floor take on a new light with towering rock formations covered in a blanket of snow Hands down one of the top things to do in the winter is to drive the historic Rim Rock Drive See the unique geology that forms the park with rock layers dating back to the 1.7 billion-year-old pre-Cambrian gneiss and granites that make up the bottom of the canyons to the younger sandstones and shales at the top of the road takes roughly 45 minutes and features several scenic overlooks to get out and take in the view Several trails start at the road where you can explore the canyons below For current weather conditions and closures, be sure to consult the park’s website. the Black Canyon of the Gunnison is a small but steep canyon sculpted by the Gunnison River While on the smaller size at only 30,750 acres the park’s canyon features walls that climb 2,700 feet above the river The canyon’s steep and narrow walls make it hard for sunlight to enter The Black Canyon of the Gunnison National Park is Colorado’s least visited National Park most likely due to its smaller size and somewhat more remote access points But its striking landscape of dramatic cliffs and roaring rapids should not be overlooked For a unique winter experience in Colorado visit after fresh snow blankets the canyon The contrasting white snow offers a delicate balance to an otherwise intensely rugged canyon while accentuating every detail down to the bottom floor where the Gunnison River forges through One of the best ways to experience the Black Canyon of the Gunnison in the winter is with activities such as Nordic skiing and snowshoeing While the main road leading into the park remains open it is plowed and it closes beyond the South Rim Visitor Center adventurers can park their cars and trek out as far as they would like beyond the road closure making the out-and-back trip a total of 12 miles and relatively flat route makes this great for beginners Another great reason to visit in the winter is to view the night sky the park became certified as an International Dark Sky Park due to the steps they have taken to preserve the night sky including only using artificial lighting necessary for safety and all outdoor lighting devices using low-energy low-impact bulbs with shields that direct light to the ground While it’s true that celestial beings such as the Milky Way are best seen in the summer longer nights allow for a darker sky earlier so you don’t have to stay up past your bedtime the best places for stargazing are at the overlooks far from the road Shielded South Rim overlooks include Chasm View The best part about visiting the park during the winter is that the entrance to the park is free Simply park at the South Rim visitor center and walk in free of charge Note: there are two access points into the park leaving the South Rim your only point of entry While most head to the mountains for playtime in the winter, Colorado has a few hidden treasures out east that are worth the gas mileage. Venture 112 miles northeast of Denver to the Pawnee National Grasslands where you will find the Pawnee Buttes Rising 300 feet above the prairie grasslands the Pawnee Buttes are geological remnants of the surrounding High Plains surface that has slowly eroded over time The best way to experience these formations is up close with the Pawnee Buttes Trail The first 1.5 miles lead hikers to the first Butte with the second Butte on private land but still very visible from the trail and winter are the best times to visit as summer can be very hot and there is no shade on the trail If you can catch it just right after a fresh snowfall cross-country skiing and snowshoeing is a real treat out east flat expansive prairie lands give way to a peaceful skiing experience It’s the perfect winter escape without the crowds and steep mountains to climb Winter is no time to stay indoors with these unexpected winter experiences in Colorado waiting for you She is passionate about seeking out little adventures everyday and sharing them with others Copyright © 2025 · Free Colorado Travel Guide | Vacations, Travel and Tourism · All Rights Reserved 2025 at 11:03 am Here’s our list of must-see state parks within a quick day-trip distance from Denver. All can be completed within around sixty minutes of Denver Just west of Castle Rock, about 45 minutes southeast of Downtown Denver, sits Castlewood Canyon State Park It’s a somewhat out-of-place sanctuary of pristine forests and sixty-foot canyon walls surrounded by what can only be described as a fairly nondescript landscape outside of the park The park features a network of fairly manageable trails which showcase the natural scenery created by Cherry Creek flowing through the canyon The trails also provide hikers access to the ruins of the Lucas homestead which dates back to the late 19th century and originally belonged to some of the first settlers in the area as well as the ruins of the Castlewood Dam The dam itself has an interesting and troubled history as it served the area from the late 19th century to 1933 when it suddenly gave and sent a fifteen-foot surge of water toward Denver The surge ultimately flooded the city’s fire and police stations Beyond the hikes and history lessons the park has to share the canyon walls and surrounding boulders provide some of the best and most convenient 2989 CO-83, Franktown | 303-688-5242 | cpw.state.co.us/state-parks/castlewood-canyon-state-park Just beyond the suburbs to the southwest of Denver, about 40 minutes from downtown, is Roxborough State Park In the early 1900’s the owner of the land that now makes up the park intended to develop the land into a private resort complex complete with a large hotel and golf course Look around at the breathtaking rock formations jetting out through the land and it’s easy to imagine visitors streaming in to visit Mr the development never came to fruition and the land was preserved for the public to enjoy Today what draws visitors to the property is the stunning landscape and an extensive network of trails ranging from around a quarter of a mile to over eight miles As a nod to the history of the park the Fountain Valley trail leads hikers to Mr which still sits toward to north end of the property 4751 Roxborough Dr, Littleton | 303-973-3959 | cpw.state.co.us/state-parks/roxborough-state-park Just south of the intersection of Parker Road and I-225 in Aurora, about a 20-minute drive from downtown, is one of the largest and best-known state parks near Denver, Cherry Creek State Park The park is comprised of over 4,400 acres including thousands of acres of rolling grasslands and woods which supplies the city of Denver with water and year-round recreation There is also a separated 100-acre section designated as an off-leash dog park The park offers nearly three dozen miles of trails to keep hikers and cyclists busy but also facilitates scores of other activities that most other state parks do not Beyond what was already mentioned the park features a shooting/archery range and an on-site stable where you can rent a horse or arrange a hayride The reservoir within the park features a sandy beach and unlike other state parks swimming is permitted making the park a fantastic alternative to crowded neighborhood pools For those looking to explore the reservoir from the comfort of a watercraft and sailboats are all available for rental 4201 S Parker Rd, Aurora | 303-690-1166 | cpw.state.co.us/state-parks/cherry-creek-state-park Situated right where Denver’s southwesternmost suburbs nestle up to the foothills, and just north of Roxborough State Park, is Chatfield State Park The main attraction at the park is the 1,400+ acre Chatfield Reservoir which makes the park a hot spot for boating The views of the mountains just to the west make the trails and picnic sites that encircle the reservoir a great option for easier scenic hikes like Cherry Creek on the east side of town offers relatively unique activities as it also features an airfield for remote-controlled planes and an on-site horse stable The relatively flat and open land around the park also makes Chatfield a hotbed for hot air balloon rides which allow passengers sweeping views of not only the park and the mountains to the west but also Denver and the surrounding towns to the east This Littleton recreation spot offers 4-season camping opportunities Locals also love its massive 100+ acre off-leash dog park 11500 N Roxborough Park Rd, Littleton | 303-791-7275 | cpw.state.co.us/state-parks/chatfield-state-park Around 30 minutes from downtown Denver, sitting among what is largely agricultural fields to the northeast of town, you can find Barr Lake State Park While the northern half of the lake is open to fishing and smaller watercraft (meaning sailboats and motorboats with engines 10-horsepower and smaller,) the southern half of the lake is designated as a nature preserve making the main attractions at the park bird watching and the stunning views of Longs Peak and the surrounding mountains on the horizon over the lake Picturesque boardwalks and gazebos extend into the lake and provide perches for viewing the 350+ species of birds that have been identified in the park Winter visitors to the park also often see bald eagles as several nests in the area during the colder months Hikers and runners can also take advantage of a 9-mile trail encircling the lake for a more intimate park experience 13401 Picadilly Rd, Brighton | 303-659-6005 | cpw.state.co.us/state-parks/barr-lake-state-park About an hour straight north of Denver, and just northwest of charming Loveland is another fantastic option for anyone looking to spend time on the water, Boyd Lake State Park Created by combining two neighboring lakes for irrigation purposes is one of the largest lakes along the northern Front Range The area around the lake was designated as a wildlife refuge in 1958 and was transitioned to a state-maintained recreation area by 1963 the park centers around Boyd Lake making boating and swimming the main attractions at the park One unique and convenient feature of Boyd Lake State Park is that the trail along the western shore of the reservoir feeds directly into a trail network This route extends throughout the city of Loveland The trail access from the park to the town provides a perfect opportunity to explore the city by bike or foot after exploring the lake The 148 RV campsites available at the park make it a fantastic opportunity for a weekend getaway while staying close to Denver and having all the conveniences of Loveland right at your doorstep It also makes a great base camp for exploring more of the northern front range 3720 N County Rd 11c, Loveland | 970-669-1739 | cpw.state.co.us/state-parks/boyd-lake-state-park Located about 40 minutes from downtown Denver and about 6 miles east of Longmont is a small outdoorsman’s retreat nestled between the towns of Colorado’s northern front range is relatively small when compared to the others but it uses the space well with 11 fishing ponds and other outdoor enthusiasts will be awestruck by the sight of Longs Peak in the distance looming over the ponds The park’s Firestone location is remarkably convenient from Denver and the ponds are regularly stocked with several species including bluegill; perch; largemouth bass; catfish; walleye; pike; and rainbow trout The convenience of the park does come at a bit of a cost as a nearby interstate can be heard from certain ponds and camping sites It is worth noting that about a third of the land within Saint Vrain State Park is currently “under development” by Colorado Parks and Wildlife so keep an eye on the park in the future for what’s the come 3785 Weld County Road #24.5, Longmont | 303-678-9402 | cpw.state.co.us/state-parks/st-vrain-state-park Just west of Conifer and about 45 minutes southwest of downtown Denver sits Colorado’s newest state park, Staunton State Park The nearly 4,000-acre park features the kind of landscapes Colorado is famous for There are 29 miles of trails in Staunton allowing visitors to explore the varied landscapes minutes northwest of downtown Denver is known worldwide for its hundreds of rock-climbing routes They ascend the red sandstone walls of the canyon but the beauty of the park entices far more visitors than just climbers The canyon has a unique history among Colorado’s state parks as it served as a luxury resort for several decades in the early 20th century The resort even hosted a young Dwight Eisenhower and his new wife during their honeymoon in 1916 The state purchased portions of the land in 1978 and has established nearly 20 miles of trails for the public to enjoy throughout the almost 900-acre park Most of the signs of the previous development have been removed restoring the canyon to its natural beauty Although some ruins from one of the hotels remain near the top of the Rattlesnake Gulch trail making for an interesting destination at the end of the hike The natural beauty of the canyon itself and the staggering peaks to the west surround visitors throughout the park The beauty of South Boulder Creek winding its way through the sheer cliffs of the canyon cannot be overstated Because of its undeniable beauty and proximity to Denver and Boulder the park regularly reaches its vehicle capacity during summer weekends But don’t let the capacity issues scare you away if you plan to visit during a summer weekend simply arrive early and have a backup plan if the park He survived by suffocating the animal. While they make a frightening and scandalous story mountain lion attacks are exceedingly rare there have been just 16 attacks and three fatalities from mountain lions in Colorado One of those 16 encounters was Andy Peterson, who was attacked in Roxborough State Park in April 1998. He lives in Tennessee now, and was compelled to start his own ministry, Lion King Ministries Peterson is one of the few people who can truly understand what happened to the man attacked this week "I’m incredibly grateful that this man survived These are almost top of the food chain (animals) here," Peterson said Colorado Parks and Wildlife spokeswoman Lauren Truitt said people ought to be way more concerned about getting attacked by a dog than a mountain lion but added that cougar sightings are on the rise "It's a combination of an increased population more people enjoying the backcountry and then probably some of it is a higher deer population in our cities," Truitt said Both the Colorado man this week and Peterson back in 1998 did exactly the right thing when under attack by a mountain lion: fight back. While experts recommend playing dead with some animals, not so with cougars. Colorado Parks and Wildlife also recommends maintaining eye contact and making yourself as large and intimidating as possible They’re going to sever the spine and bust the vertebrae and they’re going to go for your head area and your neck area," Peterson said "It is the last thing our officers want to do and one of the hardest decisions they'll ever have to make," Truitt said "But it really comes into play of looking at the dynamics of where we need to move these animals how many animals are already in that space shelter and water to support more additional animals in that area." Sen who is the subject of a request for an investigation with the District Attorney for El Paso County and who is running for SD11; and who is the subject of a request for an investigation in Boulder County and who is running for HD 12 Democrats currently hold a 21-14 advantage in the state Senate to the Democratic Party makes the GOP aspirations of overtaking the chamber a tall order Should control of the chamber flip to Republicans it would put a crimp in the Democrats' agenda for the next two years is poised to win his contest over Republican Heidi Ganahl While Democrats were expected to lose a few State senate seats on Tuesday night early election returns show they will likely hang onto their majority with no trouble Claiming she's standing up to intimidation from a Denver TV station Colorado gubernatorial candidate Heidi Ganahl's campaign on Friday said t… By: 8:00 am on November 28 Renderings have been revealed for a four-story, 82-unit mixed-use development located at 6174 Ridge Avenue in RoxboroughNorthwest Philadelphia 17,290-square-foot commercial space at the ground floor Residential space will total 72,573 square feet of space No parking is planned within the development The building will feature a varying exterior that conceals the structure’s full scale The exterior alternates between two different rowhome-styled columned facades with two small balconies on the fourth floor which narrows the street-fronting width The other component is clad in white stucco At the pocket park situated along the eastern facing side of the building the structure’s stucco exterior is painted in murals keeping the atmosphere of the park similar to how it is today The development becomes a little bit more questionable when viewing what it will be replacing this stretch of Ridge Avenue is an intact row of mixed-use and commercial buildings with Variety of designs and first floor tenants The row greatly contributes to the ‘main street’ role that Ridge Avenue plays for Roxborough With Roxborough Pocket Park being directly next door this row is at the epicenter of the neighborhood the new development will be a major improvement given its location The added density here will be a great boost for the businesses on Ridge and will help support and strengthen the corridor The lack of parking here is not a concern given the nearby transit offerings and walkable surroundings the removal of an intact row of commercial businesses may not be the best change for Ridge Avenue Adding density in place of the parking to the row’s rear could be a better approach and perhaps could happen in a future project YIMBY will continue to monitor the project moving forward Subscribe to YIMBY’s daily e-mail Follow YIMBYgram for real-time photo updates Like YIMBY on Facebook Follow YIMBY’s Twitter for the latest in YIMBYnews You mention the lack of parking that isn’t an issue because of the buses…but SEPTA is actively trying to eliminate bus routes in the neighborhood That could be a huge detriment to anyone who decides to live here It’s not a bad thing that bus routes are being eliminated public transportation tends to bring the bottom of the barrel Citizens to our fine neighborhood people we don’t need here Is bringing nothing but problems in our drain on the system Glad to see the Thai restaurant is still in the rendering of this big box monster What is good about the size of this project Just because it is by-right doesn’t mean it is a good fit The residents of Roxborough are being overwhelmed by large apartment projects,(thanks to the revised Zoning Code) many without adequate parking It’s difficult to find a parking spot in the CVS parking lot because so many tenants are using it out of desperation Yes there are SEPTA bus lines but SEPTA is proposing service cuts in hopes of improving on time and more frequent service There is no train station within a “walkable” distance of this project I understand and appreciate apartments above retail stores but I think it is getting out of hand Why is it good thing to throw hard working store owners out of their livelihoods There is such a thing as Maximum Density which Roxborough achieved long ago I think even though it is gigantic in comparison to the neighborhood What I don’t get is the “no parking” Do they think the tenants of the building are all going to sell their cars? Did you know SEPTA is considering removing a few of the Roxborough bus routes there will be about 260 new apartments with VERY minimal parking except for a few bike spots How many people ride their bikes to work when it 15 degrees out or snowing This building is 4 stories tall people stop being ridiculous lol Roxborough doesn’t need another freaking apartment building I can’t wait to move… it’s sad that greed overshadows the people who have lived here for decades The “brains” behind this operation or the reason parking isn’t provided is called The City of Philadelphia”! Anyone with common sense knows that a new building with 82 apartments needs …… wait for it…… Who is responsible for allowing the city to continue to build without requiring adequate parking? at this point do we have any options/leverage to force the developer to include parking Roxborough has been sold to the highest bidders There is nothing in that section of Ridge Ave to draw people to it There is no need for all of these horrible apartments And they are taking away public transportation Can’t wait until they are all indicted for lining their pockets especially when long time residents remember when you could purchase just about anything you needed “On the Ridge.” What can be done to birng back some of those stores and services Thinking about SEPTA planning cuts to Roxborough bus lines people will have to take the Regional Rail to center city and that will be a steep walk downward from Roxborough and a heart attack risk for those climbing the wall to get to homes in Roxborough once exiting the Regional Rail nobody thought of a subway line running alongside from Broad Street to Ridge Ave and the end of Roxborough WW11 and the Great Depression for sidetracking needed subway expansion but there were opportunities killed by political infighting All you have to do is spend any amount of weekday evening time on this section of Ridge to know see there is already objectively an issue with lack of parking To write “The lack of parking here is not a concern given the nearby transit offerings and walkable surroundings” is either well-intentioned wishful thinking or willful ignorance Either way it is not the reality of the situation at hand The dozens of new residents WILL have at least one car These cars wont simply cease to exist upon them moving in I am concerned about the boxification of Roxborough They are architecturally insignificant and will not age well I am also concerned with the potential loss of the Paul Santoleri mural in the pocket park which is the most interesting mural in Roxborough “The lack of parking here is not a concern given the nearby transit offerings and walkable surroundings.” No one should be able to rent until they first have to find a parking spot after 6pm This disruption will reach far into the community My family has lived in Roxborough since the turn of the 20th century It was once a beautiful and quaint ‘small town’ in the big city This project will almost certainly go forward Someone commented that removing the bus service is a good thing – keeping bad elements out In my opinion the bad element is coming in because of the outrageous number of apartments being built The bus service very important for people to get to the city for work- for students to get to school How are they supposed to travel back and forth And don’t say the train is close by – only to certain areas of the neighborhood People can’t walk from this location to get the train in Wissahickon or on Umbria Street I think this city is destroying Roxborough and when all these new tenants realize they have nowhere to park their car and no bus service to get to work they’re all gonna start vacating and then this area will be completely ruined which is a mural arts of Philadelphia installation is a masterpiece and was just built several years ago These works of art are protected and can’t just be demolished We in the neighborhood have to fight this one Get in touch with councilmember Curtis Jones People who live in Roxborough and Manayunk use cars And this will just make street parking in the neighborhood behind Ridge Ave even worse for existing homeowners Bad reasoning if they think people spending $2500-$3000 a month or more on an apartment won’t be car owners ADVERTISEMENT Follow on Instagram © COPYRIGHT — Sterling Ranch plans to add an 8-acre park with an inclusive pool and playground for all abilities and ages according to a news release distributed Monday Douglas County will contribute $2.5 million in funding for the park while Sterling Ranch boasts proximity to Roxborough State Park and Chatfield State Park and Reservoir The neighborhood is also comprised of 40% open space and has 30 miles of trails “We’ve invested millions of dollars into the amenities at Sterling Ranch and are looking forward to adding many more in the years to come," general manager of the Sterling Ranch Community Authority Board Gary Debus said in Monday's news release Douglas County leaders announced in September of 2023 for the Sterling Ranch neighborhood development Prospect Park is just the latest addition to the growing community The new housing development already has what's known as The Sterling Center — complete with family dentist physical therapy center and ophthalmologist A groundbreaking ceremony for the new park will be held Wednesday The west side of Roxborough’s red rock formations A Canadian firm wants to put a spa on the other side of the rocks A Canadian developer planning to build a warm-water attraction next to Arrowhead Golf Course in Douglas County has received a cold reception from neighbors “A commercial development in this neighborhood would be a colossal disaster but for the people who live here,” said Bridget Epp who’s lived in the community for eight years Epp is a leader of the local “Save our Rox” group which for the last three years has been pushing back against plans to develop a 35-acre site largely surrounded by the golf course jagged red rock formations similar to those seen in nearby Roxborough State Park and Red Rocks in Morrison “The location speaks for itself … It’s a pretty spectacular piece of property,” said Ryan Laurie Pomeroy wants to erect what it calls a “Nordic spa” on the parcel It likely will consist “of a collection of pools steam rooms and indoor and outdoor relaxation spaces also offering massage treatments and ancillary food & beverage and retail offerings,” according to documents the developer submitted to the county Pomeroy operates two other Nordic spas in Alaska and Alberta along with a chain of hotels across Canada This spa would be the company’s first development in the continental U.S The entire development likely won’t exceed 40,000 square feet and will operate from 9 a.m It would bring hundreds more cars through the Roxborough Park community A rendering of the project on Pomeroy’s website The setting is the primary source of contention between the developer and nearby homeowners who see the land as the “heartbeat” of their 1,056-home community Roxborough’s unique geology is part of the “Ancestral Rockies,” red rock formations that predate the modern Rocky Mountains by hundreds of millions of years these rocky red spires served as the nucleus for a housing development and golf course founded in the 1970s known as “The Homestead,” was planned for residential development per a letter submitted to Douglas County by the neighborhood’s HOA president They had planned to construct just a single home on the site to preserve the landscape according to a January 1998 neighborhood newsletter Pomeroy submitted a request to the county to rezone the land from residential to club/resort The neighbors immediately began to mobilize “All of our opposition to the spa coming here and being placed in the middle of our residential community is based off of the seven approval criteria (needed to rezone the land) We believe strongly that Pomeroy fails six of the seven – so it isn’t even close,” Epp said She said the potential for overburdening Sundown Trail the one-lane road leading to the golf course Some of the leaders of “Save Our Rox.” From the left: Jeff Paser The golf course agrees with the homeowners general counsel for Arrowhead’s Dallas-based parent company Arcis Golf wrote in a letter to the county planning commission that Pomeroy’s spa would have a “detrimental effect” on the course’s operations Pomeroy plans to construct the spa on the east side of the rocks requiring the usage of a 35-year-old easement that splits several holes and would extend Sundown Trail to connect the development to the community Siddons and Arcis argue that this easement exists only for residential developments and therefore would not apply to Pomeroy’s project “Given the topography and the significant amount of car and golf cart cross traffic the likelihood of an accident is dramatically increased,” Siddons said in the letter there’s concerns about the tranquility on the course — which detractors of the plan say the spa will disrupt all the infrastructure will have to go in: sewers the whole internet piece of it will definitely degrade the red rocks The wildlife will go away – they’re not going to put up with that noise,” Epp said Sundown Trail is the one road leading to the Arrowhead Golf Course told BusinessDen the firm has a plan to assuage the concerns of the course and the neighbors but it needs to first get the land rezoned “We think there’s tremendous opportunities in our site planning process — right in the construction phase — to work with the golf course and actually provide some benefit to them … They have a great challenge on wedding facilities They set up a number of tents that are adjacent to our property,” Pachner said “Is there a way to actually help them with some facilities that better serve their guests and their use as well?” Pachner said that Pomeroy is “exploring all options” when it comes to how the company would connect the spa to Roxborough’s roads It would like to use the easement from the golf course to the east but Pomeroy could potentially access the site from the west Pachner said that option would be more “intrusive” and “obstructive” to the community as spa patrons would have to circle the entire development to enter Pomeroy’s challenges accessing the site to go beyond just the easement privately owns all the roads in Roxborough Park Pomeroy sued the foundation — which the company said “has taken a position of extreme opposition to development” — in an effort to be allowed to use the neighborhood streets Pachner said that Pomeroy’s plan for a spa doesn’t necessarily have to conflict with their desire for open space around the red rocks The company plans to develop only eight to 10 acres of the total 35 “The one thing that we have heard from the community is they want to have assurance that this cannot turn into something else we are specifically not allowing a future hotel to be developed We’re not allowing other uses that are not consistent with a Nordic spa,” Pachner said Pomeroy does have supporters in Roxborough Park this is already commercial,” said 53-year-old Heather Hill I would rather augment this commercial area and salvage all of this natural beauty then this becomes a human-built space that you can actually access and enjoy Roxborough Park resident David Jones supports the project said he believes development could improve lingering issues on Sundown Trail which “is a mess right now during golf tournaments during the summer.” “There’s an opportunity for the two entities to work together for a joint parking strategy that works and improves all that vehicular circulation who used to work as a commercial architect in Denver all eyes are on the Douglas County Planning Commission Pomeroy postponed hearings with the commission twice citing a need for more time to solidify its plans and engage further with the community “I think a lot of those questions that have been asked are simply ‘We don’t want anything to happen,’ Pachner said “We don’t think that’s a realistic conversation And that’s frankly one of the reasons we decided to move forward and own the site.” But opponents of Pomeroy’s plans say they’re committed to continuing to fight “(Pomeroy) could have moved to a lot of other places in Colorado They came to this specific place because of those red rocks – because of the formation – and that is under threat Not only for us as people who live here but for the wildlife as well,” Epp said A video featuring drone photo of the site produced by the “Save our Rox” group This story is for our paid subscribers only Please become one of the I did the calculations. Within 22 hours of flying over the kangaroo mobs of Tullamarine, I could be standing on a street corner in Istanbul, holding a simit in my hand. The sesame-studded bread ring is Turkey’s most popular street snack, sold by vendors from carts in busy thoroughfares, or piled up on trays balanced on their heads. Crisp on the outside, light and fluffy within, tearing into a simit is a key Turkish experience, as important as munching a fish sandwich by the Bosphorus, eating anchovies on the Black Sea coast, or tackling a stretchy ice-cream in Gaziantep. Then I heard about an easier and cheaper way than hopping on an Airbus. If you drive north of the airport to bustling Roxburgh Park, you can find a simit just as good as those in their country of origin. “Their simit is more Turkish than the ones in Turkey,” was the whisper. In a way, that’s not surprising. This part of Melbourne has more Turkish people than anywhere else in the city. Simit Palace owner Recep Altindal had decades of baking experience in Turkey before moving to the area and running a bakery factory in Campbellfield. After 14 years of cooking at scale, he wanted to do something a bit more personal, with a menu that could change on a whim. Just over two years ago, Melbourne Simit Palace cranked up the ovens. Stacks of simit, a sesame-studded bread ring that is a popular Turkish street food.Wayne TaylorMy informant was right about the simit. They’re made traditionally, which means twisting dough into rings, dipping it in pekmez, a grape molasses, then rolling it in sesame seeds before baking. The result is dark golden bread with a sweet, toasty crust and a yeasty enveloping fragrance that’s released as you break it open. That’s the classic simit: there’s another version laced with butter (it’s richer and heavier) and a sweeter, brioche-adjacent “patisserie simit” made with milk. There are also pogaca (pastry pockets) and boregi (layered pastries) filled with cheese or meat. Boregi with cheese.Wayne TaylorKeep moving along the counter and you’re in sweet territory. The biscuits and baklava are excellent, but a couple of desserts need a special mention. Kadayif, a nutty pie made with shredded pastry, is a transporting balance of savoury crunch and sugary heaven. Sekepare – the name means “piece of sweet” – is a syrup-soaked semolina biscuit that goes beautifully with a glass of strong, black Turkish tea. Simit Palace is an easygoing place. Tradies swing by for simit sandwiches and cappuccinos, local mums sit with prams and breakfast platters and men talk over sweet tea or Turkish coffee.
