and a must-visit landmark on any craft-lover’s map We had a chat with the owners of Hakodate Kogeisha gallery and boutique Would you be able to start by telling us a little bit about yourself My name is Morito Domae and I represent the Hakodate Kogeisha boutique gallery Inspired by the three years of high school I spent in Hakodate 14 years after graduating and a total of 30 years ago now I moved back here from Aichi prefecture to work on my pottery I’d always wanted to start up a space where I could exhibit my own work so I started up my first place about 22 years ago in Horaicho on the southern tip of where Hakodate city juts out into the sea and was also then in Motomachi nearer the base of Mt Hakodateyama right by the tram stop in the middle of Suehirocho near the famous red warehouse district and the bay You mention you lived in Aichi prefecture originally but what was the main impetus behind opening up the shop with your partner Kuniko is originally from the city of Seto in Aichi prefecture where we actually first met we started thinking about where we’d like to live in the future We ended up choosing Hakodate on the basis that the weather and surroundings were great the main reason for starting it was the lovely environment we found at a half workshop half boutique run by a potter in New Zealand that we spent some time at The building you’re in at the moment is a building reconstructed in 1985 after having suffered through four house fires We’ve read that it was originally a building called the Umezu Building with shops inside it but what was the reason behind moving from the western style building you were in before Hakodate as a city is really special in that it has a lot of retro buildings left over from a time when people were creating architecture in a style that mixes traditional Japanese and traditional Western aesthetics The western-style building we were in before was actually over 90 years old itself but the other blended style buildings had been disappearing slowly a part of the city dedicated to architectural preservation and we thought we just have to push ourselves to put it to good use what with it being such a beautifully preserved property We read that the second floor space of the building is the old owner Fukujiro Umezu’s living quarters and storage vaults What was the reason you decided to leave this floor unrenovated as it is was an incredibly accomplished person who moved north to Hakodate from Ibaraki (next to Tokyo) when he was young and made a name for himself in the food and drink sector over the course of just one generation He was a philanthropist and donated a lot of money to the development of both his hometown and Hakodate he invested in education and the main high school in Hakodate Our current building is a faithful reconstruction built after a great fire occurred when Fukujiro was 78 but the second floor retained a lot of the charm of the architectural styles of back then and we really wanted to preserve that In the gallery you stock mainly the work of local artists from Hokkaido but also craftspeople from all over Japan How do you go about selecting what to stock The character of our gallery has gradually changed over the course of our 22 years there was no one in Hakodate exhibiting the work of local artists so we focused on displaying pieces by around 30 artists from Hokkaido and Aomori just on the other side of the ocean on mainland Japan There was lots we could sell and we started getting introduced to works that we didn’t have locally as well as having artists come from elsewhere personally to show us what they did and so naturally the number of artists represented from all over Japan started to increase it’s easy to get your hands on art and traditional crafts anywhere using the internet these days so our main commitment is to increasing the number of local artists with Hakodate flair Both you and your wife are potters but is your workspace also a part of the gallery do ever allow visitors to see your work process I think the workshops you have in the UK must be a lot nicer there were a lot of artists who had been influenced by the work of English ceramicists like Bernard Leach and Lucy Rie I remember vividly reading Bernard Leach’s ‘Between East and West’ in the library while I was there and thinking that I’d love to visit the UK one day but I haven’t made it yet My dream is actually to visit the Victoria and Albert Museum How many artist’s works do you stock in the gallery at the moment trinkets and the like from around 20 artists But about twice a month we also host exhibitions of boutique clothing and traditional crafts Some readers might be familiar with the term ‘kodawari’ meaning ‘a commitment to one’s craft’ or ‘a relentless dedication to a particular detail’ What’s the one thing you won’t compromise on With all the craft fairs and craft markets in Japan at the moment the line between general handmade craft goods and traditional authentic artisanal goods is starting to disappear a little as a gallery and boutique we want to focus on only displaying the latter - those high quality artisanal goods we want to make sure that we are an establishment that specifically showcases the best of Hakodate’s artisanal culture and not just any old thing you can get your hands on anywhere I believe you also have a cafe attached to the gallery We're about one year into operating the cafe and it’s still a bit trial and error but we want to make a space where people can slow down time a little and relax while using the crockery and goods that we create we used a variety of old traditional crafting materials to create an aesthetic The inspiration behind this was also our time in New Zealand where we were really struck by how people would mend their houses by themselves I get the impression that gardening is also popular in the UK but our cafe also faces onto a little Japanese garden that perfectly reflects the coming and going of each season in Hakodate and has a lovely feel to it In an effort to be as authentic to where we live as possible make and prepare everything on the drink and dessert menu by hand Is there a particular best seller at the Hakodate Kogeisha gallery Or even maybe something you’d particularly recommend to anyone visiting from the UK but my hand-made ceramics have actually been the most popular items for the past 20 years I don’t know if that’s because I’m always producing new things or maybe because I work in a blend of Japanese and Western styles to produce things that are quite practical and easy to use repurposed kimono cuttings and traditional Japanese decorations and souvenirs are maybe the most popular Hakodate has a reputation for ‘kominka cafe’ culture with lots of beautiful old buildings preserved and used as cafes in a way that hasn’t really happened in other places in Japan Hakodate's unique blend of turn of the century Western and Japanese styles lends itself perfectly to that kind of relaxed cafe setting but the fact that the rent on old buildings tends to be cheaper and the fact that you can put your own stamp on it with DIY the clear contrast they create out at sea squid fishing boats do not go out on nights with a full moon as the fishing lights will not be effective *2 One set of fishing equipment and group of boats for each fishing method is counted in units of "kato" *4 A fishing method involving attaching a net to a frame with teeth *5 A method of throwing a barrel with a device (isari) into the octopuses' territory to lure them out and capture them Collection and accumulation of data has progressed with the spread of Smart Fisheries which has made it possible to assess fisheries from a variety of perspectives Environmental impact indicators are one example of this and while they only cover the production process should similar indicators be calculated for the processes of processing they could be used by restaurants and retailers as indicators for consumers Squid sashimi from Hakodate may be visually transparent but after becoming aware of the environmental impacts of squid fishing it has recently come to seem murkier in my mental image I hope that these environmental impact indicators will not be used to support or reject a particular fishing method but will rather be used in planning proposals for Japan's fisheries policy I would like to finish by restoring the reputation of squid fishing Environmental impact indicators only assess fishing methods from the perspective of their environmental impact; if assessed from the perspective of resource management fishing methods that can control catches are generally superior to net fishing methods squid fishing is the most automated fishing method in the world This method is particularly excellent as it does not catch any fish other than squid and catch volume can be controlled down to an individual squid Hakodate is the birthplace of squid fishing robots and it is very possible that AI-equipped squid fishing boats and squid fishing robots will greatly improve the environmental impact indicators of squid fishing in future The IQ method is now being implemented for fishing species other than squid and this will also contribute to improving environmental impact indicators The above was an introduction to Fisheries Honolulu Magazine | Honolulu Family After the rest of the group dispersed to other parts of Japan or went home to Hawaii I headed to south Hokkaido to the famous port town of Hakodate Since it was one of the first of only five Japanese ports that was available to the Western world but most people here speak only Japanese — so learn a little before you go All manhole covers in Japan reflect the theme of each city You’ll want to make time for the Hakodate morning fish market but be aware that all the tourists in town are doing so so you’ll find you may need to speak a little Mandarin while you’re here the area by the water is as touristy as any other cruise ship port so food and omiyage will be a little more expensive than inland areas But this stuff is very fresh … in some cases, maybe a little too fresh. One of the most famous booths in the middle of the market has you catch your own squid, then they quickly clean and slice it up for you, with the tentacles still twitching. (You’ve probably seen the more gruesome video on YouTube of bowls at Ikkatei Tabiji which serves “dancing squid” with the head still on it wasn’t the best ika I’ve eaten You do it for the novelty, but that’s about it Maruhoku Hokkai Ya specializes in Hokkaido crabs If you don’t have an urge to eat a twitching squid take your appetite to Maruhoku Hokkai Ya Masae-san grabbed one of the biggest crabs in the tank and had me pose with her from the small hairy crabs up to these gigantic ones I didn’t eat this one; I had a small hairy crab the stall cooks and cuts the crab for you with instructions to come back in 15 minutes or grab a seat at their neighbor’s restaurant for accompaniments Kuu Don is their sister restaurant Masae-san brought me my cooked crab (above) then posed with my bowl and the Kuu Don owner So was this worth it? Most definitely I love that Maruhoku Hokkai Ya cuts the crab even down to the little joints. The meat on these crabs is sweeter than others Here’s some other things I tried in the Hakodate morning market (and no I didn’t get to try the black squid ink soft serve ice cream as the stand that serves it wasn’t open the day I wanted it Many stalls offer grilled scallops and other delicacies That’s pretty much it for the morning market I was surprised that the port area was bustling with tourists during the day I know the inland part of the city has more life but it’s still sleepy compared to most other cities I was wandering in the dark and trying to figure out what to eat for dinner My hostel had suggested a Japanese restaurant near the old post office but I crossed back and forth and couldn’t find it I saw a light in a cute building that looked like a restaurant It was a very quiet restaurant and maybe three tables were occupied I took a photo of the menu and texted it to my friend Yumi in Osaka the wonders of modern technology!) She said it basically listed vague titles like “Fall set menu” but didn’t say what they were comprised of I randomly pointed to one of them and wished myself luck This setting makes you think you’re going to eat Japanese food The first course was a delightfully rustic version of a dish you might find at Vintage Cave It was two miniature pieces of puff pastry atop some assorted seafood with a light sauce reminiscent of seafood Newburg The next course was a dreamy farm-fresh pumpkin soup with fresh-baked bread and Hokkaido butter I don’t know if the chef makes his own butter yet you could taste all the flavors it produced This was a very hapa dish; it perfectly melded Japanese ingredients with French techniques buttery sauce that wasn’t overwhelmingly rich or oily and I couldn’t stop lapping it up I wished I could speak Japanese to find out what kind of beef this was with a Japanese interpretation of ranch dressing And finally It seemed to be a light flan or cheesecake with pineapple sorbet accompanied by a high-quality cup of coffee it was delicate and filling to the point that I felt satisfied Shizen is a very famous restaurant in Japan and the chef is known for his French cooking They also have an extensive French wine list and you can ask them to make a recommendation Even the one wine paired with dinner was perfect I’d say this was my best meal in Hakodate and it was so good that I wanted to come back but felt I needed to experience more of Hakodate since I wasn’t sure (and am still not sure) I’d be back I’d come here just to have dinner at Shizen again If you watch Doko Ga TV (doko ga means “where is..”) you know that Pali films all over the country was provided by Hawaiian Airlines and the Hokkaido government to tie into his being named Hokkaido’s “Smile Ambassador” from Hawaii as they work to promote a sister state relationship Hawaiian Airlines offers direct flights from Hawaii to Sapporo every other day so it’s pretty easy for us to hop over there and see what Hokkaido has to offer Mahalo to Hawaiian Airlines for flying us there; and mahalo to Love Hokkaido television and the Hokkaido government for their help in getting us around If you want to see all of the photos from this trip, click here which has the latest cherry blossom in Japan is attracting attention as a cherry blossom viewing destination in May Japanese travel platform Rakuten Travel has released a list of Hokkaido cherry blossom attractions and recommended accommodation for the cherry blossom season Cherry blossoms in major Japanese regions are concentrated in late March and early April you can enjoy cherry blossoms in full bloom until mid-May Sapporo's Maruyama Park in central Hokkaido and Hakodate's Koryokaku Park in the south are popular destinations for Hokkaido Sapporo Maruyama Park & Solaria Nishitetsu Hotel Sapporo Maruyama Park is one of the representative cherry blossom attractions in Sapporo which peaks between late April and early May is located in downtown Sapporo and has excellent accessibility and you can enjoy beautiful scenery with cherry blossoms and plum blossoms together It is popular as a picnic spot with family visitors or friends you can enjoy a different scenery with night lights under the cherry blossoms is a cherry blossom attraction that should not be missed The mysterious temple atmosphere and cherry blossoms are in harmony The recommended accommodation is 'Solaria Nishitetsu Hotel Sapporo' It is located about a five-minute walk from Sapporo Station providing excellent access to major tourist attractions and shopping districts It is also good to relieve the fatigue of travel by setting up a large bath exclusively for guests "Solaria Nishitetsu Hotel Sapporo" is the 2023 Rakuten Travel Gold Award selected through Rakuten Travel's strict hotel quality control Otaru Temiya Park & Hotel Torifito Otaru Canal If you travel about 30 minutes by train from Sapporo a port city that appeared as the background of the movie "Love Letter."
